BISCUIT ITALIAN GROUND BEEF CASSEROLE

- Preheat oven to 375°F. Grease a 9x13-inch casserole dish with cooking spray; set aside.
- In a large skillet, cook the ground beef and onion over medium heat until meat is no longer pink and onions are just soft; about 5 minutes. Drain excess grease. Add the garlic and cook another minute, until fragrant.
- Stir in the marinara and beef broth. Bring to a boil, reduce heat and simmer for 10 minutes.
- Meanwhile, steam the vegetables in the microwave according to package directions. Remove skillet from the heat and stir in the vegetables with 1 1/2 cups of the mozzarella cheese and 1/3 cup of Parmesan. Pour mixture into prepared casserole dish.
- Remove biscuits from packaging. Split each biscuit in half. Arrange biscuits around edge of dish, overlapping slightly. Sprinkle remaining mozzarella in center of casserole. Bake 30 to 35 minutes until biscuits are cooked through and golden brown.
- Remove from oven, brush biscuits with melted butter and sprinkle with remaining Parmesan.

- Preheat oven to 350°F. Grease a 2-quart baking dish; set aside.
- In a large pot of well-salted water, cook the pasta according to the package directions for 1 minute less than al dente. Drain.
- While the pasta cooks, brown the beef and onion in a large skillet over medium heat until the meat is no longer pink, about 5-7 minutes. Add the garlic; cook for 1 more minute. Drain off excess fat.
- Stir in marinara, diced tomatoes, and Italian seasoning.
- Add the cooked, drained pasta to the beef mixture. Taste and season with kosher salt and ground black pepper. Transfer to the prepared baking dish.
- Sprinkle shredded cheese on top.
- Microwave the butter in a medium microwaveable bowl on high until melted, about 25 seconds. Stir in panko and Parmesan until fully coated; sprinkle evenly over the casserole.
- Bake, uncovered, for about 25 minutes, or until the topping is golden brown and the inside of the casserole is heated through.

- Preheat the oven to 375ºF. Spray a 13×9-inch baking dish with nonstick cooking spray.
- In a large skillet, cook the ground beef, breaking up as it cooks. When it is about half-way cooked through, add the onion and continue to cook until the onion is soft and the ground beef is fully cooked. Drain, if necessary, and season to taste with salt and pepper.
- Add the 3/4 cup water, tomato sauce and tomato paste. Simmer over medium-low heat for 15 minutes, stirring occasionally.
- Spread half of the hot meat mixture in the bottom of the prepared baking dish. Top with 2/3 cup of the mozzarella, then spread the vegetables evenly over the cheese. Top with another 2/3 cup of mozzarella. Spread the remaining meat mixture over the top. Sprinkle the remaining cheese over the top.
- Open the biscuits and split each biscuit in half lengthwise, making 16 thinner biscuits. Arrange layers of the biscuits over the top, overlapping, in 3 rows of 5 each. (You will have one half of a biscuit leftover.)
- Brush the melted butter over the tops of the biscuits. Sprinkle with the oregano. Bake the casserole until golden brown, about 25 minutes.

- Preheat the oven to 350 degrees F (175 degrees C). Spray a glass baking dish (such as Pyrex®) with cooking spray.
- Heat oil in a pan over medium-high heat. Add carrots, onions, and celery and saute until onions are translucent, 5 to 7 minutes.
- At the same time, heat a large skillet over medium-high heat. Cook and stir ground beef in the hot skillet until browned and crumbly, 5 to 7 minutes. Drain and discard grease.
- Move beef to one side of the skillet and melt butter over medium heat. Whisk in flour a little at a time until combined; whisk in milk, whisking constantly to prevent lumps. Stir in beef broth. Add sauteed vegetables, garlic salt, onion powder, garlic powder, and black pepper. Bring to a boil; cover and remove from heat.
- Add buttermilk to baking mix. Stir until a soft dough forms. Place on waxed paper. Roll to 1/2-inch thickness. Cut with a 2 1/2-inch round biscuit cutter dipped in baking mix.
- Pour the beef mixture into the prepared baking dish and top with biscuits.
- Bake in the preheated oven until biscuits are browned, 24 to 25 minutes.
