Steps:
- Whisk all of the first 11 ingredients together (not the 12th ingredient, the ground turkey) in a large bowl. Once completely combined, add the ground turkey and use your hands, a rubber spatula, or wooden spoon to thoroughly mix. Once completely combined, form the mixture into 6 plump and compact patties. The patties will weigh around 6 ounces each and be a heaping 1/2 cup each.
- Place the patties onto a parchment paper lined baking sheet, baking pan, or plate. Cover tightly then refrigerate for at least 30 minutes and up to 24 hours. This ensures the patties will hold their shape. You can also freeze the patties for up to 3 months. Thaw in the refrigerator.
- Clean the grill and grease with vegetable oil. Pour a little vegetable oil on a paper towel and carefully rub all over the grates. Preheat grill to high. Place cold turkey burgers on heated grill and cook for 5 minutes with the lid closed. Flip burgers over and cook covered for an additional 3 minutes or until a meat thermometer registers 165°F (74°C). If adding cheese, place a slice of cheese on the burger for the last 30 seconds. Overcooking the turkey burgers will quickly dry them out, so keep a close eye on them.
- Serve on hamburger bun with desired toppings.
- Store leftover turkey burgers in the refrigerator for up to 5 days.
JALAPEñO TURKEY BURGERS!
I love a burger with a little kick to it and these juicy burgers have one! I use 85% lean ground turkey so the burger has enough fat so that it doesn't dry out.

- Form into four patties.
- Place pan on medium heat.
- Add olive oil to bottom of pan.
- When pan is hot, place patties in pan and cook for about 5 minutes each side or until cooked through.

Steps:
- For the jalapeno jam: In a small saucepot, combine the jalapenos, sugar and marmalade and bring to a simmer over low heat. Simmer until the liquid reduces to a glaze, about 1 hour.
- For the turkey burgers: In a bowl, combine the ground turkey, salt and pepper and mix well. Form the mixture into 6 patties.
- Heat a cast-iron skillet over high heat until it begins to smoke. Add 1 tablespoon of the grapeseed oil to the pan and reduce the heat to medium. Add 3 of the patties to the pan and cook until the first sides are seared, 3 to 5 minutes. Flip and cook until the burgers are cooked completely through, about 5 minutes. Repeat with the remaining tablespoon grapeseed oil and the other 3 burgers.
- Butter each of the buns on both sides and toast them in the hot skillet until golden brown.
- Dress each of the bottom halves of the buns with lettuce, tomato, red onion and avocado. Place a burger on top of each dressed bun and top with 2 tablespoons of the jalapeno jam. Finish with a bun top.
JALAPENO-SWISS TURKEY BURGERS
These easy turkey burgers are extra juicy and loaded with flavor. I think the spicy jalapenos give it just the right level of heat, but feel free to adjust the amount to amp it up or tone it down. -Wanda Allende, Orlando, Florida

CRANBERRY JALAPENO TURKEY BURGERS OR MEATBALLS
I usually grill these burgers but you can broil or panfry. I have also made this into meatballs and used as appetizers. I used Kittencal's Cranberry-Ginger Garlic Meatball Sauce for the sauce on these. But you can use whatever sauce you like. They were a big hit. Kind of a sweet/hot flavor.

Steps:
- In a large bowl, mix together the first 8 ingredients (turkey - pepper). If the turkey mixture is too wet, you can add in some more bread crumbs.
- Lay out wax paper for forming the patties. Scoop mixture out by 1/4 cup then adjust if necessary so you have 10 equal sized mounds.
- Form into 10 patties, with 5 of them being slightly larger than the others (to cover the filling).
- On five of the patties, spread one tsp of the Giuliano Jalapeno Spread then top with shredded cheddar cheese.
- Top with remaining 5 patties and press the edges to seal.
- Patties will be piled up in the middle, so press in the middle to flatten.
- Grill until cooked through (about 12-15 minutes).

- Start by cooking your bacon. Place bacon in a frying pan over medium heat and cook gently for a few minutes until the bacon is cooked and just slightly golden. Remove from the pan and place onto some kitchen paper to absorb excess fat and cool slightly, then chop into small pieces.
- Add the turkey mince, finely chopped jalapeños, grated cheese, cooled and chopped bacon, hot sauce (if using), garlic powder and salt to a large mixing bowl. Use your hands to mix everything together, stopping when just combined - don't overwork or knead the mixture.
- Divide the mixture into 4 and shape into evenly sized patties, about 1/2 inch thick. Place on a plate or baking sheet and transfer to the fridge to chill for 30 minutes to an hour.
- To cook the burgers: heat your grill/barbecue to medium high heat (about 200-225°C or 400-450°F). If using a griddle pan on the hob, place over medium heat until the pan is very hot.
