CHEF JOHN'S ITALIAN MEATBALLS

Homemade meatballs are a very easy to make, and since we skip the very messy step of pan-frying these before they hit the sauce, it becomes downright simple. Here I use a standard half-beef/half-pork mixture. You can substitute water or beef broth for the milk, if preferred.

⅓ cup plain bread crumbs
½ cup milk
2 tablespoons olive oil
1 onion, diced
1 pound ground beef
1 pound ground pork
2 eggs
¼ bunch fresh parsley, chopped
3 cloves garlic, crushed
2 teaspoons salt
1 teaspoon ground black pepper
½ teaspoon red pepper flakes
1 teaspoon dried Italian herb seasoning
2 tablespoons grated Parmesan cheese

Steps:

  • Cover a baking sheet with foil and spray lightly with cooking spray.
  • Soak bread crumbs in milk in a small bowl for 20 minutes.
  • Heat olive oil in a skillet over medium heat. Cook and stir onions in hot oil until translucent, about 20 minutes.
  • Mix beef and pork together in a large bowl. Stir onions, bread crumb mixture, eggs, parsley, garlic, salt, black pepper, red pepper flakes, Italian herb seasoning, and Parmesan cheese into meat mixture with a rubber spatula until combined. Cover and refrigerate for about one hour.
  • Preheat an oven to 425 degrees F (220 degrees C).
  • Using wet hands, form meat mixture into balls about 1 1/2 inches in diameter. Arrange onto prepared baking sheet.
  • Bake in the preheated oven until browned and cooked through, 15 to 20 minutes.

Meatball recipes are often challenged by chefs who claim, "Mine are the best!" Even though my meatballs ARE the best, I will make no such claim. Try them for yourself! This meatball recipe was given to me by my father who got it from a little old lady from Italy that he knew. It's amazing that she gave up her recipe to him, but I sure am glad she did!

1 lb ground beef
2 eggs
1/4 cup milk
1/2 cup breadcrumbs
1/2 teaspoon salt
1 tablespoon fresh parsley
1 teaspoon garlic powder
1/2 teaspoon fresh ground pepper
1/2 cup grated locatelli cheese

Steps:

  • Mix all ingredients in a large bowl by hand.
  • Use your bare hands for best results.
  • Roll meatballs to about the size of a golf ball. (wet your hands to prevent the meat from sticking to them while rolling the meat balls).
  • Drop raw meatballs into large (I use a stock pot) pot of sauce.
  • (I have an incredible sauce recipe {#92096} I use for my meatballs).
  • Simmer for about 3 hours.

JUICY ITALIAN MEATBALLS

I make these meatballs and then freeze and take out what I need for that meal. I only cook my meatball in my sauce for about 30 minutes. If you like soft meatball these are for you.

1/3 cup romano cheese, grated
2 tablespoons parsley, chopped
1 cup Italian seasoned breadcrumbs
1/2 cup water

1/2 teaspoon onion powder
1/2 teaspoon garlic powder

Steps:

  • Combine crumbs, cheese, seasonings, eggs and water, blend well.
  • Add meat and mix together very well.
  • Prepare cookie sheet with pan spray.
  • Roll into balls.
  • Place on sheet pan and bake.

1 lb ground beef
2 garlic cloves, minced
1/2 cup chopped parsley
1/2 cup grated parmesan cheese
1 medium onion, finely chopped
1/2 cup fresh breadcrumb
1 large egg, beaten
3 tablespoons dry red wine (optional)
2 tablespoons tomato paste
1 teaspoon salt
1/4 teaspoon ground black pepper
1/2 teaspoon dried oregano
1/2 cup all-purpose flour
2 tablespoons olive oil

Steps:

  • Mix all ingredients up to the dried oregano with your hands.
  • Scoop out mixture in heaping tablespoons and form into 2-inch balls.
  • Dredge the meatballs in the flour.
  • Heat in a large skillet over medium heat the 2 tablespoons of olive oil.
  • Brown the meatballs in batches.
  • Place in baking pan and cook in a preheated 375 degree oven for 10 minutes.
  • Or, if desired finish cooking in the sauce of your choice.
  • Enjoy!

Here it is, my mom's FAMOUS Meatball recipe! This is THEE most requested of her for anything, anywhere! Whenever there is a shower, birthday, christening, etc., someone is asking for 150 to 200 of her famous meatballs. :) Of course, she always says yes! She is not one for "exact" measurements (a little of this, a dash of that), so I tried the best I could to adapt her recipe. Of course, these are best served with My Mama Iuliucci's "Don't Skip a Step" Spaghetti Sauce recipe #26947, but I have used jazzed-up jarred sauce and they are still great. However, meat-a-balls like these deserve a homemade sauce, in my humble opinion!

2 lbs lean ground beef
8 -10 slices white bread, broken into small 1/2 inch pieces (or you can use rolls or any stale bread you have and want to use up)
2 eggs, slightly beaten
1/2 teaspoon garlic powder (or to taste)
1 teaspoon italian seasoning (or to taste)
2 teaspoons parsley flakes (or to taste)
1/4-1/2 cup grated parmesan cheese (or Locatelli)
1 -2 teaspoon salt
1/4-1/2 teaspoon black pepper
olive oil (for frying) or vegetable oil (for frying)

Steps:

  • Mix all ingredients gently in a large bowl until well combined.
  • Roll meatballs 1 1/2- 1 3/4" in diameter.
  • Heat about 1/4" of oil over medium heat in a large frying pan.
  • Fry meatballs in oil, rolling frequently, until evenly browned and juices run clear.
  • Drop meatballs in your favorite sauce (I highly recommend My Mama Iuliucci's"Don't Skip a Step" Spaghetti Sauce recipe#26947) and let simmer for awhile to flavor sauce or just serve with your favorite pasta and sauce.
  • Tip: You can also bake or broil these if the frying part is too much of a hassle-- I use my broiler pan if I bake them, so the fat drips down and away from the meatballs.

These meat balls are made extra soft and juicy by using bread instead of breadcrumbs. Use your favorite homemade tomato sauce recipe or try the BASIL TOMATO SAUCE #447975 .

1 cup of diced sandwich white bread, lightly packed
1 small onion, grated
14 ounces ground beef
3 ounces ground pork
1 large egg
1/4 cup parsley, finely chopped
2 garlic cloves, minced
1/4 cup parmigiano-reggiano cheese or 1/4 cup parmesan cheese, grated
3/4 teaspoon salt
1/4 teaspoon black pepper
1 1/2 tablespoons olive oil
4 cups of your favorite tomato sauce

Steps:

  • Remove crust from bread and dice into small pieces.
  • In a large bowl, grate the onion using a standard box grater until you have about 1/2 cup of onion and juices.
  • Add the bread to the onions, mixing until the juices thoroughly soaks the bread. Set aside for several minutes.
  • Add the remaining ingredients (except for the oil and tomato sauce) and mix well.
  • Measure out a heaped tablespoon and roll lightly to form a ball.
  • Heat the oil in a large non stick frying pan over medium heat. Add the meatballs and brown all over, about 3-4 minutes. Carefully transfer the partially cooked meatballs onto a plate.
  • Add your favorite tomato sauce to the pan and heat. Add the meatballs and it's juices to the tomato sauce and cook for 10 minutes or until the meat balls are cooked through, turning and stirring occasionally.
  • Cook your pasta of choice while the meatballs are cooking.
  • NOTES:.
  • You can substitute other breads (no crusts) for the sandwich bread or if you prefer, 1/2 cup breadcrumbs.
  • Feel free to use 1 lb (500g) beef instead of the beef/pork mixture.
