- Toss 2 pounds sweet potatoes (cut into wedges) with 3 tablespoons olive oil, 1 1/2 teaspoons each brown sugar and salt, 1/4 teaspoon each cumin and chili powder, and a pinch of cayenne. Roast cut-side down on a baking sheet in a 425 oven until crisp, 30 minutes, turning once.

- Heat oven to 200C/180C fan/gas 6. Using a pestle and mortar, bash together the spices, herbs, garlic and some seasoning.
- Spoon into a large bowl and stir in the lemon zest and juice, and the oil. Add the potatoes and toss together. Arrange, skin-side down, on 2 baking trays and bake for 30-40 mins until soft inside and crisp on the outside.

- Preheat the oven to 350 degrees F.
- Put the olive oil in a large mixing bowl. Add the salt, pepper, cinnamon, ginger and 1 tablespoon of the honey and whisk to combine. Add the potatoes and toss to coat. Spread the potatoes on a baking sheet. Roast, stirring halfway though, until the potatoes are tender and the edges are crisp, 45 minutes to 1 hour.
- Meanwhile, make the glaze: Put the chili sauce, red pepper flakes, hot sauce and remaining 2 tablespoons honey in a small saucepot. Set the pot over medium-high heat and cook, stirring, until the ingredients come together, about 2 minutes.
- Pour the warm glaze over the potatoes on the baking sheet and toss to coat. Pour the glazed potatoes into a serving dish and sprinkle with the pecans and scallions. Serve warm.

- Preheat the oven to 400 degrees F (200 degrees C). Line a baking sheet with parchment paper.
- Mix chili powder, cumin, paprika, garlic powder, onion powder, sea salt, cornstarch, and cayenne pepper together in a small bowl.

- 1. Heat Oven to 400f- cover bottoms and sides of pans with foil and spray with cooking spray , Peel Potatoes and cut into wedges 1 inch thick ( I prick my potatoes a few times with point of knife, wrap in waxed paper and put in the microwave for 3 or 4 minutes for 2 potatoes, the skin will slide off and much easier to slice, ,be careful don't cook them all the way ) pour oil in a baggie, put potatoe wedges in the baggie with the oil, close baggie and toss the potatoes in the oil,

- Preheat oven to 220C/425F/Gas7.
- Slice each potato in half lengthwise and the cut each half into three thick wedges. Try and keep the wedges relatively even sized.
- In a bowl mix the oil and the seasoning.
- Add the wedges and toss until evenly coated.
- Spread the out on a non-stick baking tray and bake them for 15-20 minutes, until cooked and nicely coloured.
- Serve with your favourite dip.
