This is a no chunk spaghetti the kids will love! Made with ketchup and mustard!!

1 (12 ounce) package thin spaghetti
1 pound ground beef
1 ½ cups ketchup
½ cup prepared yellow mustard
1 cup shredded Cheddar cheese
¼ teaspoon garlic powder
¼ teaspoon dried sage

Steps:

  • Bring a large pot of lightly salted water to a boil. Add spaghetti, and cook until tender, about 5 minutes.
  • Meanwhile, crumble the ground beef into a large skillet. Cook and stir until no longer pink. Drain grease, and reduce heat to low. Sprinkle cheese over the top. Keep over low heat until cheese is melted. Mix in ketchup, mustard, garlic powder and sage. Cook until heated through.
  • Drain spaghetti, and stir into beef mixture. Serve and enjoy!

My kids will give up a steak dinner for this spaghetti. It is a recipe I have been perfecting for years and it is so good (if I may humbly say) that my kids are disappointed when they eat spaghetti anywhere else but home! In fact they tell me I should open a restaurant and serve only this spaghetti and garlic bread. In response to requests, I have posted the recipe for Recipe #28559 that uses approximately 1/2 of the sauce from this recipe. Have spaghetti one night and lasagna later! Thanks to all of you who have tried my recipe and have written a review. I read and appreciate every one of them! Chef Note: After I posted this recipe I remembered a funny incident--my dear husband usually has a nice bottle of wine handy so when I make a batch of spaghetti I just help myself to a splash of it. On one occasion, there wasn't a bottle opened, but there was a bottle sitting on the counter so I got out the corkscrew and helped myself. For some reason, the spaghetti that night was the best ever. My husband asked what wine I put in it and I showed him the bottle. He nearly fell off the chair. I had opened a rather expensive bottle he had bought to give his boss. Goes to show you--don't use a wine for cooking you wouldn't drink. You get the best results from a good wine!

2 lbs Italian sausage, casings removed (mild or hot)
1 small onion, chopped (optional)
3 -4 garlic cloves, minced
1 (28 ounce) can diced tomatoes
2 (6 ounce) cans tomato paste
2 (15 ounce) cans tomato sauce
2 cups water (for a long period of simmering for flavors to meld. If you don't want to simmer it as long, add less)
3 teaspoons basil
2 teaspoons dried parsley flakes
1 1/2 teaspoons brown sugar
1 teaspoon salt
1/4-1/2 teaspoon crushed red pepper flakes
1/4 teaspoon fresh coarse ground black pepper
1/4 cup red wine (a good Cabernet!)
1 lb thin spaghetti
parmesan cheese

Steps:

  • In large, heavy stockpot, brown Italian sausage, breaking up as you stir.
  • Add onions and continue to cook, stirring occasionally until onions are softened.
  • Add garlic, tomatoes, tomato paste, tomato sauce and water.
  • Add basil, parsley, brown sugar, salt, crushed red pepper, and black pepper.
  • Stir well and barely bring to a boil.
  • Stir in red wine.
  • Simmer on low, stirring frequently for at least an hour. A longer simmer makes for a better sauce, just be careful not to let it burn!
  • Cook spaghetti according to package directions.
  • Spoon sauce over drained spaghetti noodles and sprinkle with parmesan cheese.

A quick, easy, one-dish weeknight meal invented by my mother-in-law. We love this stuff and use lots of jalapenos!! Chicken Spaghetti Texas-Style. The mix of jalapenos and cream keeps it from being too hot but maintains the spicy flavor. We serve with garlic bread for scooping up the sauce and a veggie on the side.

4 boneless skinless chicken breasts
2 tablespoons butter
1 tablespoon minced garlic
1 tablespoon pickled jalapeno pepper, minced
1 tablespoon pickled jalapeno pepper juice, from jar pickled jalapeno pepper
1 (10 ounce) can cream of mushroom soup or 1 (10 ounce) can cream of chicken soup
1 cup shredded monterey jack cheese
1/2 cup milk
pickled jalapeno pepper juice
salt and pepper

Steps:

  • Trim chicken breasts of fat and cut into bite-sized pieces. Saute in a large skillet with butter and garlic until cooked through and browned.
  • Add minced jalapenos and liquid. Saute until fragrant and pan is fairly dry.
  • Add soup, milk, and cheese. Simmer until heated through and cheese is melted. Add more milk or jalapeno liquid as desired to thin sauce.
  • Serve over spaghetti noodles.

1-1/2 teaspoons minced fresh basil or 1/2 teaspoon dried basil

1/4 teaspoon ginger, minced
1 stalk scallion, finely chopped
1/2 lb ground pork or 1/2 lb ground beef
1 tablespoon sherry wine
1 tablespoon light soy sauce
2 tablespoons brown bean sauce
2 tablespoons hoisin sauce
1 tablespoon sugar
1/2-1 tablespoon chili paste with garlic
10 water chestnuts, finely chopped
1/4 cup szechwan preserved vegetables, diced
4 -6 dried black mushrooms (soaked in boiling water 20 minutes, stems removed, diced)
6 -8 ounces whole bamboo shoots, diced
1/4 cup chicken stock
1 lb fresh Chinese noodles (medium)
1 tablespoon sesame seed oil
5 teaspoons light soy sauce
5 teaspoons sesame seed oil

Steps:

  • Heat 2 tbsp oil in wok to 275°F.
  • Stir-fry ginger and scallion 1 minute.
  • Turn up heat to 425F, and add the meat.
  • Stir-fry 3 minutes.
  • Add sherry and soy sauce.
  • Cook 1 minute, and remove from wok.
  • Heat 2 tbsp oil in wok to 275°F.
  • Add bean sauce, hoisin sauce, and sugar.
  • Stir-fry 2 minutes.
  • Add chili paste, water chestnuts, preserved vegetables, mushrooms, and bamboo.
  • Stir-fry 2 minutes.
  • Add pork and chicken stock.
  • Cook 5 minutes at 250°F.
  • Put noodles into boiling water, and cook uncovered 3-5 minutes.
  • Drain, and rinse with cold water, then with hot water.
  • Mix with sesame seed oil.
  • Arrange noodles on platter, and pour meat mixture over them.
  • Serve in individual bowls, adding 1 tsp soy sauce& 1 tsp sesame seed oil to each bowl.
