Steps:
- Preheat over to 350.
- Grease a 9x13 baking pan.
- In a large mixing bowl, cream margarine and sugar.
- Add remaining ingredients except for jam and mix well.
- Pat three-fourths of dough into bottom of pan.
- Spread jam evenly over top of dough.
- Crumble remaining dough over jam.
- Bake 30 minutes. Cool in pan, then cut onto 2 inch squares.

- Preheat oven to 350 degrees and spray an 8x8 baking pan with baking spray.
- In a large mixing bowl stir together oats, flour, sugar, and baking soda until well mixed.
- Add in melted butter and vanilla extract and stir until combined.
- Add 3/4 of the mixture to the baking pan and press gently.
- Add raspberry jam evenly over crust.
- Mix remaining crust mixture and mix with vanilla wafer crumbs.
- Sprinkle mixture over jam.
- Bake for 30 minutes.
- Cool completely before slicing.

EASIEST EVER RASPBERRY JAM BARS
My Raspberry Jam Bars are ridiculously easy to make, and faster than most recipes because it uses melted butter rather than creaming it or rubbing it into the flour. These bars have an oatmeal biscuit base and crumbly oatmeal topping with raspberry jam sandwiched in the middle. Use whatever jam you want!

- Preheat oven to 180C/350 (fan forced). (Note 1)
- Spray a 20cm/9" square tin with oil and line with baking/parchment paper with overhang (so it can be lifted out once cooked).
- Mix together butter, flour, oats, sugar, baking powder and salt until you can no longer see white bits of flour. Add egg and mix.
- Place 2 1/2 cups of the mixture in the tin and press into base. Spread with jam (Note 2), then use your hands to crumble the remaining mixture over the top (Note 3).
- Bake for 30 - 35 minutes or until the top is deep golden. Remove and allow to cool in the tin before lifting out of the tin using the baking paper.
- Cut into squares. Serve at room temperature. Store in airtight container.

ONE-BOWL OATMEAL JAM BARS RECIPE

- Gather the ingredients. Preheat the oven to 350 F.
- Grease a 13 x 9 x 2-inch pan with cooking spray or softened butter and line with parchment.
- To make the crust and topping, combine the flour, oats, salt, and sugar in a large bowl and whisk until incorporated.
- Cube the cold butter and using your fingers, rub the butter into the flour mixture until the butter is crumbly and pea-sized. Alternatively, you can use a pastry blender or two butter knives.
- Add the yolk and vanilla and, using a fork, stir them into the crumbly mixture. Switch to your fingers if you feel comfortable, and continue mixing the dough until the yolk and vanilla are fully incorporated and the dough holds together when you squeeze a bit between your fingers.
- Remove 2 2/3 cups of dough and place in a medium bowl in the refrigerator. Press the remaining dough firmly and uniformly into the prepared pan.
- Evenly spread the jam over the bottom crust.
- Sprinkle the refrigerated dough over the jam, rolling it into little balls between your fingers for the ultimate crumble topping, if you so desire.
- Bake the bars for about 45 minutes, rotating the pan at the halfway mark, until the oat crumb topping is lightly browned.

- Preheat oven to 350 degrees F (175 degrees C). Grease one 8 inch square pan, and line with greased foil.
- Combine brown sugar, flour, baking soda, salt, and rolled oats. Rub in the butter using your hands or a pastry blender to form a crumbly mixture. Press 2 cups of the mixture into the bottom of the prepared pan. Spread the jam to within 1/4 inch of the edge. Sprinkle the remaining crumb mixture over the top, and lightly press it into the jam.
- Bake for 35 to 40 minutes in preheated oven, or until lightly browned. Allow to cool before cutting into bars.

- Preheat the oven to 400 degrees F (200 degrees C). Grease a 9x13 inch baking pan.
- In a medium bowl, cream together the butter and brown sugar until smooth. Combine the flour, oats, baking soda and cinnamon; stir into the creamed mixture. Mix in the walnuts. - To make the sour milk, mix the milk and lemon juice together in a small bowl and set aside until needed.
- Preheat the oven to 350 degrees.
- In a large bowl add the flour, baking soda, salt, oats, cinnamon and brown sugar together.
- Next add the melted butter and shortening, mixing lightly.
- Lastly, slowly add in the sour milk, making sure to mix well.
- Chill the dough for 1/2 hour.
- Then on a lightly floured board, roll to 1/4 inch thick.
- Cut the dough using a 2" round cookie cutter. Make sure to have an even number of cookie rounds.
- Place a spoonful of jam in the center of the cookie, then top with another cookie.
- Make sure to lightly press the edges together.
- Roll the cookie edges in the ground nuts.
- Place on a lightly greased cookie sheet and bake in a 350 degree oven for 10 - 12 minutes.
FRUIT-FILLED OATMEAL BARS
Hearty, yummy, and even fairly healthy (if you want it to be!). These are not like granola bars but more like a brownie with a nice crust. Originally taken from BH&G "New Cook Book", 1989--now that I live overseas, I love these older cookbooks because so many of the recipes are still "from scratch" and don't use convenience products that are too expensive or haven't come here yet. - In mixing bowl, combine flour, oats, brown sugar, and baking soda.
- Cut in margarine/butter until mixture resembles coarse crumbs.
- Reserve 1/2 cup of the flour mixture.

- RAISIN FILLING:.
- In medium saucepan, combine 1/2 cup water, 2 tablespoons sugar, and 2 teaspoons cornstarch. Add 1 cup raisins. Cook & stir until thickened & bubbly.
- APPLE-CINNAMON FILLING:.
- Peel/core/chop 2 medium apples. In medium saucepan, combine apples, 2 tablespoons sugar, 2 tablespoons water, 1 tablespoon lemon juice, 1/2 teaspoon ground cinnamon, and a dash of ground cloves. Bring apple mixture to a boil; reduce heat & simmer 8-10 minutes or until apples are very tender.
- APRICOT-COCONUT FILLING:.
- In medium saucepan, combine 1 cup diced dried apricots and 3/4 cup water. Bring apricot mixture to boil; reduce heat. Cover and simmer 5 minutes. Meanwhile, combine 1/4 cup sugar and 1 tablespoon all purpose flour. Stir into apricot mixture. Cook and stir 1 minute more or until mixture is very thick. Stir in 1/2 cup coconut.
