Hello, My daughter lives in the UK Cornwall Anyway we love spicy foods and this is a wonderful salsa recipe. Make it as hot or as mild as you want the flavor will still be wonderful. It can be doubled or tripled or whatever. This recipe will feed 4 adults a snack. Let me know what you think.

Born and raised in Texas, I am a snob when it comes to Mexican food. I have tried so many recipes for the perfect salsa and always come back to this one. It's absolutely delicious, fresh, amazingly healthy...AND ONLY 3 INGREDIENTS. Trust me, simple is the way to go with fresh salsa.

Steps:
- Core the tomatoes.
- Dig the cloves from the head of garlic.
- Chop the stem off the jalapeños.
- Throw the cored tomatoes, the cloves of garlic, and the stemless jalapeños into a pot of water. Bring it to a boil, and turn down to medium/high heat.
- Turn burner off when tomatoes start to peel, usually in 30-40 minutes on the stove.
- Drain tomatoes, garlic, and jalapeño and let cool.
- Throw ingredients into a blender or food processor and pulsate until desired consistency.
- Add salt if desired.

JALISCO SALSA
This salsa is the result of working with a Mexican cook from Jalisco, Mexico. Several tricks taught to this old dude watching him do lunches at an Italian Restaurant. This final tastes of this salsa are combing the Mexican culture foods to the Italian traditional ingredients. Most ingredients are available canned (drain well) or buy fresh when available. Then again maybe this just tastes damn good!

Steps:
- Clean all fresh ingredients and drain very well all canned ingredients to eliminate vinegar taste.
- Dice, chop, or slice everything to your own tastes. Some salsas are very uniform and liquid. Others are very coarse or chunks with little extra liquids. Prepare for yourself.
- Put all into a glass bowl. Squeeze the limes and lemons into the mixture to marinate the salsa. Cover and refrigerate overnight.
- Before serving, drain part off excess liquid, add the beans and let sit a few minutes. Serve with chips of choice.

JANA'S HOME CANNED PICANTE SAUCE
A typical Tomato Salsa. Vary the heat by varying the jalapenos. The recipe produces mild Salsa. Home made salsas tend to be more watery than commercial varieties. To "tighten" the salsa, you can drain the chopped tomatos before mixing all ingredients. You can also include a Tablespoon of flour mixed with cold water if you like.

Steps:
- Blanche, peel, and chop tomatoes. Measure 8 cups.
- Stem, seed, and chop peppers. Chop Onion. Slice garlic thinly.
- Mix all ingredients in large pot. Bring to boil and simmer for 10 minutes, or until onion looks glassy and clear.
- Cook in pressure canner 5 minutes at 15 psi.
- Remove from heat, and allow the canner to return to ambient pressure of its own accord.
- Remove and cool jars.
