Jeff Mauro's Chicken Salad Wrap with Turbo Broccoli Cheddar Soup

Number Of Ingredients 22

2 scallions
sliced thin up to the pale green part
2 celery ribs
diced
1/2 cup toasted walnuts
1/4 cup dried cranberries
1 teaspoon sugar
Salt and pepper
1 teaspoon Dijon mustard
1 cup mayo
2 cooked chicken breasts
2 tablespoons butter
1 small yellow onion
finely chopped
Salt and pepper
1 cup chicken stock
1 head broccoli
chopped and blanched in seasoned water
1/2 cup milk
1 cup sharp cheddar cheese
Rice cereal
for topping

Steps:

  • Mix scallions, celery, walnuts and cranberries with sugar, salt, pepper and Dijon
  • Let flavors meld for 10 minutes
  • Add in mayo and mix until incorporated; adjust seasoning if necessary
  • Add in chicken and mix well to incorporate
  • Let sit in fridge for at least one hour before serving, overnight preferred
  • Can be served as a wrap
  • For the Soup: Melt butter in Dutch oven and sauté onions until translucent
  • Season with salt and pepper
  • Add in stock and simmer for 5 minutes
  • Pour into a blender with broccoli into a blender and process until smooth
  • Add cheddar and milk, and season to taste
  • Adjust thickness if necessary with more stock or milk
  • Top with seasoned, pan-fried rice cereal

SHEET PAN CHICKEN A L'ORANGE

This is Jeff's simple take on a classic French dish, duck a l'orange.

Number Of Ingredients 10

1/2 cup orange marmalade
2 teaspoons orange zest plus 2 tablespoons orange juice
2 teaspoons orange liqueur
2 teaspoons white wine vinegar
Kosher salt and freshly ground black pepper
4 bone-in, skin-on chicken thighs
4 cups broccoli florets (about 2 pounds)
4 shallots, peeled and quartered lengthwise
2 tablespoons extra-virgin olive oil
2 oranges, grated and supremed (white pith cut away and segments cut free from their membranes)

Steps:

  • Preheat the oven to 375 degrees F. Line a baking sheet with nonstick foil.
  • In a medium bowl, combine the marmalade, orange zest and juice, orange liqueur, vinegar, a pinch of salt and 1 teaspoon black pepper. Set aside.
  • Pull the side flaps of overhanging skin taut underneath the chicken on each side to make the thighs into nice, tight packages. Sprinkle the chicken generously with salt and pepper and arrange skin-side up in a single layer in the center of the lined baking sheet.
  • Spoon 1 tablespoon of the orange sauce over each piece of chicken. Roast for 20 minutes.
  • Meanwhile, toss the broccoli and shallots together in a medium bowl with the oil and season with salt and pepper.
  • Spoon another tablespoon of the sauce over the top of the chicken. Arrange the broccoli and shallots around the chicken on the baking sheet. Continue to toast until the chicken is cooked through and the broccoli and shallots are soft and caramelized, an additional 15 to 20 minutes.
  • Garnish with the orange segments and zest.

CHICKEN SHAWARMA WRAP

1/4 cup olive oil, plus more for oiling the grill grates
1 teaspoon ground cumin
1 teaspoon sweet paprika
1 teaspoon ground turmeric
1/4 teaspoon ground allspice
1/4 teaspoon chili powder
1/8 teaspoon ground cinnamon
4 cloves garlic, smashed
2 lemons, zested and juiced
Kosher salt
6 skin-on, boneless chicken thighs
2 tablespoons extra-virgin olive oil
2 teaspoons apple cider vinegar or white balsamic vinegar
2 Roma tomatoes, diced
1 English cucumber, diced
1 lemon, juiced
1/2 small red onion, minced
Handful fresh curly parsley leaves, chopped
Kosher salt and freshly ground black pepper
1/2 cup tahini paste
1 tablespoon extra-virgin olive oil
1/2 lemon, juiced
Kosher salt
4 large flour tortillas, slightly griddled until soft
1 head romaine, shredded
Pickled whole Middle Eastern peppers, for serving

Steps:

  • For the shawarma: Whisk together the oil, cumin, paprika, turmeric, allspice, chili powder, cinnamon, garlic, lemon zest and juice and 2 teaspoons salt in a container until combined. Add the chicken, cover and marinate, refrigerated, for 12 to 14 hours.
  • For the tomato-cucumber relish: Mix together the oil, vinegar, tomatoes, cucumbers, lemon juice, onion, parsley and some salt and pepper in a bowl.
  • For the tahini sauce: In a medium bowl, combine the tahini, oil, lemon juice and 1/4 cup water. Season with salt.
  • Prepare a grill for medium heat and oil the grill grates.
  • Remove the chicken from the marinade, sprinkle with salt and place on the hot grill. Grill skin-side down until the skin starts to brown and crisp, 4 to 6 minutes. Flip and grill the other side for another 4 to 6 minutes. Flip again and grill until the skin is super crispy and the internal temperature reaches 165 degrees F, about 5 minutes more. Let the chicken rest for 5 minutes, then slice into 1/4-inch pieces.
  • For the wrap build: First, spread tahini sauce on the tortillas, then top with shredded romaine, then the relish, then the chopped chicken. Add some pickled peppers, roll up tight and eat!

JEFF'S FAMOUS CHICKEN SALAD CROISSANT

Summer may be all about lighter recipes, but that doesn't have to mean light on flavor! I made this recipe at my first job and fell in love with the combination of the buttery flakiness of a toasted croissant with a creamy filling that makes it a perfect comfort food for the warmer seasons. I love the way the two textures combine with summer ripe Roma tomatoes, hot cherry pepper relish and a balsamic glaze to create serious #sandwichgoals.

Kosher salt and freshly ground black pepper
Four 6- to 8-ounce boneless, skinless chicken breasts
2 ribs celery, diced
2 scallions, white and pale green parts only, sliced thin
1/4 cup dried cherries
1 teaspoon Dijon mustard
1 teaspoon granulated sugar
1 cup mayonnaise
1/2 cup walnuts, toasted
Romaine lettuce leaves, for serving
4 fresh croissants, sliced and lightly toasted, cut-side up, in the broiler
Sliced Roma tomatoes, for serving
Hot cherry pepper relish or giardiniera, for serving
Balsamic glaze, for drizzling

Steps:

  • In a large Dutch oven or pot, stir 1 tablespoon salt into 6 cups cold water. Add the chicken and heat over medium heat until the water hits a temperature of 170 degrees F. Take the pot off the heat, cover, and let the chicken sit in the warm water until its internal temperature hits 165 degrees F, 15 to 20 minutes. Transfer the chicken to paper towels to dry. Once cool enough to handle, pull the chicken apart with your hands or forks until shredded but still chunky.
  • Meanwhile, in a large bowl, mix the celery, scallions, cherries, mustard, sugar and salt and pepper to taste. Let this mixture sit for at least 10 minutes or up to 1 hour to extract all that flavor. Add the mayo and mix until incorporated. Adjust the seasoning if necessary.
  • Add the shredded chicken and walnuts to the mayo mixture. Adjust the seasonings. Let it sit in the fridge for at least 1 hour before serving, overnight preferred.
  • Place a piece of lettuce on the bottom half of a croissant followed by a scoop of chicken salad, one or two tomato slices, a spoonful of hot cherry pepper relish or giardiniera and a little drizzle of balsamic glaze. Close the top of the croissant. Assemble 3 more sandwiches. Cut the sandwiches in half and eat!

CHICKEN SALAD

1 teaspoon Dijon mustard
1 teaspoon sugar
2 celery ribs, diced
2 scallions, thinly sliced up to the pale green parts
Salt and freshly ground black pepper
Salt and freshly ground black pepper
1 cup mayonnaise
Two 8-ounce dry or leftover cooked chicken breasts, cut into chunks (see Cook's Note)
Bibb lettuce leaves, for serving
Balsamic reduction, store-bought or homemade, for serving

Steps:

  • Mix the walnuts, cranberries, mustard, sugar, celery, scallions and some salt and pepper together in a large bowl. Let the flavors meld for 10 minutes.
  • Add in the mayo and mix until incorporated. Adjust the seasoning if necessary. Add in the chicken. Let the mixture sit in the fridge for at least 1 hour before serving, overnight preferred.
  • Serve on lettuce leaves and drizzle with balsamic reduction.

LEMON ROASTED CHICKEN SALAD WRAP

One 6-pound whole fryer chicken
Olive oil, for drizzling
Salt and freshly cracked black pepper
5 cloves garlic, smashed
5 sprigs fresh thyme
1 lemon, cut in quarters
3/4 cup 2-percent Greek Yogurt
1/4 cup mayo
2 tablespoons Dijon mustard
1/2 cup toasted walnuts, chopped
1/4 cup dried cranberries, chopped
2 celery ribs, diced
1 small red onion, minced
2 lemons, zested and juiced
2 tablespoons chopped fresh tarragon
One 6-ounce can water chestnuts, drained and chopped
Salt and freshly cracked black pepper
Four 12-inch whole wheat tortillas
1 pint broccoli sprouts
2 Roma tomatoes, sliced

Steps:

  • For the chicken: Preheat the oven to 400 degrees F and adjust a rack to the middle position.
  • Place the chicken on a baking sheet lined with a wire rack, or in a roasting pan with a rack, and drizzle the chicken with olive oil. Generously sprinkle the chicken with salt and pepper. Pack the cavity with the garlic, thyme and lemons. Place the chicken breast-side down on the rack.
  • Roast the chicken for the first hour at 400 degrees F, and then turn up the heat to 450 degrees F and roast until the breast temperature registers 160 degrees F and the skin is a golden brown, for the last 30 to 45 minutes. Then set the chicken aside to rest and cool.
  • When easy to handle, remove the legs, wings and any dark meat, reserving to eat for your next meal or to snack on immediately.
  • Remove the skin from the breast meat. Using your hands, shred the breast meat and place in a bowl. Season the chicken with salt and pepper.
  • For the salad: Mix together the yogurt, mayo, mustard, walnuts, cranberries, celery, onions, lemon zest and juice, tarragon and water chestnuts and adjust the seasoning if necessary. Fold in the shredded chicken.
  • For the sandwich build: Layer the whole wheat wraps with some broccoli sprouts and tomato slices and then top with the chicken salad. Wrap and enjoy!

TURBO BROCCOLI CHEDDAR SOUP



Turbo Broccoli Cheddar Soup image

2 tablespoons butter
1 head broccoli, stems and florets separated and chopped
1/2 small yellow onion, diced
2 teaspoons dry mustard
Kosher salt and freshly ground black pepper
2 tablespoons dry sherry
1 cup chicken stock
2 cups fresh spinach
1 cup grated sharp Cheddar
1/4 cup heavy cream, plus more if needed
1 teaspoon hot sauce
Croutons, for serving

Steps:

  • Melt the butter in a large Dutch oven over medium heat. Add the broccoli stems, onions, dry mustard and some salt and pepper and saute until the onions are translucent, about 5 minutes. Deglaze with the sherry and then add the broccoli florets. Add the stock and simmer for 5 minutes.
  • Carefully ladle everything into a blender along with the fresh spinach, Cheddar, cream and hot sauce and process until smooth, about 1 minute. Adjust with salt and pepper if necessary and adjust the thickness with more cream if necessary. Top with croutons and serve.

GRILLED CHICKEN CAESAR WRAP

4 boneless skinless chicken breast halves (about 8-ounces each)
1/4 cup extra-virgin olive oil
Zest of 1 lemon (about 1 teaspoon)
1/4 cup freshly squeezed lemon juice (about 2 lemons)
2 cloves garlic, minced or grated
Kosher salt and freshly ground black pepper
1 cup low-fat sour cream
2 tablespoons grated Parmesan
1 tablespoon freshly squeezed lemon juice (about 1/2 lemon)
1 tablespoon Dijon mustard
2 teaspoons Worcestershire sauce
1 anchovy, smeared with a fork to a paste
1/2 clove garlic, minced or grated
Kosher salt and freshly ground black pepper
1/2 pint cherry tomatoes, quartered
1 heart romaine lettuce, chopped into bite-size pieces
Parmesan Croutons, recipe follows
Four 12-inch sundried tomato tortillas, toasted with a little oil
1/2 French baguette day-old, crust removed and cut into 1/2-inch cubes (about 4 cups)
2 tablespoons grated Parmesan
Kosher salt and freshly ground black pepper
2 tablespoons olive oil

Steps:

  • For the chicken: Place the chicken in a shallow dish just large enough to hold them. Whisk the oil, lemon zest, lemon juice and garlic in a small bowl until combined. Pour the oil mixture over the chicken and toss to coat. Cover the dish with plastic wrap and refrigerate, at least 4 hours and up to overnight.
  • Preheat a grill pan or an outdoor grill to medium-high heat. Remove the chicken from the oil mixture and pat dry. Sprinkle with salt and pepper and grill the chicken until golden brown and cooked through, about 12 minutes per side. Transfer the chicken to a plate to cool slightly. Thinly slice the chicken against the grain and set aside.
  • For the dressing: Mix the sour cream, Parmesan, lemon juice, mustard, Worcestershire, anchovy, garlic and season with salt and pepper in a medium bowl.
  • For the sandwich build: Place the sliced chicken, 1/2 cup sour cream Caesar dressing, tomatoes, romaine and Parmesan Croutons in a large bowl. Toss to coat evenly. Fill each tortilla with the chicken mixture.
  • Preheat the oven to 375 degrees F. Add the bread and Parmesan to a large bowl and sprinkle with salt and pepper. Drizzle with the oil and mix well. Spread the mixture onto a baking sheet and bake until light golden brown, about 15 minutes.
