BEST BREAD PUDDING
Look no further: this is the only bread pudding recipe you will ever need. This super-thick version is equal parts sweet and custardy, with just a touch a spice. Perfect for a special event, or for Sunday morning breakfast at home.

- Preheat the oven to 300 degrees F. Grease an 8-inch square baking dish with the butter.
- Toast the bread cubes on a baking sheet until they start to dry and harden, about 20 minutes. Set aside. Raise the oven temperature to 325 degrees F.
- Whisk together the cream, milk, sugar, vanilla, salt, cinnamon, whole eggs and yolks in a large bowl. Add the bread to the bowl and stir until completely coated. Cover and let soak for about 30 minutes, pushing the bread down occasionally so that all the cubes are soaked. Meanwhile, pour hot water over the raisins, if using, and soak for 10 minutes. Once plumped, drain the raisins, add to the bowl of bread and gently toss.
- Pour the bread mixture into the prepared baking dish and bake until the custard is set and the top is golden brown, about 1 hour and 30 minutes. Let cool slightly before serving. Serve warm, at room temperature or cold.
THE BEST BREAD PUDDING
Toasting the challah adds flavor, but more importantly, it helps the cubes to soak up and hold onto more of the deliciously rich custard (a high ratio of cream to milk makes it that way). And if that wasn't enough, we use not 1 but 2 vanilla beans to amp up the custard - plain old extract just doesn't do it justice. For a pleasing textural contrast, we top the pudding with turbinado sugar before baking to get a sweet crunch with every bite.

Drizzle the butter over top of the custard and then sprinkle with the turbinado sugar. Bake until the custard is set and the top is golden brown, 1 hour 15 minutes to 1 hour and 30 minutes. Let cool slightly before serving. Serve warm or at room temperature.
JAM AND BREAD PUDDING
Steps:
- Preheat the oven to 375 degrees F.
- Butter a 9 by 13-inch glass baking dish. Arrange half of the brioche along the bottom of the dish, and cut or tear the slices to fit. Spread 3/4 cup of the jam on top and cover with the remaining bread.
- Whisk the eggs, sugar, 2 1/2 cups of the milk, and the vanilla together; pour over the bread. Press to soak and brush the top with 4 tablespoons of the melted butter. Cover with foil and bake for 15 minutes. Remove the foil and continue baking for 15 minutes longer or until the pudding is set. Remove from the oven.
- Preheat the broiler. In a bowl, whisk the remaining 1 tablespoon of milk with the confectioners' sugar. Stir in the remaining melted butter and jam until the mixture is smooth. Spread the mixture over the top of the pudding, place under the broiler, and broil until the glaze is golden. Serve hot or warm, garnished with fresh strawberries.
BREAD AND BUTTER PUDDING

- Heat oven to 180C/160C/gas 4. To make the custard, heat the milk, cream and vanilla pod with its scraped out seeds (if using) together in a saucepan to just below boiling point. Meanwhile whisk the eggs and yolk with the caster sugar in a jug. Slowly pour the warm milk mixture, including the vanilla pod, over the eggs, stirring constantly until smooth. Stir in the vanilla extract now if using.
- Lightly butter an ovenproof dish approximately 20cm x 25cm x 5cm. Cut the crusts from the bread slices, then butter both sides of the bread and cut into triangles. Lay half of the bread slices in the bottom of the dish so that they are slightly overlapping. Mix the dried fruit with the lemon zest and sprinkle half of the mix over the bread. Layer the rest of the bread on top then sprinkle over the remaining fruit.
- Remove the vanilla pod from the custard then pour the custard over the pudding. Leave to soak for at least 30 mins, or longer in the fridge, if you like. Sprinkle over the demerara and bake for 35-40 mins until golden brown and puffed up.

BREAD PUDDING WITH POOR MANS SAUCE
My mother has made this for longest time and it was only after my husband said "I love this!" did I ever get the recipe. I am posting as my old recipe card (in her handwriting) is just about worn out and I don't ever want to lose this recipe.

- Cut or tear bread into 1-2" pieces.
- Scald milk (2 minutes in microwave or until film forms on stove top).
- Pour milk over bread for 5 minutes.
- In separate bowl, mix sugar, beaten eggs butter & vanilla.
- Slowly pour over bread/milk mixture and fold lightly.
- Stir in raisins.
- Pour into greased 2 quart baking dish.
- Bake in pan of hot water in 350º oven until firm (approx. 1 hour).
- Serve warm with Poor Mans Sauce.
- For Sauce:.
- In medium saucepan on stove top, combine sugar, flour and slowly add water to form a smooth paste.
- Cook over medium heat, stirring constantly until clear and thick.
- Stir in butter, vanilla & nutmeg.
- Pour over bread pudding and enjoy!
JAM AND BREAD PUDDING
Well, this is a multi-cultural recipe! It uses Challah bread, making it Jewish, Canadian strawberry jam, and is an English recipe. Go figure! This dessert is also a wonderful breakfast, topped with maple syrup!

- Preheat the oven to 375*F. Butter a 9"x13" glass baking dish. Arrange half of the challah in the dish; tear the slices to fit. Spread 3/4 cup of the jam on top; cover with the remaining challah.
- Whisk the eggs, sugar, 2 1/2 cups milk and vanilla and pour over the challah; press to soak and brush with 4 tbls. of the butter. Cover with foil and bake for 24 minutes, removing the foil halfway through, until the pudding is set; remove from the oven.
- Preheat the broiler. Blend the remaining 1 tbls. of milk with the powdered sugar. Add the remaining butter and jam and stir until the glaze is smooth. Spread all but 1/4 cup of the glaze over the pudding and broil until the glaze is golden. Drizzle the bread pudding with the remaining glaze and serve. Enjoy!

JAN'S NOTHING PUDDING
I have had this recipe for years and make it when I need a cold dessert and have nothing in the house! That is the reasoning my friend gave to me when she gave me this recipe. If you have a can of fruit and some cream you can make this look special. If liked you can also add a few drops of food colouring to the mix to give the colour you like. Prep/cook time does not include setting time.

Steps:
- In a large bowl use an electric beater to beat the egg white until frothy then slowly add in the sugar and finally the vanilla and beat until stiff.
- Add the gelatin to the hot water and allow to dissolve, then add slowly to egg mixture.
- Continue beating until very thick and stiff. This could take 5mins or more. Add drops of food colouring while beating if desired.
- Pour or spoon into a bowl to set.
- Suggestion:.
- Place in a glass bowl and place over a layer of either fresh or canned fruit.
- Cover with a layer of whipped cream and sprinkle with grated chocolate.
