JELLY-TOPPED SUGAR COOKIES

- In a large bowl, beat sugar and oil until blended. Beat in eggs, extracts and lemon zest. Combine the flour, baking powder, and salt; gradually add to sugar mixture and mix well. , Drop by rounded tablespoonfuls 2 in. apart onto ungreased baking sheets. Coat bottom of a glass with cooking spray, then dip in sugar. Flatten cookies with prepared glass, redipping in sugar as needed. , Place 1/4 teaspoon jelly in the center of each cookie. Bake at 400° for 8-10 minutes or until set. Remove to wire racks to cool.

Steps:
- Melt semisweet chocolate and unsweetened chocolate in the top of a double boiler or in a bowl in the microwave. Stir until smooth. Set aside to cool. Heat the 2 cups shortening in a large, heavy skillet or deep fryer.
- In a small bowl, stir together the pureed garbanzo beans, sugar, and cinnamon. Stir in the dates and nuts. Blend with the cooled chocolate. Chill while you make the dough.
- In a medium bowl, beat the eggs until fluffy. Stir in the 1/4 cup melted shortening. Sift together the flour, sugar, and salt, and fold into the egg mixture. Add extra flour if necessary to make the dough easy to handle.
- On a lightly floured surface, roll the dough out to 1/8 inch thickness. Cut into 3 inch circles using a cookie cutter or a large drinking glass. Place 1 teaspoon of the chocolate filling mixture onto the center of each cookie, fold over into a half circle, and pinch to seal.
- Fry cookies in 1 1/2 inches of hot oil, turning once. Cookies should be light brown. Remove with a slotted spoon and drain on paper towels. Refrigerate when cool. Sprinkle with confectioners' sugar before serving.

JELLY COOKIES
Steps:
- Preheat oven to 350 degrees F (175 degrees C). Grease baking sheets.
- Cream the butter with the white sugar and brown sugar. Beat in the egg and vanilla.
- Mix the flour and baking powder together. Stir in the flour mixture into the butter mixture and combine.
- Form dough into 1 inch balls and place on the prepared baking sheet. Make an indentation in each cookie and fill with jam. Bake at 350 degrees F (175 degrees C) for 12 to 15 minutes. Let cool completely and sprinkle with confectioners' sugar.

This is another tried and true recipe from Grandma. She always made her own jams and jellies and depending on what fruit was in season that was the fruit of choice for these cookies. Best - Apricot!!! 2nd Strawberry or Raspberry -- You make the choice, they are all good.

- Cream shortening, sugar and beaten egg.
- Mix in dry ingredients, then alternate mixing in with milk.
- Chill dough overnight or as long as it takes to make the dough easy to handle.
- Roll and cut into circles, one for the top and one for the bottom.
- Place the bottom circle on the greased cookie sheet, add one+ teaspoon jam/jelly in the center. With a moistened finger, wet the outside edge of the bottom circle, place the top circle over the bottom and seal the edges by pressing down. (You can do this with a fork if you prefer, like the edge of a pie crust).
- You can also put the jam on one side and flip the top over to make a half moon.
- Bake @ 350 degrees for 12-15 minutes or until the bottom edge is starting to brown.
RAVIOLI COOKIES
Worlds easiest cookie! If you can open the candies, you can make these cookies. This cookie is more a concept than recipe. Use your favorite small candy and get creative with the decorations. Let the decoration identify the candy you use. I never use just one kind. Great project for kids! These are especially good warm.

Steps:
- Unroll 1 sheet of puff pastry and gently roll out to even the edges and make slightly thinner.
- Unwrap candies and place 32 candies in a 4x6 grid on puff pastry.
- Roll out other sheet of pastry and place on top of candies and seal around the edges by pressing up against the candy.
- Use cookie cutter to cut out raviolis or you can use a pizza wheel or knife and cut out squares.
- Bake according to puff pastry package until each are brown and puffed up.
- Drizzle with melted chocolate and nuts or jimmies if you like.

- Sift first three ingredients together.
- Cream butter and sugar together until fluffy' add eggs, milk and lemon juice.
- Blend well and add flour mixture; mix until fully incorporated.
- Chill.
- Preheat oven to 350F and lightly grease cookie sheets.
- Place half the dough on a well-floured board and roll to 1/8" thickness.
- Cut with a 2" round cookie cutter and place on prepared cookie sheet.
- Place a teaspoonful of jelly or jam in the center of each cookie.
- Roll remaining dough to the same thickness and cut with the same cookie cutter.
- Place a layer of dough over each jelly filled cookie and press the edges of the cookie with a fork to seal in the jelly.
- Sprinkle lightly with sugar and bake for about 15 minutes or until golden.

- In a small bowl or plastic bag, whisk together the flour and salt.
- IN A MIXER: Soften the butter.
- Cream together the sugar and butter until fluffy.
- Add the egg and vanilla extract and beat until blended.
- On low speed, gradually add the the flour/salt to the butter mixture and mix until incorporated.
- Add water, a few drops at a time, only until the dough starts to come away from the sides of the bowl.
- OR, IN A FOOD PROCESSOR, combine butter and sugar.
- Process until creamy.
- Add egg and vanilla extract.
- Pulse until combined.
- Add flour/salt to food processor and pulse until well blended.
- EITHER METHOD: Scrape the dough onto a sheet of plastic wrap and use the wrap, not your fingers, to press the dough together to form a thick flat disc.
- Wrap it well and refrigerate for at least 2 hours, preferably no longer than 3.
- Place two oven racks in the upper and lower thirds of the oven.
- Preheat oven to 350 degrees.
- On a lightly floured surface, roll out the dough to a 1/8-inch thickness.
- Cut in 2.5" to 3" simple shapes (flowers, circles, diamonds, etc) Just be sure to cut at-least two of each.
- Reroll the scraps, chilling them first, if necessary.
- Place 1/2 teaspoon of preserves into the center of the bottom half of the cookies, brush a bit of warm water around the perimeter of the cookie and place the matching top over the jelly.
- Seal by pressing lightly and evenly with your fingers.
- With a small, angled metal spatula or pancake turner, transfer the cookies to parchment covered cookie sheets.
- Bake for 8-12 minutes or until the cookies begin to brown around the edges.
- For even baking, rotate the cookie sheets from top to bottom and front to back halfway through the baking period.
- Use a small, angled metal spatula or pancake turner to transfer the cookies to wire racks to cool before dusting with powdered sugar.
