SHRIMP CAKES WITH PEACH JALAPENO RELISH

Steps:
- In a food processor, pulse shrimp. Place into a large bowl. Pulse corn, pepper, onion and jalapeno. Remove and drain through a sieve to get rid of extra water that the vegetables may release. Add to bowl along with 1 cup bread crumbs, hot sauce, chili powder and eggs. Stir well together. Form into cakes about 1-inch thick. Place in the refrigerator for 15 minutes to firm up.
- Heat a large skillet with vegetable oil over medium heat.
- In a shallow dish, add the remaining 1 cup of panko; add salt and pepper. Bread the cakes in the panko. Add the cakes in batches to the oil, cooking about 4 minutes per side. Remove to a paper towel lined sheet tray. Serve with relish.
- Combine all ingredients in a small bowl. Chill until ready to serve.

- In a small bowl, combine the first 7 ingredients. Cover and chill until serving., In a large cast-iron or heavy skillet, cook and stir onion in 1 tablespoon oil over medium-high heat until tender. Add garlic; cook 1 minute longer. Add shrimp; cook and stir until shrimp turns pink. Remove from the heat. , In a large bowl, mix the flour, cornmeal, cornstarch, baking powder, salt and pepper. In a small bowl, mix the corn, egg and shrimp mixture; stir into dry ingredients just until moistened., Wipe cast iron skillet clean with paper towels; heat 1/4 in. of oil to 375°. In batches, drop corn mixture by rounded tablespoonfuls into oil; fry until golden brown, 1-1/2 minutes on each side. Drain on paper towels. Serve with sauce.

JALAPENO-CORN SHRIMP CAKES WITH SRIRACHA MAYO
Steps:
- In a food processor, add jalapenos and scallion and pulse for 30 seconds. Add shrimp, corn, egg, salt and pepper, and pulse until mix is chopped and blended together. Stir in bread crumbs. Form into 5 patties, and place on foil lined plate. Place in freezer for 5 minutes. add oil to large saute pan to medium high heat. Cook until cakes are browned and crispy about 6 min total. Meanwhile make may by mixing may and hot sauce together. Serve on buns
JALAPENO-JACK POLENTA CAKES WITH CILANTRO CORN SALSA
My submission for the 2007 Cooking Light contest. A hit with those who tried it but, sadly, did not make the cut. For the salsa, I like to roast 2 ears of corn on the cob for 15 mins in the oven, then cut the kernels off. Gives it an extra level of flavor!

Steps:
- In a medium saucepan, bring the water to a boil. Slowly add the cornmeal while stirring constantly (important to avoid lumps).
- Reduce heat to simmer and continue to stir the mixture for 20 minutes or until the polenta is thick enough to hold a wooden spoon upright.
- Add jalepeno, cheese, salt and pepper to polenta and stir well to combine.
- Pour polenta in an oiled dish or pan and refrigerate until firm (about 1 hour but this will vary).
- While polenta cools, prepare salsa by combining all ingredients in a mixing bowl. Add salt and pepper if desired.
- Remove cooled polenta from fridge and turn out onto cutting board.
- Cut into 8 servings and place on an oiled baking sheet. Spray with cooking spray or lighlty brush with oil.
- Place polenta in a 400 degree oven for 20-30 minutes until golden brown.
- Place 2 servings on each plate and top with salsa.

- Bring a small saucepan of water to a boil. Add the lima beans and cook until tender. Drain and rinse under cold water.
- In a large skillet, heat 1 tablespoon of the oil. Add the onion, minced garlic and jalapeño and cook over moderate heat until softened, about 5 minutes. Transfer the onion mixture to a medium bowl and add the lima beans, chopped thyme and corn bread. Stir in the buttermilk and season with salt and pepper. Stir in the egg. Using lightly moistened hands, form the mixture into 6 cakes, about 1 inch thick. Dust the cakes with flour and refrigerate for about 30 minutes, until chilled.
- Wipe out the skillet. Melt 2 tablespoons of the butter in 2 tablespoons of the oil in the skillet. Dust the cakes with flour again. Add them to the skillet and cook over moderate heat, turning once, until golden and crisp, about 6 minutes. Transfer the cakes to plates and keep warm. Wipe out the skillet.
- Heat the remaining 1 tablespoon of oil in the skillet. Add the pancetta and cook over high heat, stirring, until lightly browned, about 1 minute. Add the sliced garlic and thyme sprigs and cook until the garlic is lightly browned, about 30 seconds. Season the shrimp with salt and add to the skillet along with the Thai chile. Cook, stirring, until the shrimp are slightly curled and pink, about 2 minutes. Add the orange juice and zest and cook until the juice is slightly reduced and the shrimp are cooked through, about 1 minute. Discard the thyme sprigs and swirl in the remaining 4 tablespoons of butter. Spoon the shrimp and sauce over the cakes and serve right away.
