Jen's One Pan Penne with Mushrooms and Arugula image

This super simple dish combines the flavours of mushrooms, arugula and Parmigiano-Reggiano cheese.

1 box Barilla® Pronto™ Penne
1 (4 ounce) can mushrooms, quartered
1 cup arugula, packed
½ cup Parmigiano-Reggiano cheese, grated
Salt and black pepper to taste

Steps:

  • POUR whole box of pasta into a large skillet (approximately 12 inches in diameter).
  • POUR 3 cups of cold water into the pan, ensuring that the water covers the pasta.
  • ADD mushrooms and turn the burner to high, then set your timer for 10 minutes (optional: add a bit of salt to taste).
  • COOK on high, stirring occasionally, until almost all of the liquid has evaporated.
  • When desired pasta texture is reached, REMOVE from heat and STIR in arugula and cheese. Serve immediately.

3 large portabella mushrooms (sliced)
1 (12 ounce) package penne pasta
4 -6 garlic cloves (minced)
2 tablespoons parsley
6 tablespoons olive oil
1 (12 ounce) can chicken broth
1 cup milk
3 tablespoons Wondra Flour (or any thickening flour)
salt
pepper
parmesan cheese (optional)

Steps:

  • prepare pasta as directed.
  • place sliced mushrooms, olive oil, garlic and parsley in a pan on medium heat.
  • heat mushrooms for approximately 5 minutes.
  • add chicken broth, milk, and wondra to mushrooms.
  • stir until thickened.
  • add salt and pepper to taste.
  • serve over pasta, add parmesan cheese.

Quick, easy vegan penne pasta recipe

2 cup Barilla Red Lentil Penne Pasta
water (To cook the pasta)
2 Tbsp extra virgin olive oil
3 cloves garlic (finely diced)
8 oz baby bella mushrooms (slice them very thin)
3 oz baby spinach (about 2 cups loosely packed)
1.5 cup coconut milk (or cream)
1 tsp salt (adjust to your taste)
1 Tbsp oregano (dried or fresh)
2 sprigs parsley (or 1 tsp dried parsely)
1 tsp black pepper
1.5 tsp lime zest

Steps:

  • Start by boiling the water for the pasta while working on the other ingredients
  • Heat a pan for 30 seconds and add the oil
  • Add the garlic and cook for about 30 seconds on medium heat
  • Add the mushrooms and stir well
  • Cook mushrooms on medium heat for about 7minutes or until they start to brown
  • Add the spinach, but, don't stir it
  • When the spinach is half its size, stir the mixture and cook for about 2 minutes
  • While the mushrooms are browning, the water should be ready, so, add the penne pasta
  • Cook the penne pasta for about 9 minutes. See notes
  • Drain the pasta and add it to the mushroom + spinach mixture
  • Add all the remaining ingredients (except the lime zest)
  • Mix well and let it cook for about 3 minutes on medium heat
  • Turn off heat and add the lime zest
  • Mix well and serve immediately
