Here's a tasty hot appetizer for all those parties that feature fun finger foods. I've made this recipe several times, and these bites always disappear so fast. It's really easy. -Shirley Van Allen, High Point, North Carolina

1 pound Italian turkey sausage links, casings removed
1 can (15 ounces) tomato sauce
1/2 teaspoon garlic powder
1/2 teaspoon dried basil
24 wonton wrappers
1 cup shredded Italian cheese blend

Steps:

  • In a large skillet, cook sausage over medium heat until no longer pink; drain. Stir in the tomato sauce, garlic powder and basil. Bring to a boil. Reduce heat; simmer, uncovered, until thickened, 8-10 minutes., Meanwhile, press wonton wrappers into miniature muffin cups coated with cooking spray. Bake at 350° until lightly browned, 8-9 minutes. , Spoon sausage mixture into cups. Sprinkle with cheese. Bake until cheese is melted, 5-7 minutes longer. Serve warm. Freeze option: Cool appetizers; freeze them in freezer containers, separating layers with waxed paper. To use, reheat wonton cups in coated muffin pans in a preheated 350° oven until crisp and heated through.

Here's a delicious sausage cups recipe made using Original Bisquick® mix and Italian sausage that's ready in 50 minutes - perfect appetizer for Italian cuisine.

1 1/2 cups Original Bisquick™ mix
1/2 teaspoon Italian seasoning
2 tablespoons boiling water
1 egg
1/2 lb bulk mild Italian sausage
1/4 cup chopped onion
1/3 cup tomato pasta sauce
1/2 cup shredded mozzarella cheese (2 oz)

Steps:

  • Heat oven to 375°F. Spray 24 mini muffin cups with cooking spray. In medium bowl, stir Bisquick mix, Italian seasoning and boiling water until well blended. Stir in egg until soft dough forms. Press rounded teaspoonful of dough on bottom and up side of each muffin cup.
  • In 10-inch skillet, cook sausage and onion over medium-high heat 5 to 7 minutes, stirring occasionally, until thoroughly cooked; drain. Stir in pasta sauce.
  • Spoon sausage mixture into dough-lined muffin cups. Sprinkle with cheese.
  • Bake 15 to 20 minutes or until golden brown.

Flavorful Italian sausage and onion topped with a cloud of creamy cheesy quiche flavored with basil and surrounded by a buttery biscuit crust. The sriracha is optional because it is a 7th contest ingredient, it does tie in well with the Swiss cheese and basil. I wanted to add sun-dried tomatoes but I didn't have any on hand- if you would like to add about 2tbsp of them minced to the quiche, I don't mind. Alternatively, diced fresh tomatoes might be nice sprinkled on top. I also thought of mixing the cooked sausage and onion into the quiche mix. There's just not enough time to try all of the variations but I don't mind if you do. :D.

4 ounces Italian sausage, ground (mild or hot)
1/4 cup sweet onion, diced
1 garlic clove, minced
8 ounces neufchatel cheese
2 large eggs
2 tablespoons half-and-half
3/4 cup swiss cheese, shredded
2 tablespoons fresh basil, chopped
1 -2 teaspoon hot chili sauce, sriracha (optional if you like heat)
1 (12 ounce) can Pillsbury Golden Layers refrigerated flaky original biscuits

Steps:

  • Preheat oven to 375°F Lightly grease 10 muffin cups.
  • Break up Italian sausage into small crumbles and brown with onion in a frying pan. Add garlic the last couple minutes of cooking time. Dab up as much grease as you can with paper towels.
  • In a medium bowl, cream neufchatel. Beat in eggs and half and half.
  • Stir in Swiss cheese, basil and sriracha, if using.
  • Place one biscuit in each of the 10 greased muffin cups and press them so that they are molded to the whole cup.
  • Spoon about 1tbsp of the sausage mixture into each crust.
  • Top with quiche mix.
  • Bake for 20-25 minutes until the quiche is set.
  • Serve hot.

1 pie shell, unbaked
3/4 lb Italian sausage, sweet
1/2 cup onion, chopped
3 eggs, beaten
1/2 cup cream or 1/2 cup milk
1 cup mozzarella cheese, shredded
salt & pepper, to taste

Steps:

  • Place pie shell in oven during the pre-heating time for about 5- 10 minutes in order to firm the bottom some.
  • Don't overcook!
  • Remove casing from the sausage and crumble.
  • Sauté sausage and onions; drain well and spoon into prepared pie shell.
  • Blend eggs, milk, cheese, salt and pepper; pour over sausage mixture.
  • Bake at 350 degrees F. for 35 minutes, or until custard sets and tests clean with a knife.
  • Allow to cool slightly.
  • Cut into 8 wedges and serve.

Steps:

  • Preheat oven to 350 degrees.
  • In a large skillet, brown pork sausage until cooked through.
  • Remove sausage from skillet; pat any remaining grease with paper towel.
  • In a large size bowl, combine sour cream and Italian dressing mix; mix well.
  • Stir in cooked sausage and the Simply Potatoes.

1 tablespoon extra virgin olive oil
1/4 cup red sweet bell pepper, diced
1/4 cup sweet onion, diced
6 large biscuits, prepared refrigerated (1 can)
3 large eggs
1/2 cup shredded Italian cheese blend

Steps:

  • Preheat oven to 375 degrees F. In skillet over medium heat, brown sausage until cooked through. Transfer sausage to plate lined with paper towel and allow to drain and cool. Add olive oil to skillet, sauté pepper and onion for 2-3 minutes until soft but not brown. Remove from heat and allow to cool.
  • Spray six inserts of muffin pan with cooking spray. Unroll dough and separate into six pieces. Place large end of each piece into bottom of cup and wrap around sides to form a dough cup.
  • Beat eggs with fork and combine with sausage, pepper and onion mixture, and shredded cheese. Pour mixture into dough cups.
  • Bake for 20-25 minutes or until tops are lightly golden brown and eggs are set. Move pan to cooling rack and allow to cool for 2-3 minutes. With a fork gently loosen each cup around edges, and remove each cup from pan.

7 -8 ounces sweet Italian sausage (about 2)
2 cups flour
1/3 cup grated parmesan cheese
1 tablespoon baking powder
1/2 teaspoon salt
1/8 teaspoon pepper
1/2 teaspoon oregano
1 egg
14 ounces pizza sauce
2 tablespoons olive oil

Steps:

  • Remove sausages from casings, break into small pieces and fry in a skillet until cooked and browned. Drain sausage on paper towels, but save grease in skillet.
  • Heat oven to 400 degrees F. Grease muffin cups or use paper liners.
  • Mix flour, Parmesan cheese, baking powder, salt, pepper and oregano in a large bowl. Break egg into another bowl and beat. Add pizza sauce and mix well. Add 3 T. fat, start with the remaining fat in the skillet and make up the difference with olive oil. Add sausage and mix well. Pour the mixture over the dry ingredients and mix just until blended. Scoop the very thick batter into muffin cups. Bake 20 to 25 minutes or until firm on top. Cool 30 minutes before serving.

2 tablespoons hidden valley ranch dressing mix
1/3 cup mayonnaise
1/2 cup sour cream
1 lb cooked italian sausage
2 cups shredded colby cheese
1 cup shredded cheddar cheese
1/4 cup finely grated parmesan cheese
1/2 cup chopped roasted red pepper
3 scallions, whites finely chopped and green parts thinly sliced
1 tablespoon chili flakes (to garnish)
nonstick cooking spray

Steps:

  • Preheat oven to 400 degrees F. Spray a 12-well muffin tin with nonstick cooking spray. Place 5 tater tots in each well and bake for 20 minutes until tater tots are soft.
  • Remove from oven and use the bottom of a shot glass or your fingers to press the tater tots flat on the bottom and up the sides of each well. Bake until golden and crisp, about 15 minutes.
  • In a large bowl, stir to combine the sausage, Colby cheese, cheddar cheese, parmesan cheese, roasted red bell peppers, mayonnaise, sour cream, ranch seasoning and chopped scallion whites. Spoon the mixture into the tater tot cups, then return to the oven and bake until cheese is melted, about 6-8 minutes.
  • Remove the cups from the muffin tin and top each with a sprinkle of scallion greens and pinch chili flakes.
