BBQ BRITISH RIBS

Cooked low and slow, ribs are a time investment, but if you want out-of-this-world flavour, you can't rush these things! My secret weapon is to smoke them for the last 30 minutes, kissing the meat with incredible depth and smokiness.

75 g sea salt
2 tablespoons white peppercorns
6 fresh bay leaves
4 racks of higher-welfare pork loin back ribs, (3kg in total)
150 g radishes
BARBECUE SAUCE
225 g HP sauce
300 g tomato ketchup
170 g English mustard
150 ml Worcestershire sauce
100 ml whisky
750 ml fresh apple juice
200 ml runny honey
POTATO SALAD
500 g baby new potatoes
½ a bunch of fresh dill, (15g)
1 bunch of fresh chives, (30g)
50 g pickled onions
1 eating apple
1 ripe pear
200 g Greek yoghurt
1 teaspoon English mustard
YOU ALSO NEED
1 small handful whisky wood chips

Steps:

  • Preheat the oven to 140ºC/275ºF/gas 1.
  • Place the sea salt, white peppercorns and bay leaves in a pestle and mortar and bash until fine (or whiz in a blender), then decant into a jar.
  • Rub 2 tablespoons of the flavoured salt over the racks of ribs (save the rest for another day), then transfer to two baking trays and cover with tin foil.
  • In a 25cm x 30cm high-sided tray, mix the BBQ sauce ingredients together. Place all three trays in the oven for 3 hours, with the sauce tray at the very bottom, uncovered - keep an eye on it and add a splash of water to loosen, if needed.
  • When the time's up, remove the trays from the oven, adding a splash of water to each of the rib trays to deglaze. Divide 300g of the sauce between the two rib trays (cool the rest and freeze for another day), turning the ribs with tongs to coat.
  • Place the ribs directly on the bars of the oven, with the empty sauce tray directly below. Put a handful of whisky wood chips into a metal sieve and set them alight. Once smoking, put the sieve into a metal bowl, place at the very bottom of the oven and smoke the ribs for 30 minutes, or until sticky and caramelized.
  • Meanwhile, scrub the potatoes, cook in a pan of boiling salted water for 15 minutes, or until tender, then drain and leave to cool slightly.
  • Pick the dill, then finely chop with the chives and place in a large bowl. Finely slice the pickled onions, then core and finely matchstick the apple and pear. Add it all to the bowl with the yoghurt, mustard and warm potatoes, toss to coat, then season to perfection.
  • Transfer the racks to a board and slice into portions or individual ribs, drizzling any juices from the tray over the top.
  • Finely slice the radishes and sprinkle over the top, then serve with the potato salad (and some napkins!).

Tender, glazed, finger-licking ribs are hard to beat. Start these off low and slow in the oven, then move to the barbecue for the perfect smoky, sticky finish.

4 racks of higher-welfare baby back pork ribs, (1.5-2kg)
2 teaspoons Chinese five-spice
olive oil
1 bulb of garlic
2 oranges
290 ml hoisin sauce
1 bunch of fresh rosemary or thyme (30g), optional
450 g jasmine rice
SALAD
1 bunch of spring onions
1 bunch of radishes
1 bulb of fennel
3 fresh mixed-colour chillies
1 bunch of fresh coriander, (30g)
3 tablespoons sesame oil
1 tablespoon rice wine vinegar
1 teaspoon low-salt soy sauce
4 cm piece of ginger

Steps:

  • Preheat the oven to 160°C/325°F/gas 3.
  • Sprinkle the ribs with the five-spice and a good pinch of sea salt and black pepper, drizzle with 1 tablespoon of olive oil, then rub all over. Arrange the ribs in a large roasting tray. Break apart the garlic bulb and scatter over the unpeeled cloves, then halve and add the oranges.
  • Cover the tray tightly with tin foil, and roast in the middle of the oven for 3 hours, or until tender and cooked through.
  • Meanwhile, for the salad, trim the spring onions, radishes and fennel, and deseed the chillies, then finely slice it all lengthways and place into a bowl of ice-cold water to make it super-crisp. Pick in the coriander leaves and put aside.
  • Make a quick salad dressing by mixing the sesame oil, rice wine vinegar and soy together. Peel and finely grate in the ginger, then taste and season to perfection with black pepper.
  • Remove the tray from the oven and move the ribs to a board. Carefully squeeze the sticky orange juice back into the tray. Squeeze the soft garlic flesh out of the skins and mash it up, scraping up all the sticky bits from the tray.
  • Place the tray over a medium heat on the hob or over your barbecue, let it start to bubble, then pour in the hoisin sauce. Let it tick away for a few minutes, or until thick and shiny, then remove.
  • Now, dunk each rack of ribs in the glaze, using your woody herbs as a brush to generously coat them all over, and transferring to the cool side of the barbecue as you go. Cook for another 10 minutes or so, covered with the air valve open.
  • Meanwhile, cook the jasmine rice according to the packet instructions, then fluff up and divide between your plates. Drain and dry the salad veg, then toss with the dressing and plate up. Pile the sticky ribs on top, get stuck in, and get messy!

No-Fuss Baked Baby Back Ribs image

1 cup soy sauce
1 cup Worcestershire sauce
1 tablespoon liquid smoke
1 tablespoon brown sugar
1 teaspoon ground ginger
Pinch kosher salt and freshly ground black pepper
6 racks baby back ribs (about 2 pounds each), membranes removed
2 cups yellow mustard
2 cups dark brown sugar
1 1/2 cups apple cider vinegar
1 cup granulated sugar
2 heaping teaspoons garlic powder
2 heaping teaspoons onion powder
1/2 teaspoon smoked paprika
One 15-ounce can tomato sauce
Kosher salt and freshly ground black pepper

Steps:

  • For the ribs: Mix together the soy sauce, Worcestershire, liquid smoke, brown sugar, ginger, pinch of salt and 1 1/2 teaspoons pepper in a large measuring cup. Arrange the ribs in a roasting pan, hotel pan or baking dish large enough to fit them all. Pour the marinade over the ribs. Toss and flip until all the ribs are coated. Marinate 1 hour at room temperature or refrigerate up to overnight.
  • Preheat the oven to 250 degrees F. Line 3 rimmed baking sheets with aluminum foil.
  • Place 2 racks of ribs on each baking sheet, meat-side up. Brush with any remaining marinade left behind in the roasting pan. Cover with more foil. Bake for 2 hours.
  • For the Carolina moppin' sauce: Meanwhile, put the mustard, brown sugar, vinegar, granulated sugar, garlic powder, onion powder, smoked paprika and tomato sauce in a large saucepan and whisk until completely combined. Season lightly with salt and pepper. Place over medium-high heat and bring to a boil. Reduce to medium-low and simmer until thickened, about 1 hour.
  • Uncover the ribs and drain off the fat, reserving for another use (see Cook's Note). Mop or brush the sauce on both sides, returning the ribs to meat-side up. Raise the oven to 300 degrees F and bake the ribs, uncovered, until the meat is tender and the sauce begins to caramelize, about 1 more hour.
  • Mop the ribs again on both sides. Raise the oven to 375 degrees F and bake the ribs, uncovered and adding more sauce as it absorbs, until the meat gets brown and caramelized, about 1 hour more. Cut the ribs into individual pieces. Use the remaining sauce for serving, or keep in the refrigerator for later use.

Baked Baby Back Ribs image

Even a barbeque purist cannot scoff at these foil-wrapped, baked and glazed baby back ribs. They're satisfyingly sweet, savory, smoky and flavorful. The meat falls off the bones! Baking in foil also reduces the amount of clean up. You'll be busy enjoying these ribs -- who has time for dishes?

2 slabs baby back ribs, about 1 pound each (see Cook's Note)
1/4 cup light brown sugar
1 tablespoon chipotle chile powder
2 teaspoons kosher salt
1 teaspoon onion powder
1 teaspoon garlic powder
1 teaspoon seafood seasoning, such as Old Bay
1/2 teaspoon freshly ground black pepper
1 cup apple cider
2 tablespoons apple cider vinegar
1 tablespoon pure maple syrup
1 tablespoon Worcestershire sauce
2 cloves garlic, minced

Steps:

  • In a small bowl, combine the brown sugar, chipotle chile powder, salt, onion powder, garlic powder, seafood seasoning and black pepper.
  • Place each slab of ribs on a piece of aluminum foil large enough to fold over and seal, then place on a baking sheet. Do not seal the ribs in the foil yet (see Cook's Note). Generously sprinkle the dry rub on both sides of the ribs. Place in the refrigerator, meat-side down and uncovered, for at least 1 hour. Preheat the oven to 300 degrees F.
  • In a small bowl, combine the apple cider, apple cider vinegar, maple syrup, Worcestershire and minced garlic. Pour half the liquid over each slab and tightly seal each in the aluminum foil, crimping the edges to make a packet.
  • Transfer the foil packets and baking sheet to the oven and bake until the meat is tender and starts to pull away from the bones, about 2 hours.
  • Remove the sheet pan from the oven. Carefully open the aluminum packets and pour the braising liquid into a small saucepan. Bring the liquid to a simmer over medium heat until it becomes a thick and syrupy glaze, about 4 minutes.
  • While the braising liquid reduces, line a baking sheet with foil and gently transfer the ribs to it. Position a rack on the top level of the oven and preheat the broiler.
  • Using a pastry brush, generously brush the ribs with about half the glaze. Place the ribs under the broiler for about 1 minute. Brush with the remaining glaze and return to the broiled until charred in spots, about 1 minute more. Slice each rack between the bones into 2-rib portions and serve.

This time change has me sluggish and lazy. It is so wet outside and I have really wanted to grill baby back ribs out but just can't. I have a Rival Convection Roaster so I took it out and put all my ingredients inside, place the lid on and let it cook slow for 6 hours.

- 3 slabs of baby back ribs
1 - chopped sweet onion
1 - whole garlic crushed
1 tablespoon(s) dry mustard
1 tablespoon(s) celery salt
1 tablespoon(s) crushed red pepper flakes
4 tablespoon(s) sriracha chile sauce
1 - 15 oz. can of tomatoe sauce
1 cup(s) brown sugar
2 cup(s) apple cider vinegar
3 tablespoon(s) lemon juice
1 cup(s) worcestershire sauce
3 cup(s) ketchup
- salt and pepper to taste

Steps:

  • Wash my pork ribs and clean the thick white skin off Place the ribs into the roaster. I added all the ingredients to the cooker except the ketchup
  • Peeled and sliced a whole sweet onion and place on top the ribs. Peeled the garlic and crushed and sliced, added to the ribs.
  • Let cook on 300 degrees for about 6 hours. You just will have to make sure your ribs are done for your type of cooker. This one is a convection cooker and uses the steam to help tender while cooking.
  • When the ribs were ready I lifted them out of the cooker and set aside. Removed the rack and added the 3 cups of ketchup to the cooker and stirred in to make sure it was combined and thick. You may have to judge how much ketchup to use according to how much liquid you have in reserve.
  • When the sauce has thickend add the ribs back into it and pour over with a spoon and let heat through about 15 more minutes.
  • Plate up and serve. Moist and tender

½ cup ancho chile powder
¼ cup white sugar
¼ cup brown sugar
¼ cup salt
2 tablespoons freshly ground black pepper
1 tablespoon ground cumin
1 teaspoon dry mustard
1 teaspoon ground cayenne pepper
½ teaspoon ground dried chipotle pepper
1 rack baby back pork ribs
1 cup barbeque sauce

Steps:

  • Preheat oven to 250 degrees F (120 degrees C).
  • Mix ancho chile powder, white sugar, brown sugar, salt, black pepper, cumin, dry mustard, cayenne pepper, and chipotle pepper in a small bowl until combined.
  • Place ribs meat-side down on aluminum foil. Prick back of rib rack several times with a knife.
  • Generously apply coating of dry rub to all sides of rib rack.
  • With rib rack meat-side down, fold foil around it to create a tight seal. Transfer to sheet pan.
  • Bake in preheated oven until tender and cooked through, about 2 hours. Remove and cool 15 minutes.
  • Increase oven temperature to 350 degrees F (175 degrees C).
  • Open foil, drain and discard any accumulated juices and fat. Brush barbeque sauce on all sides of rack.
  • Place rack meat-side up and return to oven, leaving foil open. Bake for 10 minutes, remove from oven, and brush another layer of barbeque sauce on meat-side only. Repeat baking and brushing with sauce 4 more times, for a total of 50 minutes baking time.
  • Cut rack into individual rib segments and serve with more barbeque sauce.

  • Preheat oven to 275°F with rack in middle position. Stir together salt, brown sugar, smoked paprika, pepper, garlic powder, and dry mustard in a bowl. Remove thin outer membrane on back of ribs by loosening with a butter knife and pulling it off; discard. Brush slabs evenly with oil; sprinkle with spice mixture, gently patting to adhere. (If desired, wrap ribs with plastic wrap; place on a baking sheet, and chill at least 4 hours or up to 24 hours.)
  • Line a baking sheet with aluminum foil; set a wire rack inside sheet. (If you wrapped and chilled the ribs, remove and discard plastic wrap.) Wrap each slab with heavy-duty aluminum foil; place on prepared wire rack. Bake in preheated oven until tender, 2 1/2 to 3 hours. Remove from oven, and unwrap ribs; discard foil and drippings. Place ribs directly on wire rack; brush 1/2 cup barbecue sauce on top of each slab. Return to oven; bake at 275°F until ribs are tender and meat is pulling away from bones, 45 minutes to 1 hour.
