Italian-style pot roast makes a perfect weekday dinner with its simple ingredients and easy preparation. While at the same time, its depth of flavor and beautiful presentation also makes it ideal for entertaining, especially over the holidays. This slow-cooked beef in a savory red wine and tomato gravy is sure to become a family favorite.

3 to 4 pound beef chuck roast
2 medium onions, chopped
4 cloves garlic, minced
1/3 cup olive oil
8 ounce can of tomato sauce
1/2 cup dry red wine
1/2 cup water
1/2 cup sliced black olives
1 teaspoon dried oregano
Salt and pepper to taste
Fresh oregano springs or fresh parsley, chopped for garnish

Steps:

  • Preheat the oven to 250 degrees.
  • Rinse the roast in water and pat dry with paper towels. Salt and pepper the roast on all sides.
  • In a large dutch oven on the stove over medium heat, brown the roast on all sides in olive oil.
  • Remove the roast and let it rest on a cutting board or a plate.
  • Meanwhile, saute the onions in the olive oil and juices from the roast in the dutch oven until they are translucent. Then, add the garlic and saute for about 30 seconds. Add the tomato sauce, wine, water, olives, and oregano and simmer for about 15-20 minutes.
  • Return the roast to the tomato mixture in the dutch oven, cover, and cook in the oven for about 2 1/2 to 3 hours at 250 degrees.
  • Remove the roast from the dutch oven and allow it to rest for about 10 minutes.
  • Slice the roast thinly and place it on a platter. Pour some of the tomato gravy over the sliced meat and add some fresh oregano sprigs or fresh chopped parsley for garnish. Serve the remaining tomato gravy in a gravy boat on the table.

For the sacchétto di spezie
One 5-inch sprig fresh thyme
5 fresh Italian, flat leafed parsley stems
2 dried bay leaves or 1 fresh bay leaf
One 5-inch sprig fresh rosemary
2 juniper berries, crushed
For the pot roast
One 2-pound piece shoulder of beef, bottom round, or pot roast
Kosher salt and freshly ground black pepper
All-purpose flour for dusting
5 tablespoons butter
1 cup coarsely chopped celery (about 2 stalks)
1 1/4 cups coarsely chopped onion (1 medium-size onion)
1/2 cup coarsely chopped carrot (1 medium-size carrot)
1 bottle (750ml) dry red wine
1/2 cup dried porcini mushrooms, coarsely chopped and soaked in 1 cup warm water
1 tablespoon tomato paste
2 cups canned whole or crushed plum tomatoes
Chicken broth or water as needed
2 tablespoons arrowroot or cornstarch
1/4 cup dry red or white wine

Steps:

  • To prepare the sacchétto di spezie:
  • Combine all the ingredients in the center of a piece of cheesecloth that is large enough to hold the herb sprigs, and tie in a bundle with butcher's string.
  • To prepare the pot roast:
  • 1. Preheat the oven to 350°F.
  • 2. Season the beef with salt and pepper, then lightly dust with flour. Melt the butter in a large (6-quart) flameproof casserole set over medium-high heat. When it is foaming, add the beef and brown it on all sides, 5 minutes. Add the celery, onions, carrot, and sacchétto di spezie. Cook, stirring occasionally, until the vegetables soften slightly, about 2 minutes. Raise the heat to high and add the bottle of wine. Cook until the wine begins to boil, about 2 more minutes, skimming off any fat that rises to the surface.
  • 3. Strain the porcini mushrooms through a fine-mesh sieve, reserving the liquid. Rinse the mushrooms under cold running water to remove any grit, and add them to the casserole along with the strained mushroom liquid, tomato paste, and tomatoes. The liquid should just cover the meat. If it does not, add chicken broth or water. Cover the casserole and bake it in the oven until the meat is cooked through and tender, about 2 hours. Remove the meat from the casserole to a cutting board, cover with aluminum foil, and set aside.
  • 4. Strain the broth through a fine-mesh sieve and discard the vegetables and herb bag. Pour the broth back into the casserole and set it over high heat. Bring to a boil and add the arrowroot and the 1/4 cup wine. Cook to reduce and thicken the liquid, about 5 minutes. Carve the meat into 1/4-inch-thick slices. Serve immediately, spooning some of the broth over each portion.

3 1/2 to 4 pound rump or chuck beef roast
1 teaspoon salt plus more to taste
1/2 teaspoon freshly ground black pepper
1/4 cup extra virgin olive oil
1 large carrot, diced (about 1 cup)
1 large celery stalk, diced (about 1 cup)
1 medium red onion, diced (1 to 1 1/2 cups)
2 garlic cloves, finely minced
2 tablespoons chopped fresh flat-leaf parsley
1 bay leaf
1 tablespoon finely chopped fresh sage
3 cups medium-bodied Italian red wine (we used a Barbera)
1 28-ounce can Italian plum tomatoes, put through a food mill to remove the seeds

Steps:

  • Deglaze the pan with wine, return meat to the pan: Add 1 cup of the wine and stir quickly, lifting up the richly browned caramelized vegetables that stick to the bottom of the pan. When the wine is almost all evaporated and thickly coats the vegetables, return the meat to the pan and turn it over a few times to coat it with the savory base.
  • Turn off the heat and let the roast sit in its juices for an hour: (You can also put the pot into a 300°F oven and turn the roast every hour.)
  • Remove meat, reduce sauce: Remove the meat from the pot and place it on a cutting board, covered loosely with aluminum foil. If the sauce is too thin, bring it to a fast boil and reduce it until it has a medium-thick consistency. Taste and adjust seasoning.
  • Cut the meat into thick slices: (it will probably fall apart), and place on warm serving dishes. Spoon the sauce over the meat and serve hot. Serve with rice, mashed potatoes, or polenta.

¼ cup extra virgin olive oil
3 pound chuck roast, rolled and tied
1 teaspoon kosher salt
½ teaspoon freshly ground black pepper
2 cups carrots, cut into one-inch pieces
1 ½ cups celery cut into one-inch pieces
2 cups onions, cut into large dice
4 tablespoons tomato paste
4 whole garlic cloves
¼ cup dark red wine, such as merlot or burgundy
2 bay leaves
8-ounce jar sundried tomatoes in oil, oil drained
1 28-ounce can crushed tomatoes
2 cups beef broth
4 sprigs fresh thyme
1 tablespoon dry oregano
1 tablespoon dry basil

Steps:

  • Preheat oven to 350 degrees F.
  • In a large Dutch oven, heat olive oil over medium high heat.
  • Pat roast dry and sprinkle on salt and pepper. Once the oil is shimmering hot, sear the meat on both ends and all the way around the outside. Total time about 15 minutes to sear the whole roast.
  • Remove the roast to a plate and add the carrots, celery and onions and cook for five minutes, stirring often.
  • Add the tomato paste and garlic and cook for two more minutes.
  • Add wine to deglaze. Cook until the wine evaporates.
  • Add the bay leaves, sundried tomatoes, crushed tomatoes, broth, thyme, oregano and basil and stir. Add the beef back in along with any liquid on the plate, cover and place in the oven for three hours, turning the beef over once about 1 ½ hours into the roasting time.
  • After the full three hours, remove the meat, let it rest under a sheet of loose foil for 10 minutes.
  • Remove and discard bay leaves and thyme sprigs then slice the beef and serve with the sauce.
  • The string should be left on while slicing to hold the roast together. OK to cut off after sliced and plated.

This recipe is just so good. The roast comes out nice a tender with great gravy. I got this recipe from the 150 best slow cooker recipes, by Judith Finlayson. I have made 3 things out of this book at the time being and every thing is very good. I will post more as I come by my favs. REMEMBER: That you should know your slow cooker. Slow cookers vary in cooking speed, hence the reason why there is a gap in cooking time. Enjoy.

3 -4 lbs cross-rib roasts or 3 -4 lbs rump roast, about
1 tablespoon vegetable oil
2 onions, thinly sliced
3 stalks celery, thinly sliced
3 large carrots, peeled and cut into 1/2 inch cubes
2 garlic cloves, minced
1 teaspoon dry mustard
1/2 teaspoon dried thyme leaves
1 teaspoon salt
1/4-1/2 teaspoon cracked black peppercorns
2 tablespoons flour
1 (10 3/4 ounce) can condensed tomato soup
1 (14 ounce) can condensed beef broth (undiluted)
1 tablespoon Worcestershire sauce
2 tablespoons packed brown sugar (optional)
2 tablespoons balsamic vinegar (optional) or 2 tablespoons red wine vinegar (optional)

Steps:

  • Pat roast dry with paper towel.
  • In a skillet, heat oil over medium-high heat.
  • Add roast and cook, turning, until brown on all sides, about 7 to 10 minutes.
  • Transfer to slow cooker.
  • Reduce heat to medium.
  • Add onions, celery and carrots to pan and cook, stirring, until vegetables are softened.
  • Add garlic, mustard, thyme, salt and pepper and cook, stirring, for 1 minute.
  • Sprinkle mixture with flour and stir.
  • Add tomato soup and beef broth and cook, stirring, until thickened.
  • Stir in Worcestershire sauce.
  • Pour mixture over roast, cover and cook on LOW for 10 to 12 hours or on HIGH for 5 to 6 hours, until meat is very tender.
  • Remove roast from slow cooker and place on serving platter.
  • Stir in brown sugar and vinegar, if using, to pan juices.
  • Pour sauce over roast or serve in a separate sauce boat.

2 cup(s) water
1 can(s) 14.5 oz diced tomatoes w/oregano, basil, and garlic
2 teaspoon(s) granulated garlic
1 teaspoon(s) black pepper
1 teaspoon(s) italian seasoning
1/2 teaspoon(s) dried basil
2 teaspoon(s) tomato paste
1/4 cup(s) flour
- **italian sausage links, opt
- **salt to taste

Steps:

  • Place roast in slow cooker. Add water and spices and diced can tomatoes, turn on to 300° or med heat. Simmer for about 2 hrs. Add Italian sausage links (optional). Simmer another hour or until roast is super tender.
  • When roast is done remove liquid to bowl and skim off fat. Add about 1 c of hot liquid to sauce pan and 1/4 c of flour and whisk together, make sure all lumps are removed. Add remaining liquid, I had about 2 c of liquid. Now in bowl mix together 2 tbsp of tomato paste and another cup of water. Add to sauce and stir in well. Let simmer about 5 min. Add salt to taste.
  • Place roast over pasta or garlic bread and spoon on sauce.

ITALIAN TOMATO GRAVY

1/2 cup extra-virgin olive oil
3 garlic cloves, chopped
Pinch red pepper flakes
2 tablespoons chopped fresh basil
2 tablespoons chopped fresh oregano
1 tablespoon fresh thyme leaves
2 bay leaves
1 onion, diced
1 carrot, finely chopped
1/4 cup red wine
Two 28-ounce cans whole peeled plum tomatoes
Pinch sugar
Salt and freshly ground black pepper

Steps:

  • Heat olive oil in a large saucepan over low heat. Saute the garlic, red pepper flakes, and herbs for 2 minutes until the herbs are fragrant and garlic is golden (but not overly brown.) Raise the heat to medium, add onion and carrot; cook for 5 minutes until they breakdown and are soft. Deglaze with red wine and reduce to evaporate the alcohol. Hand crush the canned tomatoes and add to the pot, along with its liquid. Add a pinch of sugar to cut down on the acidity from the tomatoes; season with salt and pepper. Let simmer for 30 minutes, uncovered.

1 large oven roasting bag
1 boneless beef chuck roast (3 pounds)
1-2/3 cups water

1 envelope onion soup mix
1-1/2 teaspoons Italian seasoning
1 garlic clove, minced
1/4 cup cornstarch
1/4 cup cold water

Steps:

  • Sprinkle flour into oven bag; shake to coat. Place in a 13-in. x 9-in. baking pan; add roast. In a small bowl, combine the water, tomato soup, soup mix, Italian seasoning and garlic; pour into oven bag., Cut six 1/2-in. slits in top of bag; close with tie provided. Bake at 325° for 2 to 2-1/2 hours or until meat is tender., Remove roast to a serving platter and keep warm. Transfer cooking juices to a small saucepan; skim fat. Bring to a boil. 1 boneless beef chuck roast (3 to 4 pounds)
1 can (28 ounces) diced tomatoes, drained
3/4 cup chopped onion
3/4 cup Burgundy wine or beef broth
