JAPANESE BREADED PORK CUTLET WITH SWEET TOMATO SOY SAUCE



Japanese Breaded Pork Cutlet with Sweet Tomato Soy Sauce image

1/2 cup ketchup
2 tablespoons soy sauce
1 1/2 tablespoons Worcestershire sauce
2 teaspoons brown sugar
1/2 cup all-purpose flour
3 large eggs, well beaten
2 cups panko breadcrumbs
1 1/2 pounds 1/4- to 1/2-inch-thick boneless pork loin chops
Kosher salt and freshly ground black pepper
Vegetable oil, for shallow frying

Steps:

  • For the sweet tomato soy sauce: Stir together the ketchup, soy sauce, Worcestershire and brown sugar in a small bowl and refrigerate until ready to use.
  • For the pork cutlets: Put the flour in a wide, shallow bowl; the eggs in another; and the panko in a third.
  • Poke the pork with a fork a few times to tenderize it, then sprinkle the pork with salt and pepper. Heat about 1/4 inch oil in a large skillet over medium-high heat until shimmering. Meanwhile, working in batches, dredge the pork in flour. Shake off the excess and dip in the eggs, letting the excess drip off before coating in the panko. Fry in the oil, turning once, until golden brown on both sides and just cooked through, about 2 minutes per side. Transfer to a paper towel-lined plate to drain. Repeat with the remaining pork.
  • Serve the fried pork cutlets with the sweet tomato soy sauce.

I made this as part of an Asian night so I only made 4 small pork pieces, so it is a little bit of a guess on ingredients for 4 Pork steaks of about 200-250g a piece. I served as is because of making several dishes but it usually served with shredded cabbage which I have listed below, but you pair it with whatever you wish. The dipping sauce is very easy to make or you can purchase Tonkatsu at most Asian grocery stores, it is a rich, fruity barbecue sauce. In fact this whole dish is a very cook and easy recipe to put together, with prep time being about 15 Min's and cooking time being around 15 Min's.

4 pork steaks (600-800g)
1/4 cup plain flour
2 eggs, beaten lightly
2 teaspoons water
2 cups panko breadcrumbs, flakes (Japanese breadcrumbs)
6 cups finely shredded cabbage
vegetable oil, for deep frying
1 lemon, cut into wedges
3 teaspoons japanese mustard
2 tablespoons japanese Worcestershire sauce
1/3 cup tomato sauce
1 teaspoon Japanese soy sauce
2 tablespoons sake
1 teaspoon japanese mustard

Steps:

  • Note: As stated above I made as part of an Asian night so I did not serve with cabbage.
  • Pound pork gently with a meat mallet. Toss in flour, shake off excess.
  • Dip pork in combined egg and water, then dip into panko flakes and coat each side.
  • Soak cabbage in iced water for 5 minutes to crisp, drain.
  • Heat enough oil to cover pork in a saucepan or deep fryer, add pork and cook, until golden brown each side, about 6-8 minutes, repeat with remaining pork steaks. Skim oil occasionally during cooking to remove any crumbs.
  • Drain pork on absorbent paper and cut diagonally into 2 cm slices.
  • To Serve: Place cabbage on a serving plate and arrange pork on top. Serve with lemon wedges, mustard and tonkatsu sauce.

This is using Panko, which is Japanese bread crumbs (really light and airy, more so than crackers), and thinly sliced boneless pork chops.

2 eggs
1 teaspoon milk
½ teaspoon minced garlic
salt to taste
½ teaspoon pepper
1 cup vegetable oil for frying
8 thin cut boneless pork chops
1 ½ cups panko crumbs

Steps:

  • In a medium bowl, mix together the eggs, milk, garlic, salt and pepper. Heat oil in a large heavy skillet over medium-high heat. Place the panko crumbs in a shallow bowl.
  • Rinse pork chops with water, then dip in the egg mixture. Coat with panko crumbs, dip in the egg mixture again, then coat with another layer of panko crumbs. Lay coated chops on a plate until the rest are finished. If you have time, let them set for about 10 minutes, and the coating will set very well. If you wish to freeze the chops, now is the time.
  • When the oil is very hot, place pork chops into the pan, and fry for about 5 minutes on each side, until golden brown.

THAI MARINATED PORK WITH DIPPING SAUCE

This is a great Thai dish, that isn't too spicy. It goes great with sticky rice. Originally it called for meat sliced thinly at 1.5" x 3" and placed on thin skewers like a ribbon. But I just use pork steaks with the bone cut out, and then cut into quarters.

4 cloves garlic, finely chopped (sometimes I use a whole head)
10 -12 sprigs cilantro, finely chopped
4 tablespoons fish sauce (get this at any asian food store, one brand I use is Tiparos)
1 tablespoon soy sauce
4 ounces thick coconut cream (1/2 cup, fresh tastes best, then canned, but I usually use powdered for convience. Prepare according)
4 ounces cooking oil (1/2 cup)
1 tablespoon sugar
1/2 teaspoon white pepper (yes, in a pinch you can use black, but the white has a better flavor)
1 lb thinly sliced pork or 2 pork steaks, cut into quarters (8 pieces total)
1 tablespoon fish sauce
2 limes, juice of (or use 2 tbs rice wine vinigar)
1 tablespoon soy sauce
1 teaspoon chili powder
1 tablespoon sugar
2 tablespoons cilantro leaves, coarsely cut

Steps:

  • Pork& Marinade:Combine everything (but the pork) untill it's all blended together well.
  • Add the pork and let sit for at least 30 minutes.
  • I like to let it sit in the fridge overnight.
  • Some people like to use dishes or bowls to marinade the meat, but I like to use large zipper seal bags.
  • While the meat is soaking we can get going on the dipping sauce: Mix everything together and taste.
  • If it's too spicy-hot, just add a little more sugar, fish sauce, and lime juice till the flavor is right.
  • When it's time to cook the meat, start your grill (I prefer charcoal).
  • Skewer the meat if thats what you are doing, and place the items on the grill.
  • Cook both sides evenly for a couple of minutes and make sure it's cooked all the way through.
  • When eating, dip the meat into the sauce and enjoy.
