GRILLED SHRIMP SKEWERS WITH TOMATO, GARLIC & HERBS



Grilled Shrimp Skewers with Tomato, Garlic & Herbs image

Shrimp marinated in a mix of olive oil, tomato paste, lemon, garlic & herbs and then grilled until slightly charred.

2½ tablespoons tomato paste
6 tablespoons extra virgin olive oil
2 tablespoons fresh lemon juice
1 large shallot, roughly chopped
4 large cloves garlic, roughly chopped
¼ cup fresh basil leaves, chopped
1 tablespoon fresh thyme leaves (or 1 teaspoon dried)
¼ teaspoon red pepper flakes
1½ teaspoons sugar
1 teaspoon salt
2 pounds jumbo shrimp (21-25 per pound), peeled and de-veined (leave tails on if desired), thawed if frozen

Steps:

  • To make the marinade, combine all of the ingredients except for the shrimp in a mini food processor or blender; blend until the mixture forms a smooth paste.
  • Combine the shrimp and the marinade in a medium bowl and stir until shrimp are evenly coated. Let marinate at room temperature for 30 minutes - 1 hour.
  • Preheat the grill to medium-high heat. Meanwhile, thread the shrimp onto skewers (going through the top and bottom of each shrimp). Lightly dip a wad of paper towels in vegetable oil and, using tongs, carefully rub over grates several times until glossy and coated. Grill the shrimp skewers about 1½ minutes per side. Be sure not to overcook! Serve hot, room temperature or cold.
  • *If you're entertaining and want to get everything done ahead of time, you can thread the shrimp onto the skewers right after mixing with the marinade.

12 sprigs rosemary (6 inches long)
1/4 cup fresh lemon juice
3 tablespoons olive or vegetable oil
1/2 teaspoon salt
1/2 teaspoon pepper
24 fresh large basil leaves
24 deveined peeled large shrimp (1 1/2 lb)
12 small pattypan squash, cut in half
24 cherry tomatoes
24 large cloves garlic

Steps:

  • Strip leaves from rosemary sprigs, leaving 1 inch of leaves at top; set aside. Measure 1 tablespoon rosemary leaves; chop. In small bowl, mix chopped rosemary leaves and remaining marinade ingredients.
  • Wrap basil leaf around each shrimp. For each kabob, thread shrimp, squash half, tomato and garlic clove alternately on stem of rosemary sprig, leaving 1/4-inch space between each piece. (Start threading at stem end, pulling through to leaves at top.)
  • In ungreased 13x9-inch (3-quart) glass baking dish, place kabobs. Pour marinade over kabobs. Cover and refrigerate 20 minutes. Heat gas or charcoal grill. Remove kabobs from marinade; reserve marinade. Place kabobs on grill. Cover grill; cook over medium heat about 12 minutes, turning and brushing with marinade 2 or 3 times, until shrimp are pink. Discard any remaining marinade.

Chef John's Grilled Garlic and Herb Shrimp image

This grilled garlic and herb shrimp recipe is very easy, IF you can just walk out into the backyard, and pick a handful of your own fresh, green sprigs. However, these are so amazingly delicious, if you don't have a garden, then do splurge and buy a bunch of all the herbs. And get the extra large shrimp so they can grill longer and get maximum caramelization.

1 ½ teaspoons kosher salt
½ teaspoon lemon zest
3 cloves garlic, thinly sliced
3 tablespoons chopped fresh basil leaves
3 tablespoons chopped fresh flat-leaf parsley
1 tablespoon chopped fresh oregano leaves
1 tablespoon chopped fresh lemon thyme leaves
4 tablespoons olive oil, divided, or as needed
2 pounds extra large shrimp (16-20), peeled and deveined, tail left on
skewers
1 tablespoon olive oil
½ lemon, juiced
½ teaspoon red pepper flakes
1 pinch cayenne pepper
salt and ground black pepper to taste
1 lemon, cut into wedges

Steps:

  • Place salt, lemon zest, and 3 cloves garlic in bowl of a mortar and pestle. Pound with the pestle until mixture begins to form a paste, about 2 minutes. Add chopped basil, parsley, oregano, and thyme and pound with pestle until mixture begin to come together, about 5 minutes.
  • Drizzle about 1 tablespoon of the olive oil into herb mixture. Grind together until mixture begins to form a sauce for marinating, about 1 minute. Pour in the remaining 3 tablespoons olive oil. Stir mixture with a spoon until mixture is thoroughly combined, adding additional olive oil as needed. Mixture should be fairly thick but pourable.
  • Place shrimp in a large bowl and mix in about 2/3 of the sauce, reserving 1/3 for serving. Stir until shrimp are evenly coated with the sauce, about 2 minutes. Transfer shrimp to a resealable plastic bag. Refrigerate 2 to 3 hours. Cover and refrigerate remaining sauce.
  • Preheat an outdoor grill for high heat and lightly oil the grate.
  • Thread shrimp onto skewers (pierce each twice, once through large part of shrimp, once through small part). Place skewers on hot grill. Cook on each side until shrimp are bright pink and opaque and exterior is beginning to caramelize, 2 to 3 minutes per side. Transfer skewers to serving platter.
  • Pour remaining sauce into mixing bowl. Whisk in 1 tablespoon olive oil, lemon juice, red pepper flakes, cayenne pepper, salt and black pepper. Spoon sauce over shrimp. Serve with lemon wedges.

These are very easy to make and great as an appetizer or served with salad or a rice dish for a backyard BBQ! I like to add Essence or Creole Seasoning and Poblano or Jalapeno Pepper to the skewers to give them a little extra Zing!

1/4 cup Italian dressing (zesty or regular)
1/4 cup white wine
1/4 cup extra virgin olive oil
2 tablespoons lemon juice
1 teaspoon lemon pepper
1 teaspoon garlic powder or 1 fresh garlic clove, crushed
1 dash dried cilantro
salt and pepper
1 lb large shrimp (tails on)
1 yellow squash
1 zucchini
1 red bell peppers or 1 green bell pepper
Emeril's Original Essence or creole spices
1 large poblano peppers (optional) or 1 large jalapeno pepper (optional)

Steps:

  • You can use tomato, onion or other vegetables also.
  • Mix the marinade in a ziploc bag, add shrimp, shake to coat.
  • Place in refrigerator for 1 hour.
  • Soak the skewers in salt water to soften so they will not burn.
  • Cut up the vegetables into large enough pieces to place on skewers.
  • Remove shrimp from bag.
  • Place left over marinade into a bowl for brushing on kabobs as they grill.
  • Alternate adding vegetables and shrimp to skewers.
  • Place kabobs on cooking sheet.
  • Sprinkle with Essence or a dash of cayenne pepper or creole spices to add zing.
  • Place Kabobs on the grill away from fire (we use mesquite to add smokie flavor).
  • Brush Shrimp and Vegies with leftover Marinade as they cook.
  • Cook until vegies are tender, approximately 3-5 minutes per side.
  • Serve immediately!
  • Great with salad or rice dishes.

1/3 cup lemon juice
1 tablespoon sugar
1 teaspoon dried thyme leaves
3/4 teaspoon salt

1/2 teaspoon garlic, finely chopped
1 teaspoon hot pepper sauce
1 lb skinless chicken breast half, cut into about 32 (or sirloin roast)
8 small mushrooms
8 cherry tomatoes
1 green bell pepper, cut into 8 (1-inch)
1 summer squash, cut into 8 (1-inch)
4 (12 inch) metal skewers

Steps:

  • Combine all marinade ingredients in large plastic resealable food bag; add chicken pieces. Tightly seal bag. Turn bag to coat chicken well. Place into 13x9-inch pan. Refrigerate, turning occasionally, at least 3 hours. Drain; reserve marinade.
  • Heat one-side of gas grill on medium or charcoal grill until coals are ash white. Place coals in charcoal grill to one-side. Make aluminum foil drip pan; place opposite heat.
  • To assemble kabobs, alternately thread chicken, mushrooms, tomatoes, bell pepper and squash onto skewers. Brush kabobs with marinade. Place kabobs on grill over drip pan. Grill, turning and basting occasionally, until chicken is fork tender (15 to 20 minutes).

2 lbs shrimp, peeled and deveined,leaving tails on
1/4 cup olive oil
2 tablespoons vegetable oil
1 1/2 cups dry breadcrumbs
1 clove garlic, pressed or finely minced
2 teaspoons dried parsley flakes
1 teaspoon dried basil leaves
salt & pepper

Steps:

  • Place skewers in water and let them soak at least 20 minutes or until you are ready to use them.
  • Rinse and dry shrimp.
  • Put both oils in resealable plastic bag; add shrimp and toss to coat them with oil.
  • Add bread crumbs, garlic, parsley, basil, salt and pepper.
  • Toss shrimp to give them a coating of dry mixture.
