HOT AND SWEET ITALIAN SAUSAGES IN TOMATO SAUCE

Steps:
- In a large saute pan or pot, cook the sausage over medium-high heat until the fat is rendered and the sausages start to brown, about 5 minutes. Remove with a slotted spoon and drain on paper towels. Remove all but 2 tablespoons of fat from the pan.
- To the fat remaining in the pan, add the onions and garlic and cook, stirring, over medium-high heat until soft, about 3 minutes. Add the fennel seeds, salt, and red pepper, and cook, stirring, until fragrant, 20 to 30 seconds. Add the tomatoes and their juice, the tomato paste, oregano, and cooked sausage and cook, stirring, until thick and fragrant, 20 to 25 minutes. Remove from the heat and adjust the seasoning, to taste.
- Meanwhile, in a pot of salted water, cook the pasta until al dente. Drain and toss in the pot with the sauce. Stir in the ricotta salata and basil. Serve immediately and garnish with Parmesan cheese at the table.
ITALIAN SAUSAGE TOMATO SAUCE RECIPE
This Italian Sausage Tomato Sauce is loaded with tomatoes and spices. It's great over zucchini noodles, pasta, mashed potatoes, and even on its own.

- In a saucepan, heat 2 tablespoons of the olive oil over medium heat.
- Add the onions, and cook 4-5 minutes until they are soft and golden.
- Add the bell peppers, garlic, bay leaf, crushed red pepper, dried parsley, salt, and black pepper.
- Cook everything for about 3 minutes. Remove the bay leaf, and set aside.
- Add the 2 cans of whole tomatoes including the juice. With a hand blender, crush the tomatoes. Be careful not to blend the tomatoes too much. You should leave a few chunks of tomatoes in the sauce.
- Add the brown sugar and water. Cook for more 3 minutes.
- Return the bay leaf to the pan.
- Add the pesto, and cover the pan. Once it boils, lower the heat to maintain a low simmer.
- Don't forget to stir occasionally.
- Meanwhile in a skillet, heat the remaining 1 tablespoon of olive oil.
- Add the Italian sausages, and sauté until they become brown on the outside but still raw inside.
- Cut the Italian sausages into three pieces each, and add to the tomato sauce. Cook on low heat for about 1½ hours. You can also cook the sauce for longer (3-4 hours) if you have the time.
- Before serving, remove the bay leaf. Serve it over spaghetti or zucchini noodles.

Steps:
- Prick through the skin of the sausages in several spots using a fork.
- Put the sausages in a saucepan, cover them with water then bring to a boil.
- Cover and simmer 5 min.
- Take the sausages out of the water, pat them dry, then cut each sausage into 3 or 4 pieces.
- Heat the oil in a sauté pan over medium-low heat.
- Add the garlic and rosemary sprig, then sauté until the oil becomes perfumed with the garlic and rosemary aroma, 3 to 4 min.
- Pay attention not to let them burn.
- Add the sausages, then sauté until they become lightly coloured, 2 to 3 min.
- Turn them a few times while cooking.
- Add the tomato sauce then cook 8-10 min over medium heat, tossing occasionally.
- Season with salt and pepper to taste.
- Serve.

- Remove sausage and let cool.

- Heat the oil in a large pot over medium-high heat. Add the garlic, sausages and onions and cook until lightly brown.
- Add the crushed San Marzano tomatoes and 1/2 can water, bring to a simmer. Add the tomato puree, 1/2 can of water and simmer again. Repeat with the tomato sauce, again adding 1/2 can of water and bring the sauce to a simmer. Add the tomato paste and cook through.

- Heat oil in heavy large pot over medium-high heat. Add shallots and garlic and sauté until beginning to soften, about 3 minutes. Add sausages and sauté until no longer pink, breaking up with back of fork, about 5 minutes. Add cream; simmer 5 minutes. Add tomatoes with juices, sage and crushed red pepper. - Lightly coat bottom of a large 8 quart stock pot with Olive oil(roughly 3-4 Tbs.) Starting with a higher heat,heat oil and add onions. Stir to coat and cook 1-2 minutes. Add garlic and cook till all are soft not browning. Add two cans of crushed tomatoes. Lower heat just a bit to avoid splatting. With your hands crush the whole tomatoes into smaller pieces in a large bowl, leaving some larger pieces.(this adds the love) Add to pot. Stir and cook 1-2 minutes. Add 2 cans of tomato sauce. Use water to rinse out large cans and add the tomato paste to the water in the large can and stir to dissolve. Add to the pot and stir well. Add basil, oregano and sugar, salt and pepper. Bring back to a bubble and lower heat and simmer.
- Bake 2-3 lbs. Sweet Italian Sausage in a 350 degree oven for 45 minutes. Add to sauce.
- Do not clean the pan.
- Make My Italian Meatballs #105179 then add to pan from sausage to bake. Add to sauce and continue to simmer 1-2 hours.
- Serve over your favorite pasta. Enjoy!
