SLOE GIN
Make this sloe gin in advance and leave to mature for a richly rounded, fruity flavour. It makes for a perfect homemade gift

Steps:
- Rinse and pick over the sloes, then pat dry in a clean tea towel. Using a stainless steel fork or cocktail stick, prick the sloes and tip into a 2-litre glass jar, or divide between two smaller jars.
- Add the sugar and gin, then seal the jar. Shake well. Once a day for seven days, give the jar a good shake. Store the jar in a cool, dark place and leave for two to three months.
- Line a plastic sieve with a square of muslin set over a bowl and strain the sloe gin through it. Decant into clean, dry bottles, then seal and label. The sloe gin is now ready to drink but it'll improve and mature over time - so, if possible, make it one year to drink the next.

Steps:
- Tip the blackberries and sugar into a 1.5-litre sterilised jar. Pour over the gin, seal the jar and swirl around to dissolve the sugar. Store in a cool, dark place and turn the jar once a day for the first week.
- After two-three weeks, strain the gin through a sieve. Pour the gin into bottles, and label. The gin will keep its colour for a few months and will be drinkable for up to a year. Use the infused blackberries in a cocktail like a bramble, or in a trifle.

- For the blackberry cure, zest the clementines and bash the juniper berries, then add to a food processor along with the blackberries and blitz to a fairly smooth paste.
- Lay the side of salmon, skin-side down, on a large baking tray and slowly pour over the blackberry cure, using a spoon to spread it evenly over the salmon flesh.
- Wrap the salmon in a double layer of greaseproof paper, then wrap it tightly with clingfilm and place it in the fridge overnight.
