LIME SALAD
My mom used to serve this every Christmas on a bed of lettuce, crispy iceberg, and surrounded with green and red grapes. Pecans can be substituted for walnuts.

Steps:
- Dissolve gelatin mix in boiling water. Stir in salt. Stir in cold water. Chill until slightly thickened.
- Fold cabbage, carrots, and nuts into thickened gelatin. Pour mixture into an 8 inch mold that has been sprayed with a non-stick spray. Chill until firm.
- Set mold in a sink of hot water for a few seconds when ready to unmold. Place serving plate on top of mold, and turn over. Lift off mold.

LIME JELLO CABBAGE SALAD
This Jello salad is a tradition in our family to serve with ham or pork. It has shredded cabbage and carrots in it which give it a nice crunch. My Mom always served it when I was a kid and she can't remember where she got the recipe from. My kids love it. You can make with with regular or sugar free jello.

Steps:
- Shred cabbage in food processor to be very fine and to equal 1 cup. Grate carrots to equal 1/2 cup. Add both to an 8 x 8 square dish.
- Drain crushed pineapple, reserving liquid in a measuring cup. Add ice to the juice so it will equal exactly one cup. Set aside.
- In a small pan on low heat, heat one cup water. Add jello to dissolve and turn off heat. Add the pineapple juice/ice to the pan and stir until ice melts.
- Pour jello mixture into the 8 x 8 dish with the cabbage, carrots and pineapple. Refrigerate for 2 hours unti firm.
- Cut into 9 square servings and and enjoy!

CABBAGE AND PINEAPPLE GELATIN SALAD

Steps:
- 1. Mix the dry jello flavors together. Add 2 cups of boiling water and stir until completely dissolved, about 2 minutes.
- 2. Pour pineapple juice into a measuring cup and add cold water to measure 1 1/2 cups (since you are adding veggies, the liquid is reduced). Add this to the jello and stir to mix. Put into the refrigerator to slightly thicken to the consistency of egg whites.
- 3. Stir in the cabbage, carrots and pineapple and mix thoroughly. Chill until set. If made in a pan, cut into squares and serve.
GRANDMA SALAD (LEMON/LIME JELLO SALAD)
This is my best friend's grandma's recipe. It's similar to another posted but different enough to merit it's own place. We make this every holiday and it's my most favorite way to make jello ever! Don't let the ingredients scare you out of trying this one.

Steps:
- Dissolve jello in boiling water.
- Mix in all ingredients except cottage cheese and whipped cream.
- Cool mixture then add cottage cheese and whipped cream.
- Refrigerate until molded. Cover so it doesn't dry out.
- Use a 9X13 glass pan or pretty bundt shaped pan. If you use a bundt pan, set the pan in warm water for a few minutes before unmolding.

KELLY'S HAM JELL-O® SALAD
This different Jell-O® salad, made with cabbage, chopped ham, mayonnaise, and spicy brown mustard, has a taste that's more savory than sweet.

- Dissolve lemon gelatin in boiling water in a large bowl. Pour reserved pineapple juice and white wine vinegar into a measuring cup; add enough cold water to equal 1 cup. Stir water-juice mixture into gelatin mixture; refrigerate until cold and beginning to set, about 30 minutes.
- Stir mayonnaise and spicy brown mustard together in a bowl; whisk mayonnaise mixture into cooled lemon gelatin mixture until smooth. Gently fold cabbage, celery, ham, and reserved pineapple into gelatin. Transfer mixture into a ring-shaped gelatin mold.
- Chill in refrigerator until firmly set, about 4 hours. To serve, dip gelatin mold into hot water to loosen the sides; place a plate on top of the mold, invert, and gently lift the mold from the salad.

DRY JELL-O SALAD (JELLO) COTTAGE CHEESE FRUIT SALAD
I could eat the whole bowl by myself! This is a great recipe for those who don't like Jell-O since you use it dry and it gives a totally different texture than traditional Jell-O salads. Hint: if you use orange flavored Jell-O use mandarin oranges instead of pineapple.

- Drain juice from can of crushed pineapple into a measuring cup.
- Add enough pineapple juice to make 2 cups.
- Bring the 2 cups of juice to a boil.
- Remove from heat and dissolve completely 2 pkgs.
- of lime jello in the juice, stir, stir, stir.
- Add all the cream cheese pieces using a gravy whip to blend.
- Add 6 ice cubes and pineapple, stir until ice dissolves.
- Put in the freezer until cool and syrup-like.
- Fold in chopped nuts, cabbage (shredded very fine), and Cool Whip.
- Refrigerate several hours.
