2 Italian turkey sausage links (4 ounces each)
1/4 cup reduced-sodium chicken broth
1/3 cup thinly sliced onion
2 teaspoons olive oil
1/3 cup julienned sweet red pepper
Dash pepper
1 garlic clove, minced
2 teaspoons balsamic vinegar
2 Italian rolls or submarine buns, split
1/4 cup pizza sauce
1 slice provolone cheese, halved (3/4 ounce)

Steps:

  • In a small nonstick skillet, brown sausages on all sides over medium heat. Add broth; cover and simmer for 10 minutes. Remove sausages and keep warm; discard broth. , In the same pan, saute onion in oil until crisp-tender. Add red pepper and pepper; cook until red pepper is crisp-tender. Add garlic; cook 1 minute longer. Stir in vinegar and sausages; heat through. , Spread rolls with pizza sauce; top with the sausage, cheese and onion mixture. Broil 4-6 in. from the heat for 2-3 minutes or until cheese is melted.

I've always made this with sweet Italian sausage, but have recently started doing it with Polish kielbasa as well. The directions are for Italian sausage and works just fine for either hot or sweet sausage; the Polish sausage doesn't require parboiling unless you just want to do so to reduce fat.

4 -6 italian sweet sausage or 4 -6 hot Italian sausages
1 1/4 cups dry white wine or 1 1/4 cups water, divided
2 -4 teaspoons extra virgin olive oil, divided
2 large onions, thinly sliced,lengthwise
2 -3 cloves garlic, minced
3 -4 large red bell peppers or 3 -4 large green bell peppers, seeded and thinly sliced
salt & freshly ground black pepper
4 -6 large crusty French rolls, split and warmed in oven
4 -12 slices provolone cheese, 1 to 2 slices per sandwich (desirable) (optional)
1 -2 cup fairly spicy marinara sauce (if not spicy, simmer with garlic and red pepper flakes or cayenne pepper to taste)

Steps:

  • Poke the sausages all over with a fork, and place in a large lidded skillet with 1-2 Tsp extra virgin olive oil and 1 cup white wine or water, turn on heat to medium, and partially cover.
  • When pan begins to boil, turn sausages, and continue to simmer, turning several more times.
  • When liquid has evaporated, uncover, and continue cooking until sausages have browned to your taste.
  • Remove sausages from pan, and set on paper towels to drain.
  • Drain all grease from skillet, but do not wash or rinse it.
  • Add 1-2 Tsp more extra virgin olive oil to pan, and place on medium heat.
  • Add onions, and garlic, and season to taste with salt and pepper.
  • Moisture from the onions should be enough to deglaze the pan, but you can add 1/4 cup white wine or water, if desired, to help with the job.
  • Stir the onions, scraping the bottom to pick up and dissolve browned bits from the sausage.
  • Continue cooking and tossing until onions are almost translucent.
  • Add peppers, and toss to combine with onions.
  • Turn up heat to medium-high, and continue to toss and cook until peppers are crisp-tender or to your taste.
  • Bury the sausage in the vegetables to reheat if necessary.
  • I usually serve on crusty French rolls or Bolillos, crusty Mexican rolls that have been heated in the oven.
  • Either one is better than your typical hoagie roll.
  • I split the warmed roll, brush on a little marinara sauce, split the sausages lengthwise, and pile on the onions and peppers.
  • If desired, line the roll with a slice of provolone and/or place one on top of the sausage and veggies.

5 pounds Italian sausage links
2 (28 ounce) cans whole peeled tomatoes
1 (28 ounce) can crushed tomatoes
1 (29 ounce) can tomato sauce
¼ cup grated Parmesan cheese
1 tablespoon garlic powder
1 tablespoon Italian seasoning
1 tablespoon white sugar
1 tablespoon onion powder
4 large green bell peppers, thickly sliced
3 large onions, thickly sliced
25 (6 inch) Italian-style hoagie buns

Steps:

  • Cut the sausages apart into individual links if necessary, place the sausage links into a large skillet over medium heat, and brown them on all sides. Set the sausages aside, reserving the pan drippings.
  • Pour the whole tomatoes, crushed tomatoes, and tomato sauce into a large saucepan with a lid; stir in the grated Parmesan cheese, garlic powder, Italian seasoning, sugar, and onion powder. Bring the mixture to a boil; add the cooked sausages, pan drippings, green peppers, and onions. Reduce heat to low, cover, and simmer until the vegetables are very tender and the sauce has thickened, about 6 hours. Serve on Italian hoagie buns.

3/4 lb bulk Italian sausage (hot or mild)
1 1/2 cups spaghetti sauce (from a jar)
1/2 cup sliced pitted ripe olives (black or green)
1 red onion, sliced in half rings
1/2 sweet red pepper, sliced in strips
4 French rolls
4 slices mozzarella cheese (approx 6 ounces)

Steps:

  • Preheat the oven to 375°F.
  • In a skillet brown sausage.
  • Drain off the fat, stir in the sauce and olives, heat through.
  • Split rolls lengthwise without cutting through opposite side.
  • Hollow out buns slightly, halve cheese slices lengthwise.
  • Place a piece of cheese on bottom half of each roll.
  • Divide meat mixture evenly among the 4 rolls, top with onion and sweet peppers.
  • Place another cheese slice on top and close the rolls.
  • Wrap each sandwich in foil and seal, place on a baking sheet and bake the wrapped sandwiches in the oven for approx 15 minutes.

4 large green peppers, thinly sliced
1/2 cup chopped onion
1 can (12 ounces) tomato paste
1 can (15 ounces) tomato sauce

3/4 pound sweet Italian sausage
3/4 pound hot Italian sausage
2 tablespoons extra virgin olive oil, 2 turns of the pan
2 large cloves garlic, crushed
1 large onion, thinly sliced
2 cubanelle peppers (light green mild Italian peppers), seeded and thinly sliced
1 red bell pepper, seeded and thinly sliced
Salt and pepper
2 or 3 jarred hot cherry peppers, banana peppers or pepperoncini, finely chopped
3 tablespoons hot pepper juice, from the jar
4 crusty, semolina submarine sandwich rolls, 8 inches, sesame seeded or plain
1 tablespoon extra-virgin olive oil
3 tablespoons butter
1 large clove garlic
1 1/2 teaspoons dried Italian seasoning, 1/2 a handful or 1/2 teaspoons each oregano, thyme, parsley

Steps:

  • Place the sausages in a large nonstick skillet. Pierce the casings with a fork. Add 1-inch water to the pan. Bring liquid to a boil. Cover sausages, reduce heat and simmer 10 minutes.
  • Heat a second skillet over medium high heat. Add oil, 2 turns of the pan. Add garlic, onion, cubanelle and red peppers. Season vegetables with salt and pepper.
  • Drain sausages and return pan to stove, raising heat back to medium high. Add a drizzle of oil to the skillet, brown and crisp the casings. Remove sausages, slice into 2 inch pieces on an angle and set pieces back into the pan to sear.
  • Split and toast the bread under broiler. Melt oil, butter together in small pan over medium heat. Add garlic and let it sizzle 1 or 2 minutes. Brush rolls with garlic butter and sprinkle with a little dried Italian seasoning blend.
  • Combine the cooked peppers and onions to the sausages. Add hot peppers and hot pepper juice to the skillet. Toss and turn the sausage, peppers and onions, picking up all the drippings from the pan. Pile the meat and peppers into the garlic sub rolls and serve.

4 (4 ounce) links hot Italian sausage
1 red bell pepper, halved and seeded
1 small onion, peeled and cut in half crosswise
2 teaspoons olive oil
salt and pepper to taste
1 tablespoon olive oil
4 (6 inch) sandwich rolls, split and toasted

Steps:

  • Preheat an outdoor grill for medium heat. Lightly oil grate, and set 4 inches from the heat.
  • Pierce the sausages in a few places with a fork, and set aside. Slice off the bottoms of the onion halves so they will sit flat on the grill. Brush the bell pepper and onion halves with 2 teaspoons of olive oil.

To serve, place sausages in sandwich rolls, and top with the pepper and onion mixture.

2 large loaves Italian bread sliced lengthwise
Recipe for Homemade Red Sauce in Less Then 40 Minutes!
10 sausage links
1 pound pepper jack cheese sliced

Steps:

  • Preheat oven to 350 degrees
  • Prepare the Homemade Red Sauce in Less Then 40 Minutes! as directed.
  • Place 10 Italian sausage links on a cookie sheet.
  • Bake for 30 minutes turning once until cooked though and brown on both sides.
  • Slice sausages lengthwise and across for 4 pieces per link.
  • Slice pepper jack into thick slices.
  • Slice Italian bread loaves lengthwise.
  • Sauce the insides of both halves of the bread and lay them side by side on a large cookie sheet.
  • Lay the cheese slices on the sauce on the bread half that will be the sandwich top.
  • Place the sausage link pieces on top of the sauce on the bread half that will be the bottom of the sandwich.
  • Carefully place the top of the sandwich on top of the bottom.
  • Cover the sandwiches on the cookie sheet tightly with foil.
  • Bake for 15-20 minutes until the cheese melts.
  • Using a bread knife, slice into sandwich size pieces and serve.
  • Enjoy!

1 teaspoon olive oil
1 onion, peeled and cubed into 1-inch squares
1/2 green bell pepper, seeded and cubed into 1-inch squares

2 italian hoagie rolls (6-inch rolls)
2 ounces provolone cheese, sliced

Steps:

  • Preheat oven to 375°F Place one rack in center of oven, the other on the top shelf for broiling. Spray an 8x8 pan with non-stick cooking spray. Bake sausage on the center rack for 20-25 minutes till cooked thru, turning once.
  • Meanwhile, using a medium pot, heat olive oil over medium heat. Add peppers and onions, reduce heat to low and cover. Simmer for 10-15 minutes or until peppers are just soft, stirring occasionally.

  • Create aluminum foil 'boats' around each opened sub roll and place on a baking sheet (keeping them intact and also in a boat shape to hold in the filling). Remove sausages from oven, and place the 'boats' into the oven to lightly toast (watch for burning!).
  • Place the links on a cutting board and using tongs (the sausage will be hot), steady the links and cut into 1/2" slices (or you can slice lengthwise) and add to the pot of sauce, stirring to coat.
  • When buns are toasted, remove from oven keeping the buns on the baking sheet, place the sausage mixture (reserving about 2 tbsp sauce only) on the bottom half of the bread. Top sausage mixture with provolone. To the top half, spread thinly the remaining sauce and then sprinkle generously with the mozerella cheese.
  • Return subs to top rack of oven and broil for 1-2 minutes till cheese is melted and bubbly. Allow to cool slightly before serving. Using the foil boats to keep the sandwich together. Just pull down from one side and dive in!

1 package Johnsonville Naturals Mild Italian Sausage
1 green pepper, (thinly sliced)
1 red pepper, (thinly sliced)
2 sweet onions, (thinly sliced)
2 cloves garlic, (minced)
1 tablespoon tomato paste
1 (14.5-ounce) can diced tomatoes
1/2 teaspoon salt
1/2 teaspoon dried oregano
1/2 teaspoon dried basil
1/4 teaspoon black pepper
1/4 teaspoon red pepper flakes

Steps:

  • Add vegetable oil to a large pan and heat over medium-high heat. Add sausages and cook until browned on all sides. Remove sausage from pan and set aside (Note: You do not need to cook it through at this point.)
  • Add onion and peppers to grease left in pan and cook over medium heat until softened. Add garlic and cook for 1 minute.
  • Slice sausage into 1 to 1 1/2-inch pieces.
  • Return sausage to pan along with all other ingredients.
  • Cook for 5 to 10 minutes, until sausage is cooked through and sauce is thickened.
  • Serve on hoagie rolls if desired.

When I first made this, my husband, who grew up in Chicago, said it reminded him of the subs he used to get at Portillo's growing up. It is a tasty Italian sausage, topped with a medley of sauteed peppers, onions, garlic & Italian spices. It is then fnished off with a melting of mozzarella on top and all placed in a warm toasted bun.

4 Italian sausage hot or mild
6 ounce Roasted red bell peppers sliced
1/2 Onion sliced
1 clove Garlic minced
1 tablespoon Olive oil
1 teaspoon Dried basil

14 1/2 ounce Diced tomatoes
1 cup Mozzarella shredded
4 Hoagie buns

Steps:

  • Par-boil your sausages until cooked throughout. Finish them off on a grill or saute in a pan for another 5-10 minutes. Set aside and cover to keep warm. Place oil in a saute pan and grill onions until soft and tender. Add the red pepper, garlic and spices and saute for another 2 to 3 minutes. Add the diced tomatoes & simmer on low for 10 minutes to marinate flavors. Lightly broil hoagie buns, just until slightly toasted. Remove from oven. Add Italian sausage, then some of tomato mixture to each hoagie roll. Sprinkle mozzarella over each sub sandwich & then broil for another 1-2 minutes, or just long enough to melt the cheese. Enjoy !

1/2 lb Italian sausage
1/2 lb ground beef
1 tsp garlic salt
1/4 tsp red pepper flakes
1/2 onion (diced)
1/2 green pepper (diced)
14 oz pizza sauce
2 loaves french bread (sliced in half horizontally & vertically)
1 cup Mozzarella cheese (grated)
2-4 tbsp butter (softened)
2 tsp garlic salt

Steps:

  • If sausage has casings remove them and crumble into pan with the ground beef. Brown both meats together until no longer pink. Drain fat.
  • And pepper & onion
  • add garlic salt, red pepper flakes & pizza sauce.
  • stir to combine and heat for 5 min
  • Preheat oven to 400 F. Cut the split French loaf into 2 separate sandwiches. Repeat with second loaf.
  • Pull a small amount of bread out of the bottom and top of the loaf to make a bowl for the meat.
  • Fill the bowl with meat mixture.
  • Cover the meat mixture with shredded Mozzarella cheese.
  • Place the top of loaf onto the sandwich
  • Lay out foil for each sandwich and spray with non-stick spray. Lay sandwich on foil and wrap. Bake for 10 minutes in the oven
  • Open foil up and brush with butter and sprinkle with garlic salt. Bake 5 min more with the foil packet open
  • Remove from foil packets and serve
