JACK-O'-LANTERN STUFFED PEPPERS

Number Of Ingredients 10

Kosher salt and ground black pepper
1 cup small elbow macaroni
1 tablespoon canola oil
1 yellow onion, chopped
3 cloves garlic, finely chopped
1 pound lean ground beef
One 14-ounce can fire-roasted tomatoes, drained
1 cup heavy cream
2 cups shredded sharp Cheddar
6 orange bell peppers

Steps:

  • Preheat the oven to 350 degrees F.
  • Bring a small pot of salted water to a boil. Cook the macaroni to al dente according to the package instructions. Drain and hold until the meat mixture is ready.
  • In a cast-iron pan, heat the oil over medium heat. Add the onions and sweat until translucent, 5 to 8 minutes. Add the garlic and cook for another 1 minute. Add the ground beef, season with salt and pepper and cook until starting to brown, 3 to 5 minutes. Add the tomatoes and cook for another 2 to 3 minutes. Add the cream and cook until the mixture is reduced, about 10 minutes. Turn off the heat, add the cheese and stir until well incorporated. Stir in the cooked macaroni and season with salt and pepper.
  • Cut each pepper around the stem and remove to create a lid. Remove the seeds and, if the peppers do not sit flat, trim the bottoms slightly; just be careful not to cut a hole in the bottom of the peppers. Using the tip of a small serrated knife, cut a face like a jack-o'-lantern into the side of each pepper.
  • Fill the peppers with the beef mixture and put on a baking sheet with the lids on the side. Bake until the peppers are fork-tender, about 30 minutes.

1/2 cup mashed sweet potatoes
1/2 cup rinsed canned black beans
1/4 cup frozen corn, thawed
1 tsp. TACO BELL® Taco Seasoning Mix
1 can (16.3 oz.) refrigerated flaky biscuits
4 KRAFT Singles, quartered
1 egg
1 drop each red and yellow food coloring

Steps:

  • Heat oven to 350°F.
  • Combine first 4 ingredients.
  • Split biscuits horizontally in half. Roll out each dough piece to 4-inch round on lightly floured surface.
  • Place 8 dough rounds in single layer on baking sheet sprayed with cooking spray; top with 2 Singles pieces and potato mixture, adding about 2 Tbsp. potato mixture to each round. Lightly brush edges of dough with water.
  • Use sharp knife to cut jack-o'-lantern faces out of remaining dough rounds; place over topped dough rounds on baking sheet. Press edges together with fork to seal. Make 2 small cuts, about 1/2 inch apart, at top of each pie, then fold under dough at cuts to make pumpkin stems as shown in photo.
  • Whisk egg and food colorings until blended; brush onto tops of pies.
  • Bake 16 to 18 min. or until pies are puffed and golden brown.

1 lb ground beef
1/3 cup onion, chopped (1 1/2 ounces)
2 stalks celery, minced
1 garlic clove, minced
1/2 cup tomato sauce
2 teaspoons Splenda sugar substitute
1 tablespoon white vinegar
1 tablespoon Worcestershire sauce
1 teaspoon mustard
1/2 teaspoon salt
1/4 teaspoon pepper
2 eggs
1/2 cup mayonnaise (used light, and slightly less)
1/4 cup fat-free half-and-half
8 ounces fat-free cheddar cheese, shredded

Steps:

  • Brown the hamburger with the onion, celery and garlic; drain fat. Add the tomato sauce, Splenda, vinegar, Worcestershire sauce, mustard, salt and pepper. Mix well and let simmer, uncovered, about 10 minutes or so just to blend the flavors.
  • Put the meat mixture in the bottom of a greased (I used ICBINB) glass pie plate; mix in about half the cheese. Spread remaining cheese over the top. Beat the eggs in a small bowl and whisk in the mayo, cream. Pour custard mixture evenly over the cheese.
  • Bake at 350º for 30-35 minutes until nicely browned. Let stand 10 minutes before cutting.

We have 3 family member birthdays in a row in mid October and I make this cake for one big celebration. I'm not sure where I first saw this, I know it wasn't in a cookbook. I'd like to think I'm creative, but I probably saw it in a magazine over 30yrs ago. It makes a very large amount of cake, so it's great for any fall party or Thanksgiving dessert. Use your imagination and creativity to make the face and stem and leaves. I have also used black tinted icing for the eyes, nose and mouth. I only have 1 bundt pan, so the time consuming part is using it to make 2 cakes. It's really a good looking center piece on a holiday or theme table.

2 of your favorite bundt cake (use mixes or your own homade bundt recipes)
cooking spray
1 1/2 recipe buttercream frosting (tinted orange) or 2 cans orange frosting
1 bag of carmel candy corn

1 medium pumpkin, cleaned out
1 1/2 lbs ground beef
1/2 cup onion, chopped
1 (10 ounce) can cream of chicken soup
3 tablespoons brown sugar (optional)
3 tablespoons soy sauce
1 (4 ounce) can mushroom stems and pieces
1 1/2 cups cooked rice
1 (4 ounce) can sliced water chestnuts

Steps:

  • Paint face on pumpkin with marker.
  • Brown beef and onion. Drain.
  • Add soup, sugar, soy sauce and mushrooms and simmer 10 minute
  • Add rice and waterchestnuts.
  • Spoon into pumpkin. Replace top. Bake on cookie sheet in center of oven at 350 degrees for 1-2 hours or until inside of pumpkin is tender.
  • Serve on plate. Scoop cooked pumpkin out and serve.

Steps:

4 medium baking potatoes
2 1/2 cups sloppy joe sandwich sauce (you will find it with the chili in your grocery store)
1 cup cheddar cheese
chopped onion
sour cream
relish
chopped bell pepper

Steps:

  • Prick potatoes with a knife and rub with butter.
  • Place on a microwavable plate and cook on high for 6 minutes.
  • Spin the potatoes around in the butter and continue to cook for 6-8 more minutes, or until tender.
  • Let stand for 5 minutes in microwave.
  • Cut a slit down the center of the potatoes and press the ends to make a little well for the fillings.
  • Spoon the sloppy joe"stuff" into the potatoes and top with the cheese.
  • Microwave for 1-2 minutes or until the cheese haves melted.

Description from Bonnie Hawkins of Elkhorn, Wisconsion: "This is so much fun to do - and kids love it! You'll never have to worry about leftovers. It's even good for adult parties... but you might want to increase the heat level with a hotter salsa or seasonings." Author suggests garnishing with cilantro or parsley for a pumpkin stem. I imagine you could make this pie without cutting out the Jack-O-Lantern face on the pie crust and it would be just fine.
