Very Quick, very simple dessert for those last minute need a dessert times. Choose firm bananas. These can be dressed and plated up to look very impressive. Serve with fruit of choice and ice cream.

- Sift dry ingredients into a medium bowl. Combine egg and buttermilk, and stir into dry ingredients, mixing until well combined. Place bananas carefully in batter. (They can rest in the batter, covered until you are ready to fry them.)

- Heat 3 inches of oil in a heavy saucepan or deep fryer to 375 degrees. Mix the eggs, milk, brown sugar, flour, and baking soda together in a medium-sized bowl. Add the banana slices a few at a time, coating them well with the batter.

- Mix the flours, baking powder, soda, salt and sugar in a bowl.
- Stir it into the mashed banana with a fork. (Add the fourth tbs of flour if mixture is too soft.).
- Heat a frying pan to medium-hot and add enough oil to coat the flat area. (Traditionally, this snack is deep-fried but I find it not all that necessary.).
- Scoop a tablespoon of the banana mixture onto the pan when the oil is heated to medium hot (a soft sizzling sound when the batter touches it). Flatten the batter slightly.
- Fry one side till medium brown and flip over to fry the other side.
- Place cooked fritters on a few layers of kitchen paper. Best served warm but cooled is good, too. :).

The bananas make these fritters only slightly sweet, you could add in sugar if desired for a sweeter taste, they go perfect with roast pork loin or roast turkey or or chicken dinner. - Spray a baking sheet with cooking spray.

- Place the flour, egg and about half the water in a bowl. Mix with a whisk for a few seconds, until the mixture is smooth. Whisk in the remainder of the water. If you are not completing the recipe immediately, refrigerate the batter until you are ready to make the fritters.
- In a large nonstick skillet, heat 1/4 cup of the oil to about 400 degrees. Meanwhile, peel the bananas and, holding them directly over the bowl containing the batter, cut them crosswise into 1/2-inch slices and let the slices fall into the batter.
- Make 3 or 4 fritters at a time, using about 1/4 cup of the batter for each and pouring it into the hot oil. Spread the mixture lightly to create disks about 3 inches in diameter. Cook for 2 to 3 minutes, turn and cook for 2 to 3 minutes on the other side, until the fritters are nicely browned.
- Remove the fritters with a slotted spoon and place them on a wire rack to drain. Continue making fritters, adding more oil as needed, until all the batter has been used. Sprinkle the drained fritters generously with sugar and serve immediately.

- Peel bananas and cut crosswise into 1 1/2-inch pieces. In a bowl cover bananas with rum. Macerate bananas at room temperature 30 minutes.
