ROASTED ITALIAN MEATBALLS

- Preheat the oven to 400 degrees F. Line two sheet pans with parchment paper.
- Place the sirloin, pork, and veal in a large mixing bowl and lightly break up the meats with a fork and your fingertips. Add the bread crumbs, Pecorino, Parmesan, garlic, parsley, 2 teaspoons salt, and 1/2 teaspoon black pepper. Add the eggs, wine, and 3/4 cup water and combine lightly but thoroughly.
- Measure out 2-ounce portions of the mixture (I use a rounded 1 3/4-inch ice cream scoop) and roll each lightly into a ball. Place one inch apart on the prepared sheet pans. Brush the meatballs with the olive oil.
- Bake the meatballs for 25 to 30 minutes, until lightly browned. Pour the marinara into a large pot and bring to a simmer. Carefully add the meatballs and simmer for 10 minutes, until heated through.
- To serve with polenta, spoon a puddle of creamy Parmesan polenta on one side of each dinner plate. Spoon 1 or 2 meatballs plus a puddle of tomato sauce on the other side, allowing them to combine in the center of the plate. To serve with spaghetti, distribute among shallow pasta bowls. Spoon the meatballs and sauce onto the pasta. Sprinkle with extra Parmesan and serve hot.
- Place the chicken stock in a large saucepan. Add the garlic and cook over medium-high heat until the stock comes to a boil. Reduce the heat to medium-low and very slowly whisk in the cornmeal, whisking constantly to make sure there are no lumps. Switch to a wooden spoon, add the salt and pepper, and simmer, stirring almost constantly, for 10 minutes, until thick. Be sure to scrape the bottom of the pan thoroughly while you're stirring. Off the heat, stir in the Parmesan, creme fraiche, and butter. Taste for seasonings and serve hot with extra Parmesan cheese to sprinkle on top.
CHEF JOHN'S ITALIAN MEATBALLS
Homemade meatballs are a very easy to make, and since we skip the very messy step of pan-frying these before they hit the sauce, it becomes downright simple. Here I use a standard half-beef/half-pork mixture. You can substitute water or beef broth for the milk, if preferred.

- Cover a baking sheet with foil and spray lightly with cooking spray.
- Soak bread crumbs in milk in a small bowl for 20 minutes.
- Heat olive oil in a skillet over medium heat. Cook and stir onions in hot oil until translucent, about 20 minutes.
- Mix beef and pork together in a large bowl. Stir onions, bread crumb mixture, eggs, parsley, garlic, salt, black pepper, red pepper flakes, Italian herb seasoning, and Parmesan cheese into meat mixture with a rubber spatula until combined. Cover and refrigerate for about one hour.
- Preheat an oven to 425 degrees F (220 degrees C).
- Using wet hands, form meat mixture into balls about 1 1/2 inches in diameter. Arrange onto prepared baking sheet.
- Bake in the preheated oven until browned and cooked through, 15 to 20 minutes.

- Heat oven to 400°F. Spray rectangular baking dish, 13x9x2 inches, with cooking spray. Thaw meatballs by microwaving them in microwavable bowl on High 3 to 5 minutes or until warm. Add pasta sauce; stir to coat.
- Place half of the meatballs in baking dish. Mix spinach, cream cheese and 1/2 cup of the shredded cheese. Spoon half of the spinach mixture by tablespoonfuls randomly over meatballs.
- Stir Bisquick mix and milk in medium bowl until soft dough forms. Spoon half of the dough by tablespoonfuls randomly over meatballs. Repeat layers with remaining meatballs, spinach mixture and Bisquick mixture.
- Bake uncovered about 20 minutes or until biscuits are golden brown. Sprinkle with remaining 1 cup shredded cheese. Bake about 5 minutes longer or until cheese is melted.

- In a large bowl, combine the egg, milk, ketchup, Worcestershire sauce, oats, onion, parsley, salt and pepper. Crumble beef over mixture and mix well. Shape into 1-1/2-in. balls. Roll in flour, shaking off excess. , Place meatballs on greased racks in shallow baking pans. Bake, uncovered, at 400° for 10 minutes. - Heat 1 tablespoon oil in a large frying pan over medium heat. Add the onion, pine nuts and garlic. Cook stirring often, until the onion is soft. Transfer to a bowl and allow to cool slightly.
- Add the mince, basil, breadcrumbs, lemon rind cheeses and egg.
- Mix (with your hands) until well combined.
- Roll 2 tablespoons mixture into balls, place on a tray, cover and refrigerate for 30 minutes.
- Heat the remaining oil in the pan, add the meatballs and cook turning gently occasionally until browned all over and cooked through.
- To make the spinach sauce, melt the butter in a pan, add the green onions and cook, stirring for 1 minute.
- Add the spinach and cream and bring to the boil. Cook for 10 minutes or until slightly thickened then transfer to a blender and puree until smooth.
- Season to taste with black pepper.
- Serve the meatballs on mash or egg noodles with spinach sauce spooned over.

- Place frozen meatballs in bottom of round casserole.
- Sprinkle frozen spinach on top of meatballs.
- Whisk beefstock, sourcream, dill, cumin, lemon juice, salt and cornstarch together in seperate bowl.
- Pour over meatballs, cover and bake in 350 degree oven for 45 minutes or until done.
- Stir halfway through cooking and take off lid to thicken sauce.

LUNCH LADIES CREAMY ITALIAN SPINACH
When I was growing up, my mom worked full time as a teacher in the special needs program at our school, had a husband and two kids to look after, so my brother and I didn't get lunches packed from home a lot. We also went to private school (same one where my mom taught) so we spent 13 years each in the same place day after day and we really got to know the cafeteria staff well, which was a blessing and a curse, because they watched over us and if we didn't order the hot meal more than once a week, or had soda instead of milk at lunch mom knew and we were in trouble and don't even get me started about the candy bars, (they had been given express orders to not let us buy them!). Wednesday was spaghetti day and they served creamy Italian spinach and garlic bread with it! Everyone in the whole school loved that spinach some kids ate double orders of that and nothing else for lunch. It was a "secret" recipe so they wouldn't divulge it to anyone and we only got to have that creamy yummy goodness on Wednesday afternoons. When I was a junior and a senior in highschool, I had last lunch (with 4k-10th going before) and they always ran out of that spinach. My mom mentioned how I liked it so much and was so sad I didn't get there in time to have it anymore and lo and behold from that day on every Wednesday I was presented with a special bowl of spinach they had put aside just for me. They eventually gave the recipe to my mom, we scaled it way down and we don't have spaghetti in our house without it. So enjoy a trip to my elementary, middle and highschool cafeteria. Note the stage in the back ground and the basketball goals hanging from the ceiling. And I hope you enjoy this as much as I do.

- With kitchen shears cut raw bacon into small pieces and fry until crispy but not burned, drain well on paper towels.
- Place spinach in a large corning ware type bowl that is micro-wave safe.
- Add bacon, sour cream, cheese and seasonings to the spinach stir well to combine.
- Heat covered in a microwave oven for 3 minutes. Remove from microwave and stir well. Heat for additional 2 minutes.
- OPTION: For a nicer presentation, after microwaving sprinkle parmesan cheese over top of the spinach and place in 350*F oven for about ten minutes or until cheese is melted and beginning to brown.

- Combine all ingredients (except the olive oil and wine) in a large mixing bowl. Mix well.
- To make the meatballs: With damp hands, take a portion of the ground beef mixture and roll between palms to form a 1-inch round ball that is firmly packed. Repeat. Cook's Tip: If the ground beef mixture becomes too dry for the meatballs to properly stick together, add a sprinkle of water to the mixture as needed.
- Cook the meatballs one of two (2) ways:.
- a. Grandma's way was to drop the hand rolled meatballs into boiling hot tomato sauce during the last 20-30 minutes of the sauce's cooking time.
- b. Another popular method in our family is to fry the meatballs. Heat the olive oil in a wide, heavy-bottomed skillet over a medium-high flame. Add the meatballs, but do not over-crowd the skillet - Cook in a single layer. Cook for 10 or so minutes. As meatballs are finishing, add a little bit of red wine to de-glazethe skillet. Cook's Tip: Brown well on bottoms before turning, or meatballs will break apart. DO NOT OVERCOOK.
- DELICIOUS VARIATION TO THIS RECIPE: Add one (1) chopped anchovie to the above-described ground beef mixture. Reduce your salt to a 1/4 teaspoon.

- In a large mixing bowl use hands to combine the meats, eggs, bread crumbs, 2 tbsp of the garlic powder, Italian seasoning , seasoning salt, milk, parmesan cheese, ¾ of parsley, ¾ of the onions and ¾ green peppers. Set aside the remaining ingredients for the sauce.
- After the meat mixture is well blended. Preheat the oven at 250°. Form the meat into 50 (1.5 inch) balls. Placed them on a slightly grease large cooking pan. Be sure that none of the balls are touching. Put them I the oven for 25 minutes.
- Meanwhile take the remaining vegetables, and Sauté them in some olive oil.
- In a pot mixed together the pasta sauce, water, sauté veggies and remaining parsley and garlic powder. Cook on high until meatballs are out of the oven. (I poured the water in the empty sauce jar before putting it in the pot to get all the sauce out.).
- Place meatballs in the pot. Cook on medium. Stir occasionally for 45 minutes.
- Optional: Serve with noodles and or topped with mozzarella cheese.
