Categories     main-dish

Time 1h10m

Yield 6 servings

Number Of Ingredients 15

Three 6-ounce boneless skinless chicken breasts
4 tablespoons olive oil
2 teaspoons chili powder
1 teaspoon ground cumin
Kosher salt and freshly ground black pepper
6 jalapeno peppers, stemmed, halved and seeded
6 slices thick-cut bacon
8 ounces cream cheese, at room temperature
1 cup grated Cheddar cheese
1/2 cup sour cream
1/4 cup chicken stock
1 teaspoon sweet paprika
1/2 cup fried jalapenos, such as French's Crispy Jalapenos
1/2 cup panko breadcrumbs
2 tablespoons salted butter, melted

Steps:

  • Preheat the oven to 375 degrees F.
  • Place the chicken breasts on one half of a baking sheet, drizzle with 2 tablespoons of the olive oil and season with the chili powder, cumin and some salt and pepper. Place the jalapeno peppers on the other half of the same baking sheet. Drizzle them with the remaining 2 tablespoons olive oil.
  • On a second baking sheet, lay the bacon slices out in a single layer. Put both baking sheets into the oven and bake until the chicken is cooked through and the bacon is crispy, about 25 minutes.
  • Meanwhile, mix the cream cheese, Cheddar, sour cream, chicken stock and paprika together in a mixing bowl.
  • Transfer the bacon and chicken to a cutting board. Dice the chicken and chop the bacon. Add all of the diced chicken to the cream cheese mixture along with half of the chopped bacon. Stir together until well mixed.
  • Transfer half of the chicken mixture to an 8-inch square casserole dish. Arrange half of the roasted jalapenos on top of the chicken mixture. Top with the remaining chicken mixture followed by the rest of the roasted jalapenos.
  • In a separate bowl, mix together the fried jalapenos, breadcrumbs and the remaining bacon. Toss with the melted butter until evenly mixed. Sprinkle the top of the casserole with the breadcrumb mixture. Bake until bubbly and golden, 25 to 27 minutes.

Categories     Dinner     Main Course

Time 55m

Number Of Ingredients 12

4 chicken breasts
1 tablespoon canola or avocado oil
1 1/4 teaspoon Kosher salt
1 teaspoon black pepper
3/4 teaspoon garlic powder
1/2 teaspoon onion powder
4 slices thick-cut bacon, diced
6 jalapenos, seeded and diced
1 (8-ounce) block of cream cheese, softened
3/4 cup freshly grated Monterey Jack cheese, separated
1/2 cup freshly grated Mild Cheddar Cheese, separated
1 large egg, slightly beaten

Steps:

  • Preheat the oven to 375°F and have ready a 9x13" baking dish.
  • Place the chicken breasts in a ziptop bag (or sandwich in between two sheets of wax paper) and pound them out one at a time using a rolling pin or mallet. Begin at the thick end, and continue until the chicken is of even thickness, about a 1/2" thick.
  • Pat the chicken dry with paper towels and transfer a work surface. Drizzle the chicken with the oil and season evenly with salt, pepper, garlic powder, and onion powder. Rub all over to adhere. Set aside.
  • Place a skillet over medium-high heat and bring to temperature. Add the bacon and cook for about 6-8 minutes, stirring often. Transfer the bacon to a paper towel-lined plate.
  • Add the chicken to the skillet (taking care not to overcrowd the pan and cooking in batches as needed) and sear for 3 minutes on one, then flip, and cook 2 minutes more. Transfer the chicken to the casserole dish and set aside.
  • Add the diced jalapeños to the pan and sauté for 3 minutes, stirring often.
  • Transfer the softened jalapenos, along with the bacon to a medium-sized mixing bowl. Add the cream cheese, 1/2 cup of Monterey Jack cheese, 1/4 cup of Cheddar, and the egg. Use a handheld mixer at medium-high speed (or a whisk) to mix the ingredients.
  • Divide the mixture (about 2 large dollops) evenly over the tops of the chicken breasts. Top with the remaining 1/4 cup of Monterey Jack and 1/4 cup of Cheddar. Bake for 25 minutes, or until the chicken is completely cooked through. Serve and enjoy!

Time 1h

Yield 4

Number Of Ingredients 8

1 sleeve buttery round crackers (such as Ritz®), crushed
1 teaspoon garlic powder
salt and pepper to taste
1 cup bread crumbs
2 eggs, beaten
4 boneless, skinless chicken breasts
1 (8 ounce) package cold cream cheese, cut into thin strips
4 tablespoons finely diced jalapeno peppers

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease a 9x11-inch baking dish.
  • Combine crushed crackers, garlic powder, salt, and pepper in a bowl. Place bread crumbs in a second bowl. Pour beaten eggs into a third bowl.
  • Pound each chicken breast with a tenderizer until thin. Place two strips of cream cheese and 1 tablespoon diced jalapeno on top of each breast. Fold together and dip in egg, bread crumbs, egg, and crackers in that order. Place in the prepared baking dish and secure with toothpicks or kitchen twine.
  • Bake in the preheated oven until chicken is no longer pink in the center and the juices run clear, about 45 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

Time 45m

Yield 4 serving(s)

Number Of Ingredients 10

1 cup panko breadcrumbs
1 tablespoon oil
4 teaspoons taco seasoning
2 eggs
4 ounces cream cheese, softened
1/2 cup shredded cheddar cheese
2 jalapeno peppers, finely diced (or more!)
4 boneless skinless chicken breast halves
salt
pepper

Steps:

  • Preheat oven to 375.
  • In a small skillet over medium-high heat, combine the bread crumbs and oil. Stirring often, toast until crispy and golden brown. Transfer bread crumbs to a small bowl and mix in the taco seasoning.
  • Beat eggs in a shallow bowl or rimmed plate.
  • In a small bowl, combine cream cheese, cheddar cheese and diced jalapenos.
  • Using a small, sharp knife, either cut a pocket in each breast or butterfly them. If they're especially thick, I like to pound them a couple times with the flat side of a meat mallet to thin them out some first - too thick and it takes so long to cook through that the bread crumbs burn.
  • Season the chicken lightly with salt and pepper. Divide the cheese filling evenly between the chicken breasts; close with toothpicks if you like.
  • Dip the chicken in the beaten egg and then the bread crumb mixture, coating each piece completely. You can put them straight into the baking pan, or put a rack in the bottom of the pan first so the bottoms won't get soggy. Bake in a preheated oven 25 to 30 minutes, or until the chicken is cooked through.

Time 45m

Yield 4 serving(s)

Number Of Ingredients 13

1 (8 ounce) package cream cheese, softened
1/2 cup shredded cheddar cheese
2 jalapeno peppers, seeded and minced
4 slices bacon, cooked crisp and diced
4 (6 ounce) boneless skinless chicken breast halves
1 cup seasoned dry bread crumbs or 1 cup panko breadcrumbs
1 teaspoon garlic powder
1 teaspoon onion powder
1/2 teaspoon black pepper
2 tablespoons grated parmesan cheese
1 egg
1 teaspoon water
1/4 cup vegetable oil or 1/4 cup olive oil

Steps:

  • Combine the cream cheese, cheddar cheese, bacon, and jalapenos in a small bowl; mix well.
  • Cut a pocket horizontally through the thickest side of each chicken breast; fill with 1/4 of the cheese mixture. Secure with toothpicks. Tip: If breasts are thick, before slitting, slightly poud the thickest part of the breast side. It, also, makes for a larger pocket. Don't pound too thin.
  • Combine Panko bread crumbs, garlic powder, onion powder, pepper and Parmesan; place on a piece of waxed paper.
  • Beat egg and water in a shallow bowl.
  • Dip stuffed chicken breast in egg mixture, then into Panko mixture, coating well.
  • Heat oil in a large skillet over medium-high heat. Brown chicken breasts on both sides until golden; place on a foil lined shallow baking sheet.
  • Bake at 350 degrees in a preheated oven for about 15 minutes or until chicken is cooked through and juices run clear.
