SHU CREAM (JAPANESE CREAM PUFF)
This is my modified version of the great tasting Shu Cream recipe (Japanese Cream Puff) that I got at About.com. Yum! *You can also use your own cream puff pastry and just use the custard cream I have here!

Steps:
- For the cream puff pastry:.
- Preheat oven to 375°F.
- Beat eggs in a bowl. Set aside.
- On a pan in low heat, mix butter, sugar, and water. Bring to a boil.
- Bring back to low heat. Add flour and mix really quickly.
- Turn off heat. Add eggs and mix very well.
- Put mixture in a bag.
- Squeeze in mounds of 10-12 on wax paper lined pan.
- Bake for 20-30 minutes until the tips are a little brown.
- Cool puffs on rack when done.
- For the custard filling:.
- In a pan, mix eggs and sugar.
- Add the flour and mix well.
- Add warm milk gradually. Put on stove in low heat.
- Stir constantly until it thickens.
- Remove from heat. Melt butter and mix very, very well.
- Cool custard.
- If you have the injection, fill it with the custard cream and fill the puff pastry. If not, slice the puff pastry in half and fill lower half with the cream custard. Dust top with powdered sugar, if desired.
- Enjoy!
GRAMMY'S GIANT CREAM PUFFS

- Preheat oven to 400 degrees F. Line a baking sheet with parchment paper.
- Melt butter in boiling water in a large saucepan. Add flour and salt. Stir until mixture forms a ball, then remove from heat and transfer to mixer. Beat to cool slightly, then add eggs one at a time, mixing well after each, until smooth.
- Transfer dough to a pastry bag fitted with a large round tip; pipe 2-inch puffs 4 inches apart on lined baking sheet. Bake until golden brown and puffed, about 1 hour.
- Let cool completely, then split in half and remove any uncooked dough from center. Fill with Grammy's Cream Puff Filling and dust with powdered sugar.
- Pour heavy whipping cream into a mixer fitted with the whisk attachment. Add powdered sugar and vanilla extract. Beat on high speed until light and fluffy, about 10 minutes. Transfer to a pastry bag fitted with a round tip.

- Top Crust Dough: Melt Butter in a small saucepan, Stir in Sugar, then flour. Cream Puff Shells: Place butter, salt and water in a large saucepan over high heat. When butter is melted and it starts to boil, remove from heat and Immediately tip in flour all at once, and beat into a firm dough with wooden spoon. In a separate bowl, lightly whisk 5 eggs. Add approximately one egg to the dough at a time, beating well in between with a wooden spoon. Spoon into a Piping bag and Pipe directly downward onto paper-lined tray. If you like, use chopsticks or fingers to pull pastry upwards on the sides.6Place thin discs of Top Crust Dough (from step 1) on top of each.7Immediately bake in a very hot oven 410-430 degrees F, 25-30min until well puffed and browned then down to 210 degrees F for 40 min or more to dry.

- 1. preheat oven to 450 degrees
- 2. In medium sauce pan, combine shortening, salt and boiling water and heat until the entire mixture boils, Reduce heat add flour all at once and stir vigorously until mixture forms a ball remove from heat and add eggs one at a time beating thoroughly after each addition, continue beating until mixture is thick and shiny and pulls away form the spoon
- 3. spoon on to ungreased cookie sheet and bake 20 minutes reduce heat to 350 degrees and bake for 20 more minutes or until golden brown
- 4. cool and slice off the top scoop out the inner dough, Fill with your favorite filling and replace top.
- 5. You can make these shells any size you want I usually make them about the size of a tennis ball.I also turn off my oven and open the door leaving the shells inside until cool, but this is not necessary

CREAM PUFFS (PUFFED SHELL OF CHOUX PASTRY)
Tenderly spiced with cardamom puffy shells, Choux pastry or pate a choux is an unusual pastry in that flour is added to a boiled mixture of butter and water (roux like) and then cooked until it forms a smooth ball of dough. After cooling the dough to lukewarm, eggs are slowly added and the dough is beaten until it becomes a smooth thick paste. The the dough can either be piped or dropped into mounds onto a baking sheet and then baked, first at a high temperature and then at a slightly lower temperature. The high temperature is needed so the dough will rise quickly (giving it a hollow center) and to set the structure of the shells. Bakers' Ammonia is a leavening ingredient called for in many old world recipes, especially those from Scandinavia. It is also called "hartshorn". Unlike baking powder or soda, Bakers' Ammonia (ammonium carbonate) leaves no unpleasant alkaline off-flavor in baked goods. You can find it in any major supermarket or a Greek store.

- Preheat oven to 400°F.
- Prepare baking sheets by greasing and flouring or by lining with Parchment.
- Place water and butter in a saucepan and bring to a boil. Add the flour, cardamom and salt all at once and stir constantly with a wooden spoon until the mixture leaves the sides of the pan and forms a ball. Blend in the milk well. Remove pan from stove burner and stir in the eggs, one at a time, stirring well until completely blended.
- Mix in the Bakers' Ammonia well.
- Drop on cookie sheets about 3 to 4 inches apart. Bake 20 to 25 minutes.
- Cut one of the shells in half at the end of baking to make sure they have dried out enough. If not dried completely, turn the oven off, punch a small hole in the bottoms of the shells, and place them back upside down in the oven to dry out for about 10 minutes. If the insides of the pastry shells are still very moist you may want to bake the shells longer so the shells won't deflate when you take them out of the oven.
- Allow to cool completely before filling.
- Fill with chocolate, vanilla or any flavor custard you enjoy!

CREAM PUFFS
I've been looking for a great cream puff recipe, and this recipe is that!! I experimented with a couple recipes I found other places and this is the best I made. These are very good! Don't be nervous about all the steps, this is really pretty simple. If you like Cool Whip cream puffs, you can fill the puffs with Cool Whip instead of the custard. Note: the time doesn't account for the oven cooling time, but that is optional. The yield will vary depending on how big you make the puffs, I usually make them about a tablespoon or two, they rise quite a bit.

Steps:
- First, make the custard. Melt the butter in a large pot.
- Add sugar, cornstarch and salt.
- Add the milk slowly.
- Heat to boil, and then add egg yolks.
- Cook for 2 minutes, then add the vanilla, stirring constantly.
- Then transfer the custard to a bowl, cover with plastic wrap (or a lid) and put it into the fridge to cool completely before you fill the puffs.
- Next, make the puffs. Preheat oven to 425 degrees F.
- In a large pot, bring butter and water to a boil.
- All at once, add the flour and salt (I usually mix it together before.)
- Stir rapidly until mixture forms a ball on your spoon.
- Move the dough to a mixing bowl. I use an electric mixer, but you could beat it by hand if you want.
- Beat in the eggs one at a time.
- Mix in the vanilla and sugar.
- Drop by spoonfuls onto an ungreased cookie sheet. I always put wax paper down, but this is optional.
- Bake for 20-25 minutes in the oven. They should be golden brown with dry centers.
- Then, turn off the oven, and leave the puffs and the sheet in the oven for about an hour (Again, optional, but it keeps the puffs from collasping).
- Once the puffs are cool and the custard is chilled, put the custard in a plastic bag and cut off a small corner.
- Then poke a hole in each puff, and pipe the custard into the puffs.You could also use a pastry bag, or just split the puffs and spoon the custard in the puffs.
- Then enjoy your beautiful and yummy creation!
