Number Of Ingredients 19

1 pound large peeled, deveined cooked shrimp, diced
2 cups corn
1/2 red bell pepper, finely diced
1 small onion
1 jalapeno, seeded
1 cup panko bread crumbs
Dash hot sauce
1/2 teaspoon chili powder
2 eggs, beaten
Salt and freshly ground black pepper
2 tablespoons vegetable oil
Peach Jalepeno Relish, recipe follows
3 ripe peaches, diced
1/2 red onion, diced
1 jalapeno (about 1 1/2 teaspoons), seeded and diced
1/2 lime, juiced
1 tablespoon sugar
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper

Steps:

  • In a food processor, pulse shrimp. Place into a large bowl. Pulse corn, pepper, onion and jalapeno. Remove and drain through a sieve to get rid of extra water that the vegetables may release. Add to bowl along with 1 cup bread crumbs, hot sauce, chili powder and eggs. Stir well together. Form into cakes about 1-inch thick. Place in the refrigerator for 15 minutes to firm up.
  • Heat a large skillet with vegetable oil over medium heat.
  • In a shallow dish, add the remaining 1 cup of panko; add salt and pepper. Bread the cakes in the panko. Add the cakes in batches to the oil, cooking about 4 minutes per side. Remove to a paper towel lined sheet tray. Serve with relish.
  • Combine all ingredients in a small bowl. Chill until ready to serve.

1/2 cup mayonnaise
1 tablespoon reduced-sodium soy sauce
1 tablespoon ketchup
2 teaspoons Dijon mustard
1/2 teaspoon garlic powder
1/2 teaspoon hot pepper sauce, optional
1/8 teaspoon pepper
SHRIMP CORN CAKES:
1/2 cup chopped onion (about 1 small)
1 tablespoon oil plus additional for frying, divided
2 garlic cloves, minced
1/2 pound uncooked peeled and deveined shrimp, finely chopped
3/4 cup all-purpose flour
1/4 cup cornmeal
1 tablespoon cornstarch
1 teaspoon baking powder
1/4 teaspoon salt
1/4 teaspoon pepper
1 cup cream-style corn
1 cup whole kernel corn
1 large egg, lightly beaten

Steps:

  • In a small bowl, combine the first 7 ingredients. Cover and chill until serving., In a large cast-iron or heavy skillet, cook and stir onion in 1 tablespoon oil over medium-high heat until tender. Add garlic; cook 1 minute longer. Add shrimp; cook and stir until shrimp turns pink. Remove from the heat. , In a large bowl, mix the flour, cornmeal, cornstarch, baking powder, salt and pepper. In a small bowl, mix the corn, egg and shrimp mixture; stir into dry ingredients just until moistened., Wipe cast iron skillet clean with paper towels; heat 1/4 in. of oil to 375°. In batches, drop corn mixture by rounded tablespoonfuls into oil; fry until golden brown, 1-1/2 minutes on each side. Drain on paper towels. Serve with sauce.

2 jalapenos, seeded
1 scallion
1 lb medium shrimp, peeled and deveined
3/4 C frozen corn, thawed
1 egg
1 tsp salt
1/8 tsp freshly ground pepper
1 C panko bread crumbs
1-2 T canola oil
1/4 C low fat mayo
3/4 tsp sriracha
burger buns, onions, tomatoes, lettuce etc

Steps:

  • In a food processor, add jalapenos and scallion and pulse for 30 seconds. Add shrimp, corn, egg, salt and pepper, and pulse until mix is chopped and blended together. Stir in bread crumbs. Form into 5 patties, and place on foil lined plate. Place in freezer for 5 minutes. add oil to large saute pan to medium high heat. Cook until cakes are browned and crispy about 6 min total. Meanwhile make may by mixing may and hot sauce together. Serve on buns

Jalapeno-Jack Polenta Cakes With Cilantro Corn Salsa image

My submission for the 2007 Cooking Light contest. A hit with those who tried it but, sadly, did not make the cut. For the salsa, I like to roast 2 ears of corn on the cob for 15 mins in the oven, then cut the kernels off. Gives it an extra level of flavor!

2 1/2 cups water
1 cup cornmeal
1 jalapeno pepper, seeded and minced
3/4 cup monterey jack cheese, shredded
salt and pepper
1 1/2 cups plum tomatoes, seeded and diced
3/4 cup fresh corn kernels
1/4 cup scallion, sliced fine
1 garlic clove, minced
1/3 cup cilantro, minced
1 tablespoon lemon juice
salt and pepper (optional)

Steps:

  • In a medium saucepan, bring the water to a boil. Slowly add the cornmeal while stirring constantly (important to avoid lumps).
  • Reduce heat to simmer and continue to stir the mixture for 20 minutes or until the polenta is thick enough to hold a wooden spoon upright.
  • Add jalepeno, cheese, salt and pepper to polenta and stir well to combine.
  • Pour polenta in an oiled dish or pan and refrigerate until firm (about 1 hour but this will vary).
  • While polenta cools, prepare salsa by combining all ingredients in a mixing bowl. Add salt and pepper if desired.
  • Remove cooled polenta from fridge and turn out onto cutting board.
  • Cut into 8 servings and place on an oiled baking sheet. Spray with cooking spray or lighlty brush with oil.
  • Place polenta in a 400 degree oven for 20-30 minutes until golden brown.
  • Place 2 servings on each plate and top with salsa.

1 tablespoon reduced sodium soy sauce
1 tablespoon ketchup

Steps:

  • In a small bowl, combine the first seven ingredients. Cover and chill until serving.
