8 c. assorted berries (such as strawberries, blueberries, and blackberries)
2/3 c. sugar
1/4 c. all-purpose flour, spooned and leveled
2 tbsp. fresh lemon juice
2 tsp. pure vanilla extract
1 (8.5-oz.) box Jiffy Corn Muffin Mix
1/2 c. chopped pecans
1 large egg, beaten

Steps:

  • Preheat oven to 400°F. Butter 8 (3.5-inch) cast-iron skillets. Arrange on a rimmed baking sheet lined with aluminum foil.
  • Toss together berries, sugar, flour, lemon juice, and vanilla in a bowl. Transfer to prepared skillets, dividing evenly.
  • Cut butter into corn muffin mix until crumbly. Stir in pecans. Stir in egg with a fork until combined but still crumbly. Sprinkle mixture over berries, dividing evenly. Bake until fruit is bubbly and crust is golden brown, 20 to 24 minutes. Cool 10 minutes.
  • Serve warm or at room temperature.

½ cup white sugar
2 teaspoons baking powder
1 teaspoon salt
4 eggs
1 (14 ounce) can sweetened condensed milk
⅔ cup milk
⅓ cup canola oil
1 teaspoon vanilla extract
½ cup fresh blueberries
½ cup fresh raspberries
½ cup sliced fresh strawberries
½ cup fresh blackberries

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease 9x9 inch baking dish.
  • Stir the cornmeal, flour, sugar, baking powder, and salt together in a mixing bowl. Combine the eggs, condensed milk, milk, oil, and vanilla in a second mixing bowl. Add egg mixture to the cornmeal mixture all at once and beat until well blended, about 2 minutes. Spread berries over the bottom of prepared dish. Spoon batter evenly over the berries to completely cover.
  • Bake in preheated oven until top is golden brown, about 45 minutes.

1 cup plus 2 tablespoons sugar
1 tablespoon quick-cooking tapioca
2 teaspoons grated lemon zest
1 teaspoon ground cinnamon
1/4 to 1/2 teaspoon ground nutmeg
TOPPING:
1/2 cup butter, softened, divided
1 cup confectioners' sugar
1 large egg, room temperature
1 cup all-purpose flour
1/2 cup cornmeal
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
3/4 cup buttermilk
2 tablespoons maple syrup

Steps:

  • In a large bowl, combine the blueberries, sugar, tapioca, lemon zest, cinnamon and nutmeg. Let stand for 15 minutes. Pour into a greased 11x7-in. baking dish., In a small bowl, beat 1/4 cup butter and confectioners' sugar. Add egg; beat well. Combine the flour, cornmeal, baking powder, baking soda and salt; add to creamed mixture alternately with buttermilk, beating just until combined. Pour over berry mixture. , Bake at 375° until a toothpick inserted in the center comes out clean, 35-40 minutes., In a small saucepan, melt remaining butter over low heat. Remove from the heat; stir in the syrup. Brush over cornbread. Broil 4-6 in. from the heat until bubbly, 1-2 minutes. Serve warm.

4 cups about 1 1/4 pounds frozen mixed berries, thawed
3/4 cup stone-ground cornmeal
2 tablespoons whole wheat pastry flour
1 1/2 tablespoons brown sugar
1 1/2 teaspoons baking powder
salt
2 1/2 tablespoons cold butter, cut into chunks
1/3 cup nonfat milk

Steps:

  • Preheat the oven to 350ºF. Coat an 8" x 8" baking dish with vegetable oil spray. Set aside.
  • To prepare the berries: In a mixing bowl, combine the sugar and the cornstarch. Stir to mix. Add the berries. Toss to combine. Transfer to the baking dish. Wipe the bowl clean with a paper towel.
  • To prepare the crust: In the bowl, combine the cornmeal, flour, sugar, baking powder, and salt. Stir with a fork or pastry blender. Add the Better Butter or spread. 6 cups mixed frozen berries, thawed, divided
1 cup white sugar
2 tablespoons cornstarch
2 cups all-purpose flour
2 cups rolled oats
1 ½ cups packed brown sugar
1 teaspoon ground cinnamon
½ teaspoon salt
1 ½ cups unsalted butter, cut into small pieces
2 (8 ounce) packages cream cheese, softened
½ cup white sugar

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Grease a 9x13-inch baking dish.
  • Prepare berry filling: Mix 3 cups berries, sugar, and cornstarch in a saucepan over medium-low heat, stirring frequently and crushing berries with the back of a spoon, until mixture is about half liquid, 5 to 7 minutes. Remove from the heat and set aside.
  • Prepare crust: Combine flour, oats, brown sugar, cinnamon, and salt in a bowl. Add butter and cut in with two knives or a pastry blender until mixture is crumbly. Pack 2/3 of the mixture into the bottom of the prepared pan. Set remaining crust mixture aside.
  • Prepare cream cheese filling: Blend cream cheese and sugar with an electric mixer until fluffy. Spread cream cheese mixture over the crust, then sprinkle remaining 3 cups uncooked berries over top. Top with the cooked berry-sugar mixture and crumble the remaining crust mixture over top.

1 pint strawberry, hulled and sliced in half
1/2 cup sugar
3 tablespoons cornstarch
1/3 cup sugar
1/16-1/8 cup butter, at room temperature
1 egg
1 teaspoon vanilla
2/3 cup all-purpose flour
1/3 cup yellow cornmeal
2 teaspoons baking powder
1/4 teaspoon salt
1/4 cup milk

Steps:

  • Heat oven to 350°F.
  • Berries: Toss together blueberries, raspberries, strawberries, sugar and cornstarch in large bowl until well mixed Spoon berry mixture into ungreased 8*8*2-inch square baking pan, spreading mixture evenly.
  • Topping: In same large bowl, beat together sugar and butter on medium speed until light and fluffy, about 3 minutes.
  • Beat in egg and vanilla until well blended Mix together the flour, cornmeal, baking powder and salt in a small bowl.
  • Add half the flour mixture to the butter mixture.
  • On low speed, beat just until combined.
  • Beat in the milk, then the remaining flour mixture.
  • Drop the dough by large spoonfuls over the berry mixture in the baking dish Bake in 350°F oven for 1 hour and 20 minutes or until top is golden and fruit is bubbly.
  • Serve warm.
