Grilled Tilapia with Mango Salsa image

Don't let the list of ingredients fool you: this is super-easy, and gets rave reviews whenever I serve it. The salsa can be made the day ahead to save time. Strawberries can be substituted for the mango if you prefer--both are excellent! Combine leftover salsa with some drained black beans the next day for lunch.

⅓ cup extra-virgin olive oil
1 tablespoon lemon juice
1 tablespoon minced fresh parsley
1 clove garlic, minced
1 teaspoon dried basil
1 teaspoon ground black pepper
½ teaspoon salt
2 (6 ounce) tilapia fillets
1 large ripe mango, peeled, pitted and diced
½ red bell pepper, diced
2 tablespoons minced red onion
1 tablespoon chopped fresh cilantro
1 jalapeno pepper, seeded and minced
2 tablespoons lime juice
1 tablespoon lemon juice
salt and pepper to taste

Steps:

  • Whisk together the extra-virgin olive oil, 1 tablespoon lemon juice, parsley, garlic, basil, 1 teaspoon pepper, and 1/2 teaspoon salt in a bowl and pour into a resealable plastic bag. Add the tilapia fillets, coat with the marinade, squeeze out excess air, and seal the bag. Marinate in the refrigerator for 1 hour.
  • Prepare the mango salsa by combining the mango, red bell pepper, red onion, cilantro, and jalapeno pepper in a bowl. Add the lime juice and 1 tablespoon of lemon juice, and toss well. Season to taste with salt and pepper, and refrigerate until ready to serve.
  • Preheat an outdoor grill for medium-high heat, and lightly oil grate.
  • Remove the tilapia from the marinade, and shake off excess. Discard the remaining marinade. Grill the fillets until the fish is no longer translucent in the center, and flakes easily with a fork, 3 to 4 minutes per side, depending on the thickness of the fillets. Serve the tilapia topped with mango salsa.

1 cup long grain white rice
1 large mango (peeled and diced)
1 red bell pepper (diced)
1 cup black beans (rinsed and drained)
1/2 cup red onion (diced)
1/2 cup fresh cilantro (chopped)
Juice of 1 lime
1 teaspoon apple cider vinegar
1 teaspoon sugar
4 6 ounce tilapia fillets
Zest from 1 lime
Juice of 1 lime
1 teaspoon olive oil
1/2 teaspoon ground cumin
1/2 teaspoon crushed red pepper flakes
Salt and Pepper

Steps:

  • Prepare rice according to directions on package.
  • Place all salsa ingredients together in a bowl and mix to combine.
  • Serve over tilapia or eat with chips.
  • Preheat oven to broil (500 degrees F).
  • In a small dish, combine zest, juice, oil, cumin, and red pepper flakes. Rub over both sides of fillets and then sprinkle them with salt and pepper.
  • Prepare a foil lined baking sheet or lightly greased broiler pan. Broil for 7-8 minutes or until the fish flakes with a fork.
  • Serve over rice and top with Mango Salsa.

4 tilapia fillets
2 tablespoons olive oil
1 ½ tablespoons grated orange zest
¼ cup fresh orange juice
salt and pepper to taste
crushed red pepper flakes to taste
1 mango - peeled, seeded and diced
1 small red onion, finely chopped
1 avocado - peeled, pitted and diced
3 roma tomatoes - peeled, seeded and chopped
1 lime, zested and juiced
1 jalapeno pepper, seeded and finely chopped
1 tablespoon minced fresh ginger root
¼ cup chopped fresh cilantro
1 teaspoon kosher salt

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C.)
  • In a shallow baking dish, combine the olive oil, orange zest, orange juice, salt, pepper and chili flakes. Rinse the fish fillets and pat them dry. Place them into the baking dish and turn to coat with the seasonings.
  • Bake for 10 to 12 minutes in the preheated oven, until fish can be flaked with a fork.
  • While the fish cooks, combine the mango, onion, avocado, tomatoes, lime zest and juice, jalapeno, ginger, cilantro and 1 teaspoon kosher salt in a glass bowl. Stir to blend and set aside at room temperature until fish has finished cooking. Place fillets on a platter and spoon the salsa over them to serve.

10 ounces tilapia fillets (2 fillets @ 5oz each)
1 teaspoon chili powder
1/2 teaspoon cumin
1/2 teaspoon oregano
1/2 teaspoon salt
3 dashes black pepper
1/3 cup canned black beans, rinsed and drained (I like Westbrae Organic)
1/3 medium ripe mango, peeled and chopped
1/3 medium tomatillo, paper covering discarded and diced
1/4 medium red onion, chopped
1/8 cup lime juice
1/8 cup fresh cilantro, chopped
1/8 teaspoon black pepper

Steps:

  • For salsa: Combine all in a bowl and mix. Store in refrigerator, covered, until used.
  • For fish: Mix all spices and rub both sides of the fillets equally with the mixture.
  • Spray a non-stick skillet with cooking spray, generously. Heat over medium-high heat until hot.
  • Cook the tilapia fillets in the skillet until lightly browned and the flesh is opaque and flakes, about 2 minutes per side.
  • Serve topped with cold OR warmed salsa!

Serve with white or Spanish rice and top off with the salsa juices.

½ medium lemon, juiced
2 (4 ounce) fillets tilapia fillets
salt and ground black pepper to taste
1 tablespoon butter
1 medium ripe mango, peeled and chopped
1 cup salsa verde
½ cup chicken broth
1 medium jalapeno pepper, seeded and minced
1 tablespoon recaito (such as Goya®)
½ cup white wine
½ medium lime, juiced
1 tablespoon olive oil

Steps:

  • Squeeze lemon juice over fish fillets and season with salt and pepper; set aside.
  • Melt butter in a large pan over medium heat. Add mango, salsa verde, chicken broth, jalapeno, and recaito; bring to a simmer. Add wine and lime juice, then drizzle in olive oil. Bring to a light boil.
  • Add tilapia and cook, flipping as needed, until fish is almost cooked through, about 10 minutes. Reduce heat to low and let simmer, covered, until fish flakes easily with a fork and flavors have melded, about 5 minutes more.

1/3 cup white wine
2 teaspoons Caribbean jerk seasoning
1 tablespoon dried parsley flakes
8 ounce can sliced pineapple in its own juice
Salsa:
2/3 cup chopped mango
2 tablespoons fresh squeezed lime juice
2 tablespoons fresh squeezed orange juice
4 rounded teaspoons jalapeno peppers very finely chopped
4 rounded teaspoons finely chopped red onions
2 rounded teaspoons finely chopped red bell pepper
2 rounded teaspoons finely chopped green bell pepper
1 teaspoon dried parsley flakes
1 teaspoon freshly ground black pepper

Steps:

  • Directions Mix olive oil, wine and parsley then marinate fish in the mixture for 1 hour. Place fish on well oiled hot grill. Sprinkle fish with half of the jerk seasoning and half of the pineapple juice. Baste some of the oil marinade on the pieces of fish. Place pineapple slices on grill as well. Turn fish over and sprinkle with remaining seasonings. Add pineapple juice and oil marinade as on first side. Flip pineapple slices. Serve fish with pineapple slices and top with mango salsa. To make salsa mix all ingredients well and refrigerate for an hour or more before serving.
