Porridge is a staple in many Caribbean homes, oats porridge being one of several popular recipes. This hearty mixture is spiced with cinnamon, nutmeg, vanilla and a bay leaf. Food for the soul.

1 cup rolled oats
2 1/2 cups cold water
1/4 teaspoon salt
1 bay leaf
1 small cinnamon stick
1/2 cup milk
1/4 teaspoon ground cinnamon
1/4 teaspoon grated nutmeg
1/2 teaspoon vanilla extract
1/4 cup sweetened condensed milk

Steps:

  • Fill a medium saucepan with cold water. Stir in oats, salt, cinnamon stick and bay leaf. Bring to a boil over medium-high heat.
  • When mixture comes to a boil, reduce heat to low and continue cooking for 2-3 minutes, stirring frequently.
  • Add milk, ground cinnamon, nutmeg, vanilla extract and sweetened condensed milk, stirring for another 1-2 minutes until well blended.
  • Turn off heat and serve hot with a bread or crackers.

Start your day with this satisfying and heart warming Jamaican Oats Porridge. Delicious super creamy vegan island style oatmeal made with cinnamon, nutmeg, vanilla, a plant based milk of your choice and sweetened with coconut condensed milk.

1 cup Oats (Rolled or Quick) (use gluten free if you are sensitive to trace)
2 1/2 cups plant based milk (coconut milk or almond milk)
1/2 cup Water
1/8 tsp Cinnamon
1/8 tsp Nutmeg
1 tsp Vanilla
1/8 tsp Pink salt
Coconut condensed milk to taste

Steps:

  • In a medium sized saucepan, add the water and plant based milk then bring to a boil.
  • Once boiled stir in the cinnamon, nutmeg and vanilla.
  • Reduce the heat to medium and pour the oats into the saucepan while continuously stirring so the oats are evenly combined and doesn't clump.
  • Allow the porridge to cook for 5-7 (rolled oats will take 10-15) minutes and stir frequently to avoid sticking. If the porridge thickens up too much during the given time add a splash of water
  • Finally, pour in your coconut condensed milk and pink salt and sweeten to taste

65 g Oats (Quick or porridge oats)
¾ Cup Unsweetened milk (Your choice of milk)
¼ Cup Water
3 tbsp Condensed milk (to sweeten)
½ tsp Vanilla extract
⅛ Nutmeg
Pinch Cinnamon
Pinch Salt

Steps:

  • In a pot, add the water, unsweetened and salt and bring to a boil on medium heat.
  • Add the oats and whisk until the oats starts getting thick.
  • As the oats gets thick, turn the heat to low and continue to whisking.
  • Add the vanilla, cinnamon, nutmeg cook for minute or two.
  • Sweeten to taste with condensed milk.

4 cups water
1/2 teaspoon salt
1 cup fine yellow cornmeal
1 tablespoon flour
1 cup milk (or soy milk)
1 teaspoon vanilla extract
1/4 teaspoon cinnamon
2 tablespoons condensed milk

Steps:

  • Bring salted water to a boil.
  • Combine cornmeal and flour together in a bowl.
  • Add milk slowly to make a smooth paste.
  • Stir cornmeal paste into boiling salted water.
  • Cover and cook on low heat for 15 minutes.
  • Stir in vanilla, cinnamon, cover and simmer for 15 more minutes.
  • Sweeten with condensed milk.
  • Serve hot.
