JUAKTC CHICKEN AND NEW POTATOES (JUMP UP AND KISS THE COOK)
"What do you think of my creation?" I asked. I got a resounding kiss on the cheek from hubby! Thus was born- Jump Up and Kiss the Cook Chicken! The combination of herbs and garlic flavors the whole chicken, not just the skin. The potatoes and onions cook right along side of the chicken, so you have have flavored veggies too.

Steps:
- Preheat oven to 450 degrees.
- Wash chicken and potatoes and pat dry.
- Mix together 1/4 cup olive oil, Rosemary, Thyme, garlic, salt and pepper.
- Loosen skin from meat and gently insert herb and garlic mixture in between skin and chicken.
- Mix coating mix together and paint outside of chicken with mixture.
- Place chicken pieces in a roasting pan.
- Toss potatoes with olive oil, salt, pepper, and Caraway seeds.
- Place potatoes and onions around chicken.
- Bake uncovered for 1 hour.
- Remove from oven and cover for 10-15 minutes.
- Get ready for your kiss!

JUMP IN THE PAN CHICKEN

Steps:
- Place chicken breasts between two sheets of plastic wrap or wax paper and bash flat with a meat pounder or a rolling pin, and I mean as thin as a coin - almost breaking up.
- Tear the chicken into little rags with your fingers, and toss lightly in flour, seasoned with salt and pepper.
- Heat the olive oil and butter in a heavy bottomed frying pan, when hot, add chicken, scattering the pieces so they don't clump together. Instead of stirring, move the pan on the heat and flip chicken pieces until lightly golden, so they jump in the pan.
- Add the garlic, bay leaves, capers, sea salt, and pepper. Remove the pan from the heat and add the white wine, return to a high heat. Let the wine bubble away, again jiggling the pan like crazy.
- When there is only a little wine left, add lemon juice and parsley, jiggle the pan until the sauce comes together and looks creamy. Taste and adjust if needed then Serve immediately.

ALMOND JOY MACAROONS
I got this from the Cuisine at Home Holiday Cookbook. These are delicious! A moist coconut dough is wrapped around an almond hershey kiss. The cookie is chewy on the outside with a chocolate almond surprise inside. It's almost a cross between a cookie and a candy. Mmmmmm.

- Preheat oven to 350 degrees.
- Line two baking sheets with parchment paper.
- Mince 1 1/2 cups of coconut in a food processor and transfer to a bowl.
- Add remaining ingredients, EXCEPT kisses.
- Mix gently with your hands until combined.
- Chill dough at least 1 hour (but no more than 24).
- Shape a heaping tablespoon of dough around a kiss. Make sure it is enclosed completely. (This takes a little practice).
- Place 1 inch apart on lined baking sheet.
- Bake until firm and deep golden on the bottom and light golden on the top--about 16-18 minutes.
- Cool on pan for 5 minutes and transfer to cooling rack.
- These are a little sticky so I keep them in mini muffin papers or paper bonbon cups.
IT'S GOOD -BUT DON'T JUAKTC (JUMP UP AND KISS THE COOK)
While my husband was a student, he was bored one day and tuned into a cooking channel. They were demonstrating how to prepare a low fat version of the "Bloomin' Onion" served at Outback Steakhouse and Chilies. When I came home from work, he had this neat little appetizer all prepared. It was so tasty. The only draw back is (as you well know from eating onions) you don't want to jump up and kiss the cook!

Steps:
- Preheat oven to 375 degrees F.
- To prepare onion (you are going to create an onion much like the appetizers served at many restaraunts) Slice bottom off onion, so it will stand flat.
- Going around onion, cut 20- 30 slits, starting your cut in the center of the onion.
- Don't cut all the way through, your slits should resemble petals from a flower.
- Set aside.
- Mix bread crumbs, garlic powder,paprika, and set aside.
- Mix together egg whites in a medium bowl and dip onion in to coat.
- On a small plate, coat onion dipped in egg white with bread crumb mixture.
- Spray lightly with cooking spray.
- Place on a cookie sheet coated lightly with cooking spray and bake 40-50 minutes until onion is tender.
- While onion is cooking, prepare spicy dipping sauce.
- Place cottage cheese, mayonaise,horse radish, cayenne pepper, and salt and pepper in a blender.
- Blend until smooth.
- Dip onion petals into sauce and enjoy!
