JALAPENO SALSA
I wanted a verde style salsa, but living in Germany, I was not able to find tomatillos. This green salsa is great on eggs, used as a marinade, or just eaten with tortilla chips. Its heat is somewhere in the middle between mild and hot. Hope you enjoy it as much as we do.

Steps:
- Place jalapenos in a saucepan with enough water to cover. Bring to a boil. Simmer until jalapenos soften and begin to lose their shine, about 10 to 12 minutes. Remove the jalapenos with a slotted spoon, chop off the stem, and place them in a blender. Add the tomatoes and boil for 2 to 3 minutes to loosen the skin. Peel the skin from the tomatoes and add tomatoes to the blender.
- Place the onion, cilantro, garlic, lime juice, salt, and black pepper in the blender with the jalapenos and tomatoes. Blend to desired consistency.

JALAPENO SALSA
This makes about 3 pints, I store it in the refrigerater, The longer it sits the hotter it gets. With this recipe you always have salsa in the refrigerator.

Steps:
- Combine all ingredients in large saucepot.
- Bring mixture to a boil.
- Reduce heat.
- Simmer for 10 minutes.
- Ladle hot salsa into hot, sterilized jars, leaving 1/4-inch head space.
- Adjust 2-piece caps.
- Process for 15 minutes in boiling-water canner.
ROASTED JALAPEñO SALSA RECIPE
Intensely flavored pan-roasted jalapeño salsa which packs some heat. The peppery flavor of the jalapeños is front and center and enhanced by onion, garlic, cilantro, and lime juice. It's easy to make and a great addition to your salsa repertoire.

Steps:
- Heat a dry pan to medium-hot and add the jalapeños, onion, and garlic.
- Cook until the peppers are completely blackened, about 20 minutes. Remove from the pan.
- Cut the stems off of the jalapeños and place them in your blender.
- Remove the garlic cloves from their husks and add to your blender.
- Add the onion and cilantro, 1/4 cup of water, lime juice, and 1 tsp. salt.
- Blend for 30 seconds.
- Heat 2 tbsp of cooking oil to medium-hot in the same pan that you roasted the jalapeños.
- Pour the blended salsa into the hot oil. This step is called "seasoning" the salsa.
- After 1 minute in the hot oil, reduce the heat to low and simmer for 15 minutes. This deepens and intensifies the flavor.
- After 15 minutes, take and adjust the salt if needed.

WATERMELON SALSA
Steps:
- Stir together the lime zest, lime juice, sugar and 3/4 teaspoon pepper in a bowl. Add the watermelon, cucumber, mango, jalapeno, onion and basil and toss gently. Chill the salsa until ready to serve.
- Add the garlic salt just before serving. Serve with chips.
JALAPENO-MANGO SALSA
Steps:
- Heat the vegetable oil in a small saute pan over medium-high heat. Lightly fry the jalapeno chiles, turning them in the pan until their skins are blistered, about 5 minutes. Set aside to cool. Once cooled, stem, seed and finely chop the jalapeno chiles and place them into a large mixing bowl. Add the cilantro, mangoes, lime juice and onions and season with salt and pepper. Serve immediately or store the salsa in the refrigerator in an airtight container for up to 3 days.
JALAPENO-LIME AIOLI
I use jalapeno peppers because they are not as hot as habanero chili peppers which are the hottest you can buy. They are available in yellow, orange, or red, depending on their state of ripeness. They have a wonderful flavour but are approximately 60 times hotter than jalapenos. This recipe was one which I used for a wedding reception in British Columbia, which I catered. You may recognize it from Martha Stewart's Hors D'Oeuvres Handbook.

- Place the garlic and salt in the bowl of a food processor.
- Process until pureed.
- Add the egg and egg yolk and process, scraping down the sides of the bowl to combine the ingredients thoroughly.
- With the machine running, very slowly add the canola oil,.
- a few drops at a time at first; and then in a thin steady stream; it will emulsify and thicken.
- Once the oil is added and the aioli has formed,.
- quickly pulse in the lime zest and the lime juice.
- Transfer to a bowl and stir in the peppers.
- The aioli may be refrigerated in an airtight container for up to 1 day.
