1/2 cup chopped onion
1 cup sliced mushrooms
1 large red bell pepper, seeded, cut into 1-inch pieces
1 3/4 cups milk
1 cup hot water
1 box Hamburger Helper™ four cheese lasagna
2 teaspoons balsamic vinegar
1 cup shredded mozzarella cheese (4 oz)

Steps:

  • In 12-inch nonstick skillet, cook sausage and onion over medium heat 5 to 7 minutes, stirring occasionally, until some pink remains. Stir in mushrooms and bell pepper; continue cooking until sausage is no longer pink. Add milk, hot water and sauce mix (from Hamburger Helper™ box); stir to combine. Stir in uncooked pasta (from Hamburger Helper™ box). Heat to boiling, stirring occasionally. Reduce heat; cover and simmer 9 to 11 minutes, stirring occasionally, until pasta is tender and sauce is thick. Stir in vinegar.
  • Top with cheese; cover and let stand 2 to 3 minutes or until cheese is melted.

3 tablespoons chopped fresh parsley

16 ounces whole tomatoes, undrained
15 ounces tomato sauce
12 uncooked lasagna noodles
15 ounces ricotta cheese or 15 ounces small-curd cream-style cottage cheese
1/4 cup grated fresh parmesan cheese
1 tablespoon chopped fresh oregano or 1 1/2 teaspoons dried oregano leaves
2 cups shredded mozzarella cheese
1/4 cup grated fresh parmesan cheese

Steps:

  • Cook sausage, onion, and garlic in 10" skillet over medium heat. Stir occasionally until no longer pink and drain.
  • Stir in 2 tablespoons of the parsley, the basil, sugar, tomatoes, and tomato sauce.
  • Break up tomatoes and heat to boiling, stirring occasionally.
  • Reduce heat to low and simmer uncovered 45 minutes or until slightly thickened.
  • Heat oven to 350 and cook and drain noodles as directed on package.
  • Mix ricotta cheese (or cottage cheese), 1/4 cup Parmesan cheese, remaining tablespoon parsley, and the oregano.
  • Spread 1 cup of the sauce mixture in ungreased rectangular 13x9x2" baking dish.
  • Top with 4 noodles and spread 1 cup of the cheese mixture over the noodles.
  • Spread with 1 cup of the sauce mixture.
  • Sprinkle with 2/3 cup of the mozzarella cheese.
  • Repeat with 4 noodles, the remaining cheese mixture, 1 cup of the sauce mixture, and 2/3 cup of the mozzarella cheese.
  • Top with the remaining noodles and sauce mixture.
  • Sprinkle with remaining mozzarella cheese and 1/4 cup parmesan cheese.
  • Cover and bake 30 minutes.
  • Uncover and bake about 15 minutes longer or until hot and bubbly.

1/4 cup grated parmesan cheese

Steps:

1 pound Bob Evans Italian Roll Sausage
1 jar pasta sauce (26 oz)
1 can tomato sauce (15 oz)
1 package oven ready lasagna noodles (8 oz)
1 container ricotta cheese (15 oz)
1 teaspoon Italian seasoning
4 cups shredded mozzarella cheese
1/2 cup grated Parmesan cheese

Steps:

  • In a skillet, crumble and cook sausage over medium heat until brown. Remove from heat and stir in pasta sauce and tomato sauce. In small bowl, combine ricotta cheese and Italian seasoning. Preheat oven to 375F. Spread 1 cup sauce into bottom of a 9 x 13 inch baking dish. Top with 3 noodles. Cover noodles with 1/3 of ricotta cheese mixture, 1 cup of mozzarella and 1 cup sauce. Repeat layers two more times. Add last 3 noodles. Top lasagna with remaining sauce and with remaining mozzarella cheese. Sprinkle Parmesan over mozzarella. Cover and bake 45 to 50 minutes or until noodles are tender. Uncover and bake an additional 5 minutes to melt cheese.

1 (9 ounce) package no-boil lasagna noodles
1 lb mild Italian sausage
1 medium onion, chopped
28 ounces whole canned tomatoes (undrained)
12 ounces tomato paste
2 teaspoons sugar
1/4 cup fresh basil, torn into small pieces
1/4 teaspoon black pepper, freshly ground
15 ounces ricotta cheese
1 egg, beaten
2 tablespoons fresh parsley, chopped
1/2 teaspoon sea salt
3/4 cup parmigiano-reggiano cheese, grated
4 cups mozzarella cheese, grated

Steps:

  • Crumble Italian sausage into a large skillet. Brown sausage until no longer pink and drain onto paper towels. Wipe out skillet with paper towels. Add 1 tablespoon olive oil to pan and heat until shimmering. Add onion and saute until translucent.
  • Stir in the cooked Italian sausage, tomatoes (undrained), tomato paste, sugar, half of the basil and the pepper. Bring to boil then reduce heat and simmer uncovered for 20-30 minutes, stirring occasionally and breaking up the tomatoes with the back of a spoon.
  • In a small bowl blend ricotta, egg, parsley, Parmaigano-Reggiano and 1/2 teaspoon salt.
  • Put a layer of noodles in a 9 X 13 pan, a layer of meat sauce, layer of ricotta mixture and a layer of the cheese then repeat all the layers twice more. Cover with foil.
  • Bake at 375 degrees for 30 minutes. Uncover and bake 20 minutes more. Let stand 10 minutes before cutting and serving.

1/4 cup chopped onion

1 can (14-1/2 ounces) diced tomatoes, undrained
1/4 cup tomato paste
3/4 teaspoon sugar

1/8 teaspoon crushed red pepper flakes
1/8 teaspoon pepper
1 egg, beaten
3/4 cup ricotta cheese

3/4 to 1 cup shredded part-skim mozzarella cheese

Steps:

  • Crumble sausage into a small skillet. Add onion and garlic; cook over medium heat until meat is no longer pink. Drain. Add the tomatoes, tomato paste, sugar and seasonings. Bring to a boil. Reduce heat; simmer, uncovered, 20 minutes. Combine the egg, ricotta and parsley., Spread 1/4 cup sauce in an 8x4-in. loaf pan coated with cooking spray. Trim noodles to fit dish. I came across this recipe in the most serendipitous manner...on my way to work going 50mph I saw some trash blowing across the road...it got stuck to my car and I could hear it fluttering all the way to work. When I got out of my car I found a piece of newspaper stuck to my front grill. I took it off and what was it? A torn out page from a week old newspaper that has 4 yummy sounding recipes! Wow. I feel obligated to post them now. This one sites: Cook's Illustrated.

1/2 lb lean ground beef
1/2 lb ground lean pork
2 garlic cloves, minced
1/4-1 teaspoon red pepper flakes
salt, to taste
6 ounces curly-edged regular lasagna noodles, 8 noodles broken into 2-inch pieces (do not use no-boil noodles)
1 (26 ounce) jar pasta sauce (about 3 cups)
2 cups water
1/2 cup mozzarella cheese, shredded
1/4 cup parmesan cheese, grated
ground black pepper, to taste
3/4 cup whole milk ricotta cheese
1/4 cup fresh basil, minced

Steps:

  • Cook meat in a 12-inch nonstick skillet over high heat, breaking it into pieces with a wooden spoon until fat renders, 3-5 minutes. Drain.
  • In the skillet stir into the meat, garlic, red pepper flakes and 1/2 tsp salt and cook over medium-high heat until fragrant, about 30 seconds.
  • Sprinkle broken noodles into skillet, then pour in tomato sauce and water so that it covers the noodles (you may need to add extra water if noodles are especially dry).
  • Cover and cook, stirring often at a vigorous simmer until noodles are tender, about 20 minutes.
  • Turn off heat, stir in half of the mozzarella and half of the parmesan. Season with salt and pepper to taste.
  • Dot heaping tablespoons of ricotta over the noodles, then sprinkle the remaining cheeses.
  • Cover and let stand off heat until cheeses melts, 3-5 minutes.
  • Sprinkle with basil before serving.

DH and I saw this recipe in a Williams-Sonoma catalog and tried it last night. We loved it! We used hot Italian sausage, as that is what we had on hand, and found we had to break the noodles a bit to get them to fit into our skillet. I definitely think this one is a keeper. Prep time includes resting time at the end. Cook time includes time to cook the lasagna noodles al dente, which is specified in the ingredient list, but not in the directions.

1 tablespoon olive oil
1 yellow onion, diced
4 garlic cloves, minced
salt, to taste
fresh ground pepper, to taste
1 lb mild Italian sausage, casings removed
4 tablespoons unsalted butter (1/2 stick)
1/4 cup all-purpose flour
3 cups milk
1 cup parmigiano-reggiano cheese, grated
1/4 cup chopped fresh parsley
1 tablespoon chopped fresh parsley (to garnish)
1 tablespoon minced fresh sage
9 dried lasagna noodles, cooked al dente
3 lbs butternut squash, peeled, neck portion sliced into wide thin sheets

Steps:

  • Preheat oven to 400 degrees F.
  • In a large nonstick fry pan over medium-high heat, warm oil. Cook onion 8 minutes.
  • Add garlic, salt and pepper; cook 30 seconds. Transfer to bowl.
  • Cook sausage, breaking it into pieces, 8 minutes. Add to onion mixture.
  • In fry pan over medium heat, melt butter. Add flour; cook, stirring, 1 minute.
  • Slowly stir in milk; increase heat to medium-high; cook 8-10 minutes.
  • Transfer to a separate bowl. Stir in 3/4 cup cheese, 1/4 cup parsley, sage, salt and pepper.
  • Spread 1/3 cup sauce on bottom of fry pan; top with single layer of three noodles. Top with 1/3 cup of sauce, 1/3 cup sausage and layer of squash slices.
  • Repeat layering of sauce, sausage and squash 5 more times, replacing squash layer with noodles every other layer. Top with remaining sauce and cheese.
  • Bake 45 minutes.
  • Sprinkle with 1 Tb parsley. Let stand 15 minutes.
