JAMAICAN LOADED BAKED SWEET POTATOES WITH PULLED PORK AND MANGO RUM SALSA
It's hard to feel guilty about devouring a loaded baked potato with pulled pork when it's a beta carotene-packed sweet potato topped with fiber-filled mango. Shave down prep time by using two cups of thawed Make-Ahead Oven-Roasted Pulled Pork!

- Heat oven to 400°F. Line rimmed cookie sheet with foil; spray with cooking spray. Place sweet potatoes on cookie sheet, and poke all over with fork. Bake 1 hour to 1 hour 15 minutes or until completely tender when pierced all the way through with knife. Cool about 10 minutes or until easy to handle.
- Meanwhile, in small bowl, stir together brown sugar, lime juice, rum and gingerroot until brown sugar dissolves. Add jalapeño chile, onion and mango; toss to coat. Stir in cilantro; cover and refrigerate.
- In medium microwavable bowl, mix pork, olive oil and jerk seasoning. Microwave uncovered on High 1 to 2 minutes or until steaming hot.
- Cut open sweet potatoes. Using fork, mash up the flesh of each potato in their jackets. Divide salt among potatoes, and stir in with fork. Divide pork mixture, salsa, then cheese among the 4 potatoes.

- Preheat the oven to 350°F and spray a 13X9 baking dish with nonstick cooking spray. In a large bowl, combine the ingredients and mix well. (It may take some serious stirring, but you'll get there.) Pour the mixture into the prepared pan and bake fro 55 to 60 minutes or until bubbly and golden brown around the edges. Allow to rest for about 10 minute before serving.

- Jerked Meat (Chicken, Pork, Lamb, etc.) – Most popular Jamaican food. Jerk is one of Jamaica’s most popular food exports. Jerk was started by the Maroons (escaped slaves) who adapted the meat preservation techniques of the Tainos, the first inhabitants of Jamaica.

- Add the shredded cheese, cream cheese, mayonnaise, garlic powder, onion powder, cayenne, jalapeño peppers, chopped pimentos and Worcestershire sauce to a medium bowl. Mix together and taste for seasonings. Add salt and pepper to taste. Chill the pimento cheese while you make the potato skins.
- Place the potatoes on a baking sheet and drizzle with olive oil, salt and pepper, toss to combine. Using a fork, prick the potatoes to let the steam escape while cooking.

- If pimento cheese was made in advance and is refrigerator cold, set out and allow to warm to room temperature.
- Preheat oven to 425 degrees F (218 C). Use a fork to prick the potatoes a few times on each side. If using oil, rub onto the skins, then sprinkle generously with salt. Place potatoes on a baking sheet, and bake for 55 to 65 minutes, flipping after 25 minutes to encourage even cooking. Larger potatoes will take longer. When done, a butter knife should easily slide into the center. Turn off oven, and set potatoes aside until cool enough to handle.
- Lay a potato on its side, and slice through lengthwise, cutting off the top third. Refer to photo. Repeat with remaining potatoes. (Reserve the sliced off tops for snacking!)
- Use a spoon to scoop out the flesh of the potatoes leaving approximately 1/4 inch of potato attached to the skin. Place the scooped out potato in a medium-size bowl.
