CREAMY JALAPEñO CORN CHOWDER



Creamy Jalapeño Corn Chowder image

This creamy corn chowder is spicy, loaded with sweet corn and is a perfect year-round soup! It's always nice to have a quick-fix weeknight soup on hand! Serve it up with bacon and cheese!

2 Tbsp. olive oil
1 medium white onion, diced
2 stalks celery, diced
1/4 cup butter
1/4 cup flour
2 cups chicken broth (or vegetable broth)
2 cups whole milk
2 large Russet potatoes, washed, peeled, small dice
2 jalapeños, diced*
2 sprigs fresh thyme
1 tsp. garlic, minced
1 1/2 tsp. salt
1/2 tsp. pepper
1/8 tsp. smoked paprika
2 (15.25 oz. cans) yellow corn (can sub with fresh or frozen)
1/2 cup heavy cream
garnish ideas: bacon, cheddar cheese, chives

Steps:

  • Sauté the onion and celery: Heat oil in a large pot over medium heat. Add the celery and onions and cook, stirring occasionally, until the onion has softened, abut 5-8 minutes.
  • Melt the butter in the pan and sprinkle with flour. Stir or whisk to combine until vegetables are coated. Cook for a few minutes to get rid of the raw flour taste.
  • Turn the heat to high. Add in broth, milk, potatoes, jalapeños, thyme, garlic, salt, pepper and paprika. Bring this to a boil, then reduce heat to a gentle simmer and cover. Cook for ~8-10 minutes or until potatoes are tender but not mushy, stirring occasionally so nothing sticks to the bottom of your pot.
  • Add in corn and heavy cream. Stir to combine.
  • Blend some of the soup: Ladle 3 cups of the soup out of the pot and transfer to a high powdered blender (like a Vitamix). Blend until smooth and add back into the soup.
  • Allow soup to come back to a simmer. Taste and adjust seasonings, if necessary. Ladle soup into bowls and garnish with bacon, cheddar cheese, chives, more jalapeños, etc.

6 tablespoons butter (divided)
½ large onion (finely chopped)
4 cloves garlic (minced)
5 cups chicken broth
2 to 3 potatoes (peeled and cubed)
¼ cup flour
2 cups half and half
8 ounces shredded sharp white cheddar cheese
8 ounces cream cheese (cubed and softened)
2 cups cooked and chopped chicken
4 to 6 medium jalapenos (seeded and finely chopped, plus more for garnish)
Salt and pepper (to taste)
Croutons, crumbled bacon, and fresh sliced jalapenos for garnish

Steps:

  • In a large pot or Dutch oven, melt 2 tablespoons butter over medium heat.
  • To the pot with butter, add onion and garlic. Cook for about 3 minutes until onions are soft and translucent.
  • Pour in chicken broth and potatoes. Bring to a boil, and allow to boil for about 10-15 minutes, until potatoes are soft.
  • In a separate pot or large skillet, melt remaining butter over medium heat.
  • Add flour. Stir to fully combine, then allow to heat through for about 2 minutes.
  • Stir in half and half slowly, about a ¼ cup at a time, stirring constantly.
  • When half and half is fully added, allow to warm to steaming.
  • Begin adding shredded cheese, a little at a time, stirring constantly, until completely incorporated.
  • Add cream cheese to cheese mixture, whisk until cream cheese is melted into sauce.
  • Pour cheese sauce mixture into broth mixture. Stir to combine.
  • Add chicken and jalapenos to soup, and stir to combine. Continue cooking until fully heated through.
  • Add salt and pepper to taste.
  • Serve hot topped with croutons, bacon, and fresh jalapenos.

4 pieces thick-sliced bacon, chopped
1 medium Vidalia onion, finely chopped
1 medium red bell pepper, chopped
Salt and freshly ground black pepper
1 small jalapeno, chopped seeds and ribs removed
3 cloves garlic, finely chopped
1/4 cup all-purpose flour
4 cups chicken stock
2 large red potatoes, well scrubbed and small diced
1 cup heavy cream
16 ounces frozen corn
1/4 teaspoon cayenne pepper
1 bay leaf

Steps:

  • In a small saucepan over medium heat, saute the bacon until crisp and browned and the fat is rendered. With a slotted spoon, transfer bacon to paper towel and reserve. There should be about 4 tablespoons of bacon grease in pan.
  • Add the onions and red pepper to pan. Saute until tender and translucent, about 4 minutes. Season with salt and pepper, to taste. Add the jalapeno and garlic and saute until fragrant, about 1 minute. Stir in the flour until thoroughly combined. Cook the flour until it reaches a slight blonde color, about 1 minute. Stir in the chicken stock and the potatoes and simmer for 10 minutes; potatoes will become soft. Add the cream, corn, cayenne and bay leaf. Simmer for 15 more minutes. Pour into a serving bowl and garnish with the reserved bacon.

Corn season comes to an end just as cool evenings make their entrance. That means it's prime time to prepare corn chowder using those last few ears.

6 ears corn or 3 cups loose frozen whole kernel corn
1 1/2 cups chicken broth
1 cup milk or 1 cup light cream
1 -2 fresh jalapeno pepper, seeded and finely chopped
1 7/8 ounces jars roasted red peppers, drained and chopped (1/4 cup) or 1 (2 ounce) jar diced pimentos, drained
1/2 cup crumbled feta cheese

Steps:

  • Cut off kernels from the ears of corn, if using whole fresh corn.
  • In a blender container, combine half of the corn and the broth.
  • Blend till nearly smooth.
  • In a large saucepan, combine broth mixture and remaining corn kernels.
  • Stir in milk or light cream, jalapeno peppers and red peppers or diced pimientos.
  • Heat through.
  • Top each serving with cheese.
  • Serve hot.

Steps:

  • In 2-quart saucepan, melt butter over medium heat. Add onion and bell pepper; cook 3 to 5 minutes, stirring occasionally, until crisp-tender.
  • Stir in flour. Gradually add milk, stirring constantly, until mixture is boiling.
  • Stir in remaining ingredients. Cook 5 to 10 minutes, stirring occasionally, until corn is tender. Serve soup topped with cheese if desired.

1 medium yellow onion, diced
1 jalapeno, seeded and diced
1 russet potato, diced
1 small red pepper, diced
3 cups frozen corn kernels, thawed
Kosher salt and freshly ground black pepper
1 tablespoon chopped fresh thyme leaves
2 cups milk
3 cups chicken broth
2 cups shredded rotisserie cooked chicken
Fresh cilantro leaves, for garnish
1 lime, cut into wedges

Steps:

  • In a large saucepot over medium heat cook bacon until crispy and all fat has rendered out. Remove with a slotted spoon to a paper towel lined plate. Drain off all but 1 tablespoon fat, add onion, jalapeno, potato, red pepper, corn, salt and pepper and saute for about 5 minutes. Add thyme.
  • In a blender, puree half the mixture and add back to the pan. Add milk, chicken broth, and chicken and let simmer for about 5 minutes.
  • Transfer to serving bowls. Garnish each bowl with cooked bacon, fresh cilantro and a lime wedge.

4 large jalapeno peppers - halved, seeded, and thinly sliced
8 medium potatoes, diced
1 (14.5 ounce) can chicken broth
1 cup skim milk, or more as needed
1 tablespoon salt, or to taste
1 teaspoon chopped fresh rosemary
1 teaspoon garlic powder
1 teaspoon ground paprika
½ teaspoon dried oregano
1 teaspoon ground black pepper
½ teaspoon crushed red pepper flakes
1 (8 ounce) package cream cheese, softened
½ cup heavy cream
1 cup shredded sharp white Cheddar cheese
4 stalks green onion, chopped
3 tablespoons chopped fresh parsley

Steps:

  • Place diced bacon in a skillet and over medium-high heat and cook until evenly browned, about 10 minutes. Drain bacon on paper towels.
  • Meanwhile, melt butter over medium heat in a large stockpot. Add yellow onion and jalapeno peppers; cook and stir until slightly browned, 5 to 7 minutes. Add potatoes, chicken broth, 1 cup milk, salt, rosemary, garlic powder, paprika, oregano, black pepper, and red pepper flakes; bring to a boil. Boil until potatoes are tender, 15 to 20 minutes.
  • Reduce heat to medium-low and stir in cream cheese, heavy cream, and bacon; stir until cream cheese has melted.
  • Add Cheddar, a little at a time, stirring to incorporate after each addition. If the chowder is too thick, you can add more milk to reach the desired consistency.
  • Stir in most of the green onion and parsley until slightly wilted. Ladle into bowls and garnish with remaining green onion and parsley.

5 fresh jalapeño chilies
1/4 cup olive oil
1 1/2 tablespoons fresh lime juice
1 tablespoon water
1 garlic clove, minced
1 cup packed fresh parsley leaves
For the chowder:
1 onion, chopped fine
2 ribs of celery, chopped fine
2 tablespoons vegetable oil
2 cups chicken broth
2 1/2 cups water
1 1/2 pounds boiling potatoes
1/2 pound ham steak if desired, cut into 3/8-inch cubes
4 cups fresh corn kernels including the pulp scraped from the cobs (cut from about 6 ears of corn)
2 teaspoons fresh thyme leaves, minced

Steps:

  • Make the puree:
  • Broil the jalapeños on the rack of a broiler pan under a preheated broiler about 2 inches from the heat, turning them every 5 minutes, for 15 to 20 minutes, or until the skins are blistered and charred. Transfer the jalapeños to a bowl and let them stand, covered tightly, until they are cool enough to handle. Wearing rubber gloves, peel the jalapeños, cut off the tops, and discard all but 1 teaspoon of the seeds. In a blender puree the jalapeños with the seeds, the oil, the lime juice, the water, the garlic, the parsley, and salt to taste. The puree may be made 3 days in advance and kept covered and chilled.
  • Make the chowder:
  • In a kettle cook the onion and the celery in the oil over moderate heat, stirring, until the celery is softened, add the broth, the water, the potatoes, peeled and cut into 3/8-inch cubes, and the ham, and simmer the mixture for 10 minutes. Stir in the corn and the thyme and simmer the chowder for 5 minutes, or until the potatoes are tender. In a blender or food processor purée 2 cups of the chowder and stir the purée into the remaining chowder.
  • Serve the chowder with a small dollop of the jalapeño and parsley puree swirled into it.

3 slices bacon, finely chopped
1 medium onion, chopped
2 tablespoons butter
3 cloves garlic, sliced
4 lbs sweet potatoes, peeled and cubed
8 cups chicken broth
1/4 cup pickled jalapeno pepper, coarsely chopped
2 tablespoons jalapeno juice
1 teaspoon comino (cumin)
1/4 teaspoon baking soda
1/2 cup cilantro leaf
1 1/2 cups milk
1 teaspoon salt
1 teaspoon black pepper, freshly ground

Steps:

  • In a large stock pot, saute bacon and onion in butter until just tender.
  • Add garlic and cook about 2 more minutes.
  • Add sweet potatoes, chicken broth, pickled jalapeños, jalapeño juice and comino.
  • Cover and cook until potatoes are tender (approx. 20 to 30 minutes).
  • When done, add soda, cilantro and milk.
  • Coarsely mash potatoes with a potato masher.
  • Stir well and re-adjust salt and pepper.
  • Simmer for 15 minutes, stirring frequently.
  • NOTE: You may garnish with sour cream and 3 or 4 fresh jalapeños, cut in thin lengthwise strips.
