CRANBERRY JEWELLED MINCEMEAT



Cranberry jewelled mincemeat image

Cooking up batches of this festive, fruity mincemeat will fill your kitchen with the smell of Christmas

Number Of Ingredients 12

500g mixture of raisins, currants and sultana (use jumbo or golden sultanas if you can get them)
140g dried apricot , chopped
85g dried cranberries
85g mixed peel
150ml brandy
zest and juice 1 lemon
zest and juice 1 orange
175g suet
100g fresh or frozen cranberry , roughly chopped
200g soft brown sugar
1 ½ tsp ground cinnamon
½ tsp ground nutmeg

Steps:

  • Tip the dried fruits and mixed peel into a large bowl. Pour over the brandy, zests and juices. Stir, then cover and leave to soak for 24 hrs.
  • Tip the mixture into a large saucepan with the remaining ingredients and stir well. Set over a medium heat and, once the suet has melted, turn up the heat and bubble for a few mins. Pack while hot into sterilised jars (see tip, below). Leave in a cool, dark cupboard for at least a fortnight, or for up to 6 months.

Number Of Ingredients 12

1kg cooking apple
1 tsp ground mixed spice
1 tsp ground cinnamon
350g light muscovado sugar
3 oranges , zested
1 lemon , zested and juiced
350g cranberry , fresh or frozen
100g raisin
300ml brandy , rum or sherry
100g dried apricot , chopped
175g mixed nut (such as brazils, pecans, almonds and hazelnuts), toasted and chopped
250g dried tropical fruit (such as pineapple, papaya, etc), chopped

Steps:

  • Peel, core and chop the apples, then put them in a large pan with the spices, sugar, citrus zests and juices. Bring to the boil then cover and simmer for about 10 mins until the apples start to soften. Add the cranberries, raisins and alcohol. Bringto the boil, stirring well, then reduce the heat and simmer for 20-30 mins, uncovered, until thickened. Stir in the apricots, nuts and tropical fruits. Remove from the heat, leave to cool, then pack into sterilised jars. Seal, label and keep for up to one month in the fridge, or six months in the freezer.

Use for Christmas mince pies but also great added to apple pie fillings. Baking it in the oven prevents it from fermenting and gives it a longer shelf life. So far I have kept it for up to 6 months. This is a Delia Smith recipe and I have been using this recipe for a good 20 years now. Also a good gift since it is better then any bought mincemeat!

1 lb cooking apple, peeled cored and finely chopped
8 ounces shredded suet
12 ounces raisins
8 ounces sultanas
8 ounces currants
8 ounces mixed peel, finely chopped
12 ounces soft dark brown sugar
2 oranges, juice and zest of
2 lemons, juice and zest of
2 ounces almonds, cut into slivers
4 teaspoons mixed spice or 4 teaspoons pumpkin pie spice
1/2 teaspoon ground cinnamon
1 teaspoon grated nutmeg
6 tablespoons brandy

Steps:

  • Mix all the ingredients, except the brandy, in a large ovenproof glass or ceramic bowl.
  • Cover with a cloth and leave for 12 hours.
  • Preheat the oven to 225 degrees F.
  • Place the bowl in the oven and leave it there for 3 hours.
  • Remove and let the mincemeat cool.
  • Now stir in the brandy and spoon into clean jars.
  • Cover with waxed discs, seal and label.

1 cup sugar
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup vegetable oil
1/4 cup milk
1 (28 ounce) jar ready-to-use mincemeat
1 cup chopped nuts

Steps:

  • Preheat oven to 400°F.
  • In large bowl, mix dry ingredients.
  • Add the oil and milk, stirring until mixture is well moistened and crumbly.
  • Reserving 1 cup of the mixture, press the remainder into 9"x13" baking dish; spread with mince meat.
  • Sprinkle evenly with remaining mixture and nuts.
  • Bake 30 minutes or until golden brown.
  • Cut into bars.
  • Store, loosely covered, at room temperature.

1 lb currants
1/2 lb raisins
1 lb granny smith apple, peeled and diced (about 2 large)
1 lb dark brown sugar
8 ounces candied peel, finely chopped
3 ounces chopped almonds
3 ounces chopped walnuts
2 lemons, juice and zest of, grated
1 orange, juice and zest of, grated
1 teaspoon nutmeg
1/4 teaspoon clove
1/4 teaspoon cinnamon
1/8 teaspoon mace
1/8 teaspoon ginger
4 tablespoons dark rum
3/4 cup cognac or 3/4 cup brandy

Steps:

  • Mix all the ingredients together, stirring well.
  • Spoon into clean, screwtop jars and cover.
  • Allow to sit atleast 2 weeks before using, turning the jars every so often to redistribute juices.
  • The mincemeat keeps months like this.

Aunt Jewel was a reknown woodscook in the Patten, Maine lumber camps back in the 40's. This is her recipe. This mincemeat is very rich but not too sweet. (You may add a 1/2 c. of water to each pint for a juicier pie.) Processed this will keep for 2+ years. This make ten pints or 10 frozen pies.

1 quart cooked venison, cooled and ground
3 quarts tart apples, peeled and chopped fine
1 cup suet, ground fine
4 cups sugar
1 cup molasses
1 cup cider vinegar
1 cup cider
1 lb raisins, ground
1/2 lb currants, ground
1/4 lb citron, chopped fine
1 lemon, juice and zest of
1 orange, juice and zest of
1 teaspoon cinnamon
1 teaspoon nutmeg
1 teaspoon salt
1 teaspoon clove
1 teaspoon allspice

Steps:

  • Simmer venison neck or roast in unsalted water until tender.
  • Cool and remove meat.
  • Run meat, suet, raisins and currents through meat grinder with a fine blade attached.
  • Combine all the ingredients.
  • Place in a roasting pan.
  • Stirring occasionally, cook at 325F until the apples are tender and mincemeat is hot.
  • Pack in hot pint jars and seal.
  • Place in hot water bath for 10 minutes.
  • Makes 10 pints.

JEWELLED MINCE PIES

225g plain flour
50g ground almond
140g butter , cut into small pieces
grated zest of 1 orange
50g golden caster sugar
1 egg yolk
200g Jewelled mincemeat (see link below)
1 egg white , lightly whisked
golden caster and icing sugar , for dusting

Steps:

  • Put flour, almonds, butter, orange zest and sugar in a food processor and whizz into crumbs. Add the egg yolk and a teaspoon of cold water and pulse to form a dough. Wrap in cling film and chill for 30 minutes.
  • Preheat the oven to fan 180C/ conventional 200C/gas 6.Roll out the dough thinly and, with an 8-9cm plain cutter, stamp out 18 rounds - they need to be larger than the bun tin holes. Use to line one and a half 12-hole bun tins, pinching and fluting the dough edges above the level of the tins with your fingers.
  • Put a heaped teaspoon of mincemeat in each case. Quickly knead the trimmings and roll out. Use a star cutter to make 18 stars.
  • Put a star on top of each pie. Brush stars and pastry edges with egg white and dust lightly with caster sugar. (The pies can be frozen at this stage in the tins, then removed, packed into freezer bags and frozen for up to 3 months.) Bake the pies for 12-15 minutes (18-20 minutes from frozen) until the pastry is crisp and golden. Cool in the tins for 10 minutes before transferring to a wire rack. Dust with icing sugar before serving.

Mincemeat is a cooked mixture of minced foods and spices. Usually made with meat, this is a meatless version!

1 large orange
1 small lemon
1 (15 ounce) box seedless raisins
3 lbs tart apples, cored (9 medium)
1 1/2 cups apple cider
3 cups firmly packed brown sugar
1 1/2 teaspoons salt
1 1/2 teaspoons ground cinnamon
1 1/2 teaspoons nutmeg
1 1/2 teaspoons cloves

Steps:

  • Remove seeds from orange and lemon.
  • Using coarse blade, force fruit through food chopper with raisins and unpeeled apples.
  • Add cider.
  • Put in kettle and bring to boil.
  • Simmer, uncovered, for 15 minutes.
  • Add remaining ingredients, and simmer for 20 minutes longer, or until thick.
  • Makes enough filling for three 9-inch pies.

I copied this from The Virginia Housewife by Mary Randolph many, many years ago. It is supposedly the recipe used by Martha Washington. The original recipe called for ingredients by pounds. I used the cheapest, fattiest burger I could find in place of the beef amd suet. I also use a pound of mixed candied fruit instead of the citron and peel. Supposedly this can be processed in a water bath, but I don't have that much confidence. I store the jars in the freezer.

  • Pack into quart jars and process or freeze.
  • Every few months add a couple of tablespoons brandy, sherry or rum if the mix looks dry.
