BABY TEETHING COOKIES

I clipped this from the newspaper to pass along to my daughter for my teething grandson. I thought I'd post it here for other "teethers". Sounds fairly healthy. Prep time does not include refrigeration time. Cooking time does not include the "oven cooling".

Yield 6 dozen cookies

Number Of Ingredients 10

2 1/2 cups flour
1/2 cup nonfat dry milk powder
1/2 cup wheat germ
1 1/2 teaspoons baking powder
1 teaspoon cinnamon
1 pinch salt
3/4 cup sugar
3/4 cup oil
1 egg
1/2 cup frozen orange juice concentrate, thawed

Steps:

  • Combine flour, dry milk, wheat germ, baking powder, cinnamon and salt in a large bowl.
  • Beat sugar and oil together in another bowl. Beat in the egg and orange juice at high speed, beating for 1 minute.
  • Slowly add the flour mixture to make a stiff dough.
  • Refrigerate for 1-2 hours.
  • Preheat oven to 375*. When ready to bake, place dough on a lightly greased cookie sheet and flatten. Roll the dough out to within 1" of the pan's edge.
  • Cut the dough into 2" x 3/4" bars (no need to separate).
  • Bake for 15 minutes, or until golden brown.
  • Remove from oven, and re-cut along the same bar lines.
  • Return to the oven, turn off the heat, and let sit in the oven until the oven is cool (this will crisp up the cookies).

In Italian, these cookies are called Ossi Dei Morti or bones of the dead. They are hard cookies, but they are used for teething babies. Adults like to dip them in cappuccino.

3 eggs
2 cups confectioners' sugar
2 cups all-purpose flour
1 teaspoon baking powder

Steps:

  • In a medium bowl, whip the eggs and sugar with an electric mixer at high speed. Mix for 6 to 10 minutes, until mixture is thick and pale. Combine the flour and baking powder together. Gradually add the flour to the egg mixture. If the dough is still sticky, you can add more flour.
  • On a lightly floured surface, roll the dough into long log shapes, about 1 1/2 inches in diameter, and as long as your cookie sheet. Cover with a clean towel, and let them sit out overnight.
  • Preheat oven to 375 degrees F (190 degrees C). Remove the rolls of dough from the cookie sheets and place them on a lightly floured surface. Cut into 1 1/2 inch long pieces. And return them to the baking sheets.
  • Bake for 15 to 20 minutes in the preheated oven, until they are a light brown. Remove from baking sheets to cool on wire racks. These cookies can be stored for a month in an airtight container.

This makes about 12 teething cookies for your little one. And they have very few crumbs. Cooking time does not include sitting time.

2 eggs
1 cup sugar (white or brown)
2 -2 1/2 cups flour (white, whole wheat or a comb.)

Steps:

  • In a bowl stir eggs until creamy.
  • Then add in sugar and mix well.
  • Then add in flour just until the dough is stiff and easy to handle.
  • Roll into a 3/4 inch thickness and cut in round shapes (you can even use cookie cutters to create some fun shapes).
  • Put on a cookies sheet and let sit overnight or for 10 hours.
  • Put in the oven and bake at 325 until they are browned and hard to the touch.
