This is a recipe that I came up with when I got tired of 'the same old thing'. It's easy and delicious. You can add things like mushrooms or peppers. Serve with white rice or noodles, salad and bread. You can pour the sauce over the rice/noodles.

3 pounds country style pork ribs
1 (32 ounce) jar spaghetti sauce
½ cup water
2 tablespoons olive oil

Steps:

  • Heat the oil in a extra-large skillet over medium-high heat. Add ribs to skillet and brown on all sides. Pour spaghetti sauce over ribs and stir in the water. Reduce heat and simmer, covered for 1 hour. Turn ribs after 1/2 hour of cooking. If the sauce gets too thick, thin it with a little more water.

If you were to pick a president and el tigre numero uno of the ragù world, it'd be ragù Napoletano, a meaty stew with big chunks of beef, pork, and sausages simmered until fall-apart tender in a rich tomato sauce flavored with wine, onions, garlic, basil, and plenty of good Southern Italian olive oil. It's the precursor to Italian-American Sunday gravy: just add some meatballs, serve it with spaghetti, and you're there. It's also the perfect dish for a lazy Sunday with family or friends at home.

3 pounds pork spare ribs (about 1/3 large rack), cut into three chunks
2 pounds beef chuck, cut into 2-inch strips
1/2 cup extra-virgin olive oil, divided
1 large onion, finely chopped (about 1 1/2 cups)
8 medium cloves garlic, finely minced , divided
1/2 teaspoon dried red chili flakes
1 teaspoon dried oregano
2 cups dry red wine
2 (28-ounce) cans whole peeled tomatoes, preferably D.O.P. San Marzano, crushed by hand in a large bowl
1 (2- to 3-inch) Parmesan rind (optional)
1 bunch fresh basil
1 pound mild sausage, in the casings (see note)
1 tablespoon Asian fish sauce
8 to 10 servings fresh or dried pasta
Grated Parmesan cheese, for serving

Steps:

  • To serve, cook pasta in a pot of boiling salted water until just shy of al dente (about 1 minute for fresh pasta or 1 minute short of recommended cooking time for dried pasta). Drain, reserving about 1 cup of starchy pasta water. Return pasta to the pot you just cooked it in and add half of ragù, half of pasta cooking water, and a handful of grated cheese. Cook over high eat, stirring until the sauce emulsifies with the pasta water and clings to the pasta, adding more pasta water if necessary. Serve immediately, passing additional sauce, cheese, and remaining fresh basil at the table.

3 pounds bone-in country-style pork ribs
1 medium onion, chopped
3 to 5 garlic cloves, minced
2 cans (28 ounces each) crushed or diced tomatoes, drained
1 can (14-1/2 ounces) Italian diced tomatoes, drained
3 bay leaves
2 tablespoons chopped fresh parsley
2 tablespoons chopped capers, drained
1/2 teaspoon dried basil
1/2 teaspoon dried rosemary, crushed
1/2 teaspoon dried thyme
1/2 teaspoon crushed red pepper flakes
1/2 teaspoon salt
1/2 teaspoon sugar
1 cup beef broth
1/2 cup dry red wine or additional beef broth
Hot cooked pasta
Grated Parmesan cheese, optional

Steps:

  • In a Dutch oven, heat 2 tablespoons olive oil over medium-high heat. Brown pork ribs in batches; transfer to a 6-qt. slow cooker., Add remaining oil to Dutch oven; saute onion for 2 minutes. Add garlic; cook 1 minute more. Add next 11 ingredients. Pour in broth and red wine; bring to a light boil. Transfer to slow cooker. Cook, covered, until pork is tender, about 6 hours., Discard bay leaves. Remove meat from slow cooker; shred or pull apart, discarding bones. Return meat to sauce. Serve over pasta; if desired, sprinkle with Parmesan cheese.

1 pound ground pork
2 tablespoons olive oil
2 onions, chopped
1 clove garlic, crushed
3 cups red wine
2 pounds fresh mushrooms, sliced
¼ teaspoon dried rosemary

¼ teaspoon chopped fresh thyme
3 (29 ounce) cans tomato sauce
1 (6 ounce) can tomato paste
2 tablespoons grated Parmesan cheese

Steps:

  • In a large skillet, brown beef and pork over medium heat until no longer pink; set aside.
  • In a large skillet, warm olive oil over medium heat and saute onions and garlic until tender; add about 1/2 cup of wine; mix well.
  • Add mushrooms, rosemary, oregano and thyme to skillet and add another 1/2 cup wine; saute until tender.
  • Add browned meat, tomato sauce and tomato paste to mixture; simmer for 1 hour and add the remaining 2 cups of wine.
  • Simmer sauce on low for 2 to 3 hours, stirring occasionally; serve.

1/4 cup Olive Oil
2 Pounds Country Style Ribs Or Pork Neck Bones
2 Pounds Italian Sausage
1/2 Pound Ground Beef
1/2 Pound Ground Pork
1 Large Yellow Onion, (Chopped)
1 Tablespoon Garlic, (Minced)
2 Large Carrots, (Peeled and Grated)
1 1/2 Cup Red Wine
3 (28 Ounce) Cans Peeled Whole San Marzano Tomatoes (Including Juice)
6 (6 Ounce) Cans Tomato Paste (Preferably Imported From Italy)
8 Cups Water
2 Bay Leaves
1 Tablespoon Dried Oregano
1 Cup Fresh Basil, (Julienned)
2 Tablespoon Fresh Rosemary, (Chopped)
1 1/2 Teaspoon Salt
1 Teaspoon Black Pepper
1 Recipe Meatballs

Steps:

  • Heat oven to 425 degrees. Line 2 large, rimmed baking sheets with aluminum foil. Brush the foil with olive oil.
  • Arrange (in a single layer) pork neck bones or country-style ribs on one baking sheet and the Italian sausages on the second baking sheet. Brush the tops of all the meats lightly with olive oil.
  • Cook meats in the preheated oven, until deep golden brown on all sides, turning as needed to cook evenly. Allow approximately 1 hour for the pork necks and ribs and 40 minutes for the sausage. Set cooked meats aside.
  • Meanwhile, in a very large, heavy-bottomed stock pot, brown ground beef and pork, over medium heat, crumbling into small pieces. Remove ground meats to plate and set aside.
  • Drain all but 2 tablespoons of the fat from the pan. Add onions, minced garlic, and carrots and cook over medium heat for 6-8 minutes until they soften and begin to caramelize.
  • Add the wine to the pot and cook, scrape up any brown bits from the bottom of the pot. Continue to cook until the wine is reduced by half.
  • Add whole tomatoes with their juices, tomato paste, water, bay leaves, oregano, fresh basil, rosemary, salt, and pepper.
  • Add the browned grounded meats, pork necks or country style ribs, and sausages back to the pot. Bring the gravy to a boil then reduce the heat and simmer.
  • Simmer, uncovered for about 3 1/2--4 1/2 hours. If you have the temperature right, you should see a cheerful little bubbling on the surface of the gravy. Moderate the heat to maintain this gentle simmer throughout out cooking time.
  • Stir occasionally so the meats don't stick. If the gravy becomes too thick as it simmers, add water. (If it's simmering gently, you shouldn't need to add any extra water.)
  • While the sauce simmers, make the meatball. After the sauce has cooked for 3 1/2 - 4 1/2 hours and is nice and thick, give it a very good stir, digging down to the bottom of the pot, then add the meatballs. Continue to simmer the gravy without stirring for another 30-40 minutes, or until the meatballs are hot and the flavors marry. Remove bay leaves. You're READY to Serve. Mangia! Mangia!

2 pounds pork neck bones
2 teaspoons kosher salt, plus more to taste
1 teaspoon ground black pepper
2 tablespoons olive oil, divided
1 ¼ pounds Italian sausage links
1 ½ cups finely chopped white onion
2 cloves garlic, minced
2 (12 ounce) cans tomato paste
1 (28 ounce) can tomato puree
1 (28 ounce) can crushed tomatoes
7 cups water
1 tablespoon white sugar, or more to taste
1 bay leaf
1 tablespoon dried basil
½ teaspoon dried oregano
12 large cooked meatballs

Steps:

  • Sprinkle neck bones on all sides with salt and pepper.
  • Heat 4 teaspoons oil in a large, heavy-bottomed stockpot or Dutch oven over medium-high heat. Place neck bones in the pot and cook for 6 minutes, flipping halfway through. Transfer to a plate.
  • Add sausage links to the drippings and brown for 3 minutes on each side, adding remaining oil as needed. Set aside with the pork.
  • Add onion to the drippings and season with salt. Cook, stirring often, until onion is soft and translucent, about 5 minutes. Add garlic and cook until fragrant, about 1 minute. Stir in tomato paste and cook for 1 minute.
  • Add tomato puree and crushed tomatoes, than add water and sugar; cook, stirring constantly, until smooth. Add bay leaf. Rub basil and oregano between your fingers to release the aroma and add to the sauce.
  • Slice sausages into large chunks and return to the pot with the neck bones; bring to a simmer, stirring occasionally. Add meatballs, reduce heat to low, and simmer, stirring occasionally, for 4 to 6 hours.
  • Remove neck bones and bay leaf. Remove any meat remaining on the bones, shred, and return to the sauce.

6 country-style pork ribs
2 tablespoons olive oil
1 jar prepared spaghetti sauce (Ragu "or" your favorite brand)
2 teaspoons sugar
1/2 cup water
1 tablespoon Worcestershire sauce
2 cloves garlic, chopped
1 medium onion, chopped
1/2 green pepper, chopped

Steps:

  • In dutch oven or electric fry pan put 2 Tbsps oil and sear ribs on all sides.
  • Remove ribs from pan.
  • Saute onion, garlic and green peppers in same pan.
  • Put ribs back in pan.
  • Mix spaghetti sauce, water, sugar and Worcestershire sauce.
  • Pour over ribs, cover and simmer on medium low heat for about 1 to 1-1/2 hours or until cooked through and tender.
  • Serve with rice or egg noodles and a vegetable.
