JEN'S ONE PAN PENNE WITH MUSHROOMS AND ARUGULA
This super simple dish combines the flavours of mushrooms, arugula and Parmigiano-Reggiano cheese.

Steps:
- POUR whole box of pasta into a large skillet (approximately 12 inches in diameter).
- POUR 3 cups of cold water into the pan, ensuring that the water covers the pasta.
- ADD mushrooms and turn the burner to high, then set your timer for 10 minutes (optional: add a bit of salt to taste).
- COOK on high, stirring occasionally, until almost all of the liquid has evaporated.
- When desired pasta texture is reached, REMOVE from heat and STIR in arugula and cheese. Serve immediately.

PENNE PASTA WITH MUSHROOMS IN MUSHROOM SAUCE
DELICIOUS!!! great vegetarian dish (just substitute vegetable broth for chicken broth), and even if you're not a vegetarian- still an amasing dish!! lots of mushroom and garlic flavor and very easy and quick to make! adapted from garlicky portabella mushrooms.

Steps:
- prepare pasta as directed.
- place sliced mushrooms, olive oil, garlic and parsley in a pan on medium heat.
- heat mushrooms for approximately 5 minutes.
- add chicken broth, milk, and wondra to mushrooms.
- stir until thickened.
- add salt and pepper to taste.
- serve over pasta, add parmesan cheese.

PENNE PASTA WITH MUSHROOMS
Quick, easy vegan penne pasta recipe

Steps:
- Start by boiling the water for the pasta while working on the other ingredients
- Heat a pan for 30 seconds and add the oil
- Add the garlic and cook for about 30 seconds on medium heat
- Add the mushrooms and stir well
- Cook mushrooms on medium heat for about 7minutes or until they start to brown
- Add the spinach, but, don't stir it
- When the spinach is half its size, stir the mixture and cook for about 2 minutes
- While the mushrooms are browning, the water should be ready, so, add the penne pasta
- Cook the penne pasta for about 9 minutes. See notes
- Drain the pasta and add it to the mushroom + spinach mixture
- Add all the remaining ingredients (except the lime zest)
- Mix well and let it cook for about 3 minutes on medium heat
- Turn off heat and add the lime zest
- Mix well and serve immediately
