JICAMA AND AVOCADO SALAD

2 large oranges
2 limes, juiced
1/8 teaspoon ground coriander
1/8 teaspoon ground cumin
Kosher salt
2 tablespoons olive oil
1 small to medium jicama, peeled and cut into thick matchsticks
1/4 cup thinly sliced red onion
1 medium avocado, sliced crosswise
2 tablespoons fresh cilantro leaves

Steps:

  • Segment the oranges and cut each segment in half. Squeeze the juice from the oranges' membranes into a bowl. Whisk in the lime juice, coriander, cumin, 1/2 teaspoon salt and olive oil.
  • Gently toss the jicama, red onion and oranges with the lime vinaigrette and transfer to a serving bowl. Top with the avocado, cilantro and a sprinkle of salt.

Salad:
1 (2 1/2-3-pound) jicama, peeled and cut into 1/8-inch sticks
1 medium pomegranate, seeds removed
1/2 red onion, sliced thinly
1 cup loosely packed fresh cilantro, finely chopped
1 cup loosely packed fresh mint, finely shredded
Dressing:
1/2 cup extra virgin olive oil
1/3 cup freshly squeezed lime juice
2 tablespoons pomegranate molasses (optional)
1/2 teaspoon sea salt

Steps:

  • Place the jicama, pomegranate seeds, onion, cilantro, and mint in a large salad bowl.
  • In a small bowl make the dressing by whisking together the olive oil, lime juice, pomegranate molasses, and salt.
  • Pour the dressing over the salad and toss until the jicama is well coated. Chill for 20 minutes before serving.

Jicama looks similar to a turnip or a large radish, and it can be used as an alternative to the water chestnut. Raw jicama is often used as an accompaniment to raw vegetable platters.

1/4 cup pomegranate molasses
1 tablespoon honey
3 tablespoons freshly squeezed lime juice
Finely grated zest of 1 lime
Kosher salt and freshly ground black pepper
1/4 cup canola oil
4 ounces baby arugula
2 ripe Hass avocado, peeled, pitted and diced
1 ripe papaya, peeled, pitted and diced
1/2 jicama, peeled and cut into juilienne
Baked tortilla chips, as needed

Steps:

  • Whisk together the pomegranate molasses, honey, lime juice and zest in a small bowl. Season with salt and pepper, and then slowly whisk in the oil until emulsified.
  • Combine the arugula, avocado, papaya, jicama and some salt and pepper in a large bowl and toss to combine. Add some chips, and then pour some of the dressing around the sides of the bowl. Toss to combine, taste and add more dressing the same way if desired.

6 ounces seedless watermelon, cubed
2 ounces English cucumbers, peeled, seeded and diced
2 ounces sweet 100 tomatoes, halved (cherry, heirloom)
1 ounce feta cheese
4 fresh basil leaves, torn into penny-size pieces
4 fresh mint leaves, torn into penny-size pieces
1/2 ounce arugula
1/2 ounce toasted pine nuts
1/2 ounce currants, plumped (currants soaked in hot water for 5 minutes and drained)

Steps:

  • For the pomegranate vinaigrette:.
  • Place the citrus juice, pomegranate molasses, vinegar, honey, mustard, shallots, coriander, salt and pepper in a container. Emulsify, adding the oil slowly. Taste for seasoning.
  • For the watermelon salad:.
  • Combine the watermelon, cucumber, tomatoes, feta, basil and mint. Add the arugula and pine nuts. Plate and top with the currants and 3 ounces of the pomegranate vinaigrette.

1/2 cup sugar
1 tablespoon dry mustard
3/4 cup peanut oil
6 tablespoons lime juice, freshly squeezed
1/4 cup honey
3 tablespoons water
1/4 cup white wine vinegar
2 tablespoons fresh cilantro, chopped
1 head leaf lettuce
4 -5 cups peeled matchsticked jicama
5 navel oranges, peeled and sectioned
2 pomegranates, seeded
1/2 cup dry roasted peanuts, finely chopped

Steps:

  • For the lime dressing, combine the sugar and dry mustard in a medium bowl.
  • Add the oil, lime juice, honey water, and vinegar.
  • Stir until well blended.

1 large jicama, peeled and cut into 1/4-inch-wide strips (have patience, jicama can be a little difficult to peel, but oh-so-worth it!!)
3 navel oranges, peeled and sectioned with pulp and membrane removed
1 large cantaloupe or 1 large honeydew melon, peeled, seeded and cut into bite-sized chunks
1/2 cup pomegranate seeds
1 cup fresh lime juice
2 sprigs cilantro, chopped
pomegranate seeds, from 1 whole fruit, with some seeds reserved, for garnish
1/2 cup sour cream
4 tablespoons sugar
1/2 cup apple juice
1 teaspoon sea salt
1/2 teaspoon chili powder (optional)

Steps:

  • In a non-reactive bowl, combine jicama with fruit.
  • Toss with lime juice, cilantro and salt. Refrigerate about 1 hour, to allow flavors to meld.
  • Toss with chili powder before serving.
  • Pomegranate Dressing:.
  • Combine all ingredients in a large non-reactive bowl and refrigerate for at least 2 to 3 days.
  • While the salad is chilling. make the pomegranate dressing.
  • Combine the pomegranate seeds, sour cream, sugar, and apple juice in a blender and puree.
  • Note: time does not include refrigerating fruit prior to serving. Makes 1 and 1/2 cups.
