THE EASIEST SEXIEST SALAD IN THE WORLD
Trust me, this fig salad recipe will blow your socks off - it's beautifully creamy, sweet and salty

- One thing I do is to criss-cross the figs but not quite to the bottom. Then, using your thumbs and forefingers, squeeze the base of the fig to expose the inside. At this point you'll think, 'Oooh, that looks nice, I think I'm quite clever ...' or at least I do. More importantly, it allows your dressing to get right into the middle of the fig. All these little things really help to make a salad special. Simply place the figs in a dish, weave around 1 slice of Parma ham or prosciutto per fig, throw in some slices of buffalo mozzarella and rip over some green or purple basil. Mix 6 tablespoons of oil, half the lemon juice, honey and some sea salt and freshly ground black pepper together in a bowl and drizzle everything with this dressing. As far as salads go, it's pretty damn sexy.

- Split the fresh figs at the top with a cross, cutting less than half way down the fig. Now pinch at the base to force the fig flesh through the split skin - practice! Put the figs, ham and sliced mozzarella on a plate, nicely interwoven, and drizzle with plenty of the dressing. (try 6 volumes good olive oil, 3 volumes lemon juice, 1 volume of fresh honey, salt and pepper to taste, all blended) Serve with torn-up chunks of good crusty bread and a Pinot Grigio

- Place the figs on a large plate and weave around I piece of prosciutto or Palma ham around each fig.
- Add the ripped up basil and the buffalo mozzarella.
- Drizzle over the honey, making sure each fig has some in the middle, then drizzle the olive oil, lemon juice, and salt and pepper.
- Or: Mix all the dressing ingredients together in a bowl and season, to taste, then drizzle everything with the honey and lemon juice dressing.

One of my favorite Naked Chef recipes. I make this often. I just love the trip of boiling up the garlic cloves with the pasta, and then just squeezing them out of their skins and adding them mashed to the dressing.

Steps:
- Bring a large pan of salted water to the boil.
- Throw in the pasta and garlic and simmer for about 5 minutes or until al dente, and drain.
- Put the garlic to one side for the dressing.
- Put the pasta in a bowl.
- Chop the tomatoes, olives, chives, basil and cucumber into pieces about half the size of the pasta and add to the bowl.
- Squash the garlic cloves out of their skins and pound in a pestle and mortar.
- Add the vinegar, oil and seasoning.
- Drizzle this over the salad, adding a little more seasoning to taste.
