SAUSAGE WONTON CUPS
Here's a tasty hot appetizer for all those parties that feature fun finger foods. I've made this recipe several times, and these bites always disappear so fast. It's really easy. -Shirley Van Allen, High Point, North Carolina

Steps:
- In a large skillet, cook sausage over medium heat until no longer pink; drain. Stir in the tomato sauce, garlic powder and basil. Bring to a boil. Reduce heat; simmer, uncovered, until thickened, 8-10 minutes., Meanwhile, press wonton wrappers into miniature muffin cups coated with cooking spray. Bake at 350° until lightly browned, 8-9 minutes. , Spoon sausage mixture into cups. Sprinkle with cheese. Bake until cheese is melted, 5-7 minutes longer. Serve warm. Freeze option: Cool appetizers; freeze them in freezer containers, separating layers with waxed paper. To use, reheat wonton cups in coated muffin pans in a preheated 350° oven until crisp and heated through.

- Heat oven to 375°F. Spray 24 mini muffin cups with cooking spray. In medium bowl, stir Bisquick mix, Italian seasoning and boiling water until well blended. Stir in egg until soft dough forms. Press rounded teaspoonful of dough on bottom and up side of each muffin cup.
- In 10-inch skillet, cook sausage and onion over medium-high heat 5 to 7 minutes, stirring occasionally, until thoroughly cooked; drain. Stir in pasta sauce.
- Spoon sausage mixture into dough-lined muffin cups. Sprinkle with cheese.
- Bake 15 to 20 minutes or until golden brown.

ITALIAN SAUSAGE QUICHE CUPS
Flavorful Italian sausage and onion topped with a cloud of creamy cheesy quiche flavored with basil and surrounded by a buttery biscuit crust. The sriracha is optional because it is a 7th contest ingredient, it does tie in well with the Swiss cheese and basil. I wanted to add sun-dried tomatoes but I didn't have any on hand- if you would like to add about 2tbsp of them minced to the quiche, I don't mind. Alternatively, diced fresh tomatoes might be nice sprinkled on top. I also thought of mixing the cooked sausage and onion into the quiche mix. There's just not enough time to try all of the variations but I don't mind if you do. :D.

Steps:
- Preheat oven to 375°F Lightly grease 10 muffin cups.
- Break up Italian sausage into small crumbles and brown with onion in a frying pan. Add garlic the last couple minutes of cooking time. Dab up as much grease as you can with paper towels.
- In a medium bowl, cream neufchatel. Beat in eggs and half and half.
- Stir in Swiss cheese, basil and sriracha, if using.
- Place one biscuit in each of the 10 greased muffin cups and press them so that they are molded to the whole cup.
- Spoon about 1tbsp of the sausage mixture into each crust.
- Top with quiche mix.
- Bake for 20-25 minutes until the quiche is set.
- Serve hot.

Steps:
- Place pie shell in oven during the pre-heating time for about 5- 10 minutes in order to firm the bottom some.
- Don't overcook!
- Remove casing from the sausage and crumble.
- Sauté sausage and onions; drain well and spoon into prepared pie shell.
- Blend eggs, milk, cheese, salt and pepper; pour over sausage mixture.
- Bake at 350 degrees F. for 35 minutes, or until custard sets and tests clean with a knife.
- Allow to cool slightly.

- Preheat oven to 375 degrees F. In skillet over medium heat, brown sausage until cooked through. Transfer sausage to plate lined with paper towel and allow to drain and cool. - Remove sausages from casings, break into small pieces and fry in a skillet until cooked and browned. Drain sausage on paper towels, but save grease in skillet.
- Heat oven to 400 degrees F. Grease muffin cups or use paper liners.
- Mix flour, Parmesan cheese, baking powder, salt, pepper and oregano in a large bowl. Break egg into another bowl and beat. Add pizza sauce and mix well. Add 3 T. fat, start with the remaining fat in the skillet and make up the difference with olive oil. Add sausage and mix well. Pour the mixture over the dry ingredients and mix just until blended. With a base of crispy tater tots and a stuffing of cheesy sausage, these cups are great for breakfast and parties.

- Preheat oven to 400 degrees F. Spray a 12-well muffin tin with nonstick cooking spray. Place 5 tater tots in each well and bake for 20 minutes until tater tots are soft.
