This recipe is my own. The combination of figs and chocolate together is great. Before baking, very lightly sprinkle cinnamon on top of the loaves after applying egg wash. You won't be disappointed. Store in a sealed container.

3 ¼ cups all-purpose flour
2 ½ teaspoons baking powder
½ cup butter, softened
¾ cup light brown sugar
¼ cup white sugar
7 egg whites, divided
¾ cup chocolate chips, or more to taste
1 teaspoon vanilla extract
1 cup chopped dried figs
1 pinch ground cinnamon

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Lightly spray a baking sheet with cooking spray.
  • Combine flour and baking powder in a bowl.
  • Combine butter, brown sugar, and white sugar in a separate bowl. Beat with an electric mixer until light and fluffy. Beat in 6 egg whites, one at a time. Stir in chocolate chips and vanilla extract. Stir in the flour mixture with a wooden spoon until smooth. Stir in figs with the wooden spoon.
  • Divide the dough in two. Shape each half into a loaf about 12 inches long and 2 inches wide. Place the loaves 4 inches apart on the baking sheet; flatten tops slightly with your hand. Beat remaining egg white until foamy and brush over the tops. Lightly sprinkle cinnamon on the loaves after brushing on the egg white.
  • Bake in the preheated oven until light brown, 20 to 25 minutes. Let cool, about 30 minutes.
  • Lower oven temperature to 325 degrees F (165 degrees C).
  • Cut the baked loaves into 1/2-inch-thick diagonal slices using a serrated knife. Lay slices cut-side down on a baking sheet.
  • Bake in the preheated oven until browned and crisp, about 10 minutes. Cool on a wire rack.

1 cup whole-wheat flour (spooned and leveled)
3/4 cup all-purpose flour, (spooned and leveled)
3/4 cup packed dark-brown sugar
2 teaspoons baking powder
3/4 teaspoon coarse salt
3/4 teaspoon anise seed, chopped
3 large eggs
1 tablespoon finely grated orange zest (from 1 large orange)
1 cup coarsely chopped dried Calimyrna figs (6 ounces)
1 cup walnuts, toasted and roughly chopped
Nonstick cooking spray

Steps:

  • Preheat oven to 325 degrees. In a large bowl, whisk together flours, brown sugar, baking powder, salt, and anise. In a medium bowl, whisk eggs until they're pale yellow and hold a ribbon for 1 second when whisk is lifted, about 5 minutes. Whisk in zest.
  • Fold egg mixture into flour mixture until combined. Fold in figs and walnuts. Lightly spray a parchment-lined baking sheet with cooking spray. Divide dough in half on parchment. Spray hands with cooking spray; form each piece of dough into a 2 1/2-inch-wide log. Bake until dough is firm but gives slightly when pressed, about 25 minutes. Transfer sheet to a wire rack and let logs cool 10 minutes. Reduce oven temperature to 300 degrees.
  • Cut each log on the diagonal into 1/2-inch-thick slices; place slices, cut side up, on sheet. Bake 7 minutes, flip biscotti, and bake 7 minutes more. Transfer to a wire rack to cool completely.

My mother makes these at christmas time and they are, in a word FANTASTIC, sweet with just the tiniest bite from the pepper.

2 cups flour
2 teaspoons fresh coarse ground black pepper
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 1/2 tablespoons butter, softened
1/4 cup sugar
2 eggs
2 egg whites
1 cup dried fig, finely chopped

Steps:

  • Preheat oven to 350 degrees.
  • Combine dry ingredients. Whisk together butter and sugar. Beat in eggs and egg whites, one at a time, mixing well to distribute the butter. Add the dry ingredients and mix until almost smooth. Stir in the figs.
  • Working on a floured surface, shape the dough into 2 logs, 14 inches long, by 1 1/2 inch thick. Place logs on a cookie sheet coated with baking spray, at least 4 inches apart and flatten to 1/2 inch high. Bake for 18 - 23 minutes, until firm. Cool for 10 minutes. Meanwhile, reduce the oven to 300 degrees.
  • Using a serrated knife, slice the cooled loaves into diagonal slices, 1/2 inch wide. Stand them on the cookie sheet with some space around each one and bake for 30 minutes until crisp. Cool completely before storing.
  • Notes: I like mission figs for this recipe, better than the calmryna ones. Also, I always eat the four end pieces while I'm baking the rest of the slices for the second time.

1/2 cup unsalted butter
3/4 cup sugar
2 large eggs
1 teaspoon pure vanilla extract

2 1/4 cups all-purpose flour
1 1/2 teaspoons baking powder
1/4 teaspoon salt
1/2 cup shelled pistachios
4 ounces dried figs, stems removed,cut into 1/4 inch dice

Steps:

  • Heat oven to 350 degrees.
  • In a small pan over medium-low heat, toast fennel seeds, swirling the pan; set aside.
  • In the bowl of an electric mixer fitted with the paddle attachment, beat butter and sugar on medium-high speed until smooth, about 2 minutes.
  • Add eggs, extracts, and zest, and beat on medium speed until creamy and light, 2 to 3 minutes.
  • In a medium bowl, combine remaining ingredients.
  • Add to butter mixture.
  • Mix on low speed until just incorporated.
  • Remove dough to a clean surface; divide into quarters.
  • Form into 9x1 inch logs, place on ungreased baking sheet 2 inches apart, and bake until lightly browned, 25 to 30 minutes.
  • Remove from oven, and cool slightly.
  • Reduce oven temperature to 275 degrees.
  • Using a serrated knife, cut logs on the diagonal into 1/2" thick slices.
  • Arrange biscotti on their sides on a baking sheet.
  • Return to oven, and bake until golden, about 30 minutes.
  • Turn biscotti over, and bake for 30 minutes more.

Gradually drizzle in the olive oil until well blended, followed by the liqueur, zest, and vanilla. Pour the egg mixture into the center of the flour mixture. Using a dough whisk or a wooden spoon, and stirring from the center, combine the ingredients until much of the flour is incorporated. Briefly stir in the melted chocolate. Add the figs and, using your hands, gently bring the dough together into a soft ball. Cover the bowl with a plate and set aside for 20 to 30 minutes. This allows the bran to soften for a more appealing texture.
  • Meanwhile, place a rack in the center of the oven and preheat to 350ºF. Line a large rimless baking sheet with parchment paper. Lightly grease your work surface with olive oil.
  • Cut the dough inside the bowl into 4 equal pieces. Lightly knead each piece and gently roll into a log, about 9 inches long, pressing in any protruding pieces and moistening your hands with oil if needed. Try to make the log as smooth as possible. If the dough cracks, gently push it together. Place the logs crosswise on the prepared baking sheet, leaving at least 2 inches in between. Gently pat down the top of each log until it is about 1 1/2 inches wide.
  • Bake until the logs firm up and small cracks appear on top, about 25 minutes. Remove the baking sheet from the oven, and carefully slide the parchment paper with the logs onto a wire rack. Allow to cool completely, about 60 minutes (or up to 1 day).
