WHISKEY-GLAZED SWEET POTATOES
Steps:
- Preheat the oven to 375 degrees F.
- Place the potatoes on a baking sheet and cook the potatoes whole, do not pierce. Bake for 45 minutes to 1 hour. Lightly squeeze the potatoes - if they are soft, they are done. Let cool.
- In a small saute pan over high heat, add the pecans and lightly toast. Add 4 tablespoons of butter, reduce the heat to medium, add the agave and spices, and allow to simmer for 4 to 5 minutes. Add the whiskey and continue to simmer for 5 minutes more.
- Peel the potatoes and cut into 1/2-inch slices. Butter the bottom and sides of an 8 by 8-inch baking dish. Arrange the sweet potatoes, alternating with the apples. Pour the whiskey-pecan mixture over the top and place in the oven.
- Bake for 30 minutes, basting the top with the whiskey sauce once at 15 minutes.
- Remove and serve immediately.

Steps:
- Place bacon in a large skillet and cook over medium-high heat until evenly browned, about 10 minutes. Remove bacon from skillet with slotted spoon to a plate lined with paper towel, retaining drippings in the skillet.
- Reduce heat to medium. Cook and stir onion and fennel in hot bacon drippings until golden brown, about 10 minutes. Add sweet potato, place a cover on the skillet, and cook until sweet potato is tender and slightly browned, about 10 minutes.
- Increase heat to medium-high. Pour whiskey into the skillet and bring to a boil while scraping the browned bits of food off of the bottom of the pan with a wooden spoon. Stir bacon in the vegetable mixture. Add brown sugar and stir to incorporate. Reduce heat to medium; cook and stir until the whiskey has been absorbed and the liquid is caramel-colored, about 5 minutes. Season with salt and pepper.

SWEET POTATO, BACON AND APPLE HASH
Steps:
- Preheat the oven to 400 degrees F.
- In a large bowl, add the sweet potatoes, drizzle with olive oil and sprinkle with salt, to taste. Toss to coat and arrange them on a baking sheet. Roast the sweet potatoes until they are soft but not mushy, about 10 to 15 minutes. Remove from the oven and reserve.
- Coat a large saute pan with olive oil. Add the bacon and put the pan over medium heat. When the bacon has started to get crispy and brown, add the onions, season with salt and saute until the onions are very soft and aromatic. Add the apples and the scallion whites and saute for 3 to 4 minutes. Stir in the sweet potatoes, and saute until the sweet potatoes are cooked through and starting to become crispy, about 7 to 8 minutes.
- Transfer to a serving platter and garnish with the scallion greens and pumpkin seeds.

SWEET POTATO HASH
Steps:
- In a 13-inch saute pan over medium-high heat, add the bacon and olive oil. When the oil heats and the bacon begins to sizzle, add the sweet potatoes and spread out as much as possible to allow the potatoes to rest in the pan in 1 layer. Leave the potatoes to cook until a quick toss reveals browning on the side in contact with the pan, about 5 minutes. Continue to toss and let stand until most sides of the potatoes are golden and the bacon bits are crisp, 3 to 5 minutes longer. Then add the onions, garlic, jalapenos, cumin and season with a nice pinch of salt and a grind or 2 of pepper. Cook the same way, allowing everything to sit in the heat of the pan for a minute or 2. Taste and re-season if necessary.

- Add the potatoes to a large saucepan of salted boiling water and simmer until tender. Drain and dry completely with paper towels.
- Meanwhile, heat 2 tablespoons oil in a large skillet over medium-high heat. Add the red onions, bell peppers, green onions, and garlic, and saute until tender and lightly golden, 5 to 6 minutes. Season with salt and pepper and remove to a bowl.
- Add the remaining 4 tablespoons oil to the skillet, and then add the drained and dried sweet potatoes. Cook in a single layer, stirring occasionally, on medium heat until they are tender, about 6 minutes. Increase the heat to high and cook, without stirring, until the potatoes are golden and crisp, about 2 more minutes. Sprinkle with the smoked paprika and gently stir in the onion mixture and parsley.

- Boil the sweet potatoes for 8 mins until tender, then drain. Meanwhile, heat the oil in a large ovenproof pan and cook the onion and chorizo for 5 mins until softened. Add the sweet potatoes and chickpeas and cook for 5 mins more. Roughly break the mixture up with a fork, then flatten it down lightly to form a cake. Cook for a further 8 mins, without stirring, until cooked through, crispy and golden on the bottom.
- Heat grill to high. Break the eggs onto the hash, season, then place the pan under the grill and cook for 2-3 mins until the whites are set. Sprinkle with chilli to serve.

SWEET POTATO PIE WITH JACK DANIELS - MAKES 2 PIES
Sweet Potato Pie is so much better than pumpkin pie, IMHO, LOL! In fact, if it has the same color as Pumpkin Pie it means that someone has used pumpkin pie seasonings. True Sweet Potato Pie is a bright orange, as opposed to the brownish orange hues of Pumpkin. This pie has 3 shots of Jack Daniels. I've been told that the alcohol evaporates, but I can't swear to it. So if you have problems with alcohol, or it clashes with your meds, take this into consideration. It is to die for

- Pop the sweet taters in the microwave until they are soft inside and easily pierced with a knife.
- Put them aside and allow them to cool.
- Preheat the oven to 350 degrees F.
- Put the eggs in a large bowl and beat them lightly.
- Add the Eagle Brand, the butter, the vanilla, and the salt.
- Combine well.
- By this time the potatoes should be cool enough to touch. The peel should easily come off the potatoes. (I have found this easier that peeling, cubing, and boiling.).
- Add the potatoes to the Eagle Brand liquids.
- Mash well until everything is well mixed and smooth.
- Pour into the 2 deep dish pie crusts.
- Bake 55 minutes or until a knife inserted into the middle comes up clean.
- Serve with whipped cream if desired.

SWEET POTATO HASH
I love this simple sweet potato hash. It's a bit different than regular hashes because it contains spinach and no meat. If you love spinach, you may opt to add more the the 5 ounces, it's up to you! This is a really healthy side dish. I've even made this for my main course. The hardest part of this recipe is grating the sweet potatoes, but you could even put them through the grater attachment on a food processor if you have one! It serves 2 to 4 depending on if you plan this for a side or main dish. Some people like a zing to their hash, so I included hot sauce as an optional ingredient. Enjoy!

- Grate the sweet potatoes (either with a box/hand grater or a food processor fitted with a coarse grating disc).
- Heat the olive oil in a large non-stick skillet over medium-high heat.
- Add the shallots and cook, stirring, until beginning to brown, about 2 or 3 minutes.
- Add the sweet potatoes and cook, tossing occasionally, until tender, about 7 to 9 minutes more (or longer if you like your potatoes crispier).
- Add the spinach and cook, tossing, until just wilted, about 1 or 2 minutes more.
- Note: I like to get my sweet potatoes really browned, so I may end up cooking them a bit longer before adding the spinach.

JACK DANIELS SWEET POTATO HASH

- Preheat the oven to 400 degrees. Julienne and cook the bacon in a sauté pan over medium heat until crisp. Remove the bacon, reserving the rendered fat. Peel and dice the sweet potatoes. Toss them in the rendered bacon fat, lay them flat on a non-stick cookie sheet and roast until lightly browned and cooked through, about 20 minutes.
- Peel and julienne the onion. Season with salt and pepper. Heat 2 tablespoons butter in a sauté pan over low flame. Add the onions and cook them until well caramelized, about 20 minutes. Deglaze the pan with Jack Daniels. Let the liquid simmer until it is reduced by half. Swirl in the remaining two tablespoons butter.
- Toss together the crisp bacon, roasted sweet potatoes and caramelized onion mixture. Season to taste with salt and pepper and garnish with scallions.
