1 cup butter, softened
1 cup crunchy peanut butter
2 tablespoons vanilla extract
3-1/2 cups confectioners' sugar
2 cups graham cracker crumbs
2 cups chopped walnuts
1-1/3 cups sweetened shredded coconut
2-1/2 cups semisweet chocolate chips
4 teaspoons shortening
Chopped nuts or sprinkles

Steps:

  • In a large bowl, cream the butter, peanut butter until light and fluffy Beat in vanilla. Gradually add confectioners' sugar and mix well. Stir in the cracker crumbs, walnuts and coconut. Shape into 1-in. balls. Place on baking sheets; cover and refrigerate for at least 1 hour., In a microwave, melt chocolate chips and shortening; stir until smooth. , Dip balls into melted chocolate; allow excess to drip off. Roll in nuts or sprinkles. Place on waxed paper until set. Store in an airtight container in the refrigerator.

180ml (¾ cup) unsweetened, shredded coconut
125ml (½ cup) smooth peanut butter
60ml (¼ cup) pitted Medjool dates, chopped
45ml (3 tbsp) coconut oil
5ml (1 tsp) vanilla essence
extra unsweetened, shredded coconut, for rolling

Steps:

  • Place all the ingredients in a food processor and blend until all ingredients are incorporated evenly.
  • Divide the mixture evenly and roll the portions into even-sized 5cm (2in) balls.
  • Roll the balls in extra shredded coconut to give them an attractive coating making them easier to handle.
  • Store for up to 2 weeks in an airtight container in the fridge.

2 tablespoons honey (or maple syrup)
1/2 cup rolled oats
1/3 cup coconut chips
1/4 cup hemp seeds
1 teaspoon Ceylon cinnamon
1 teaspoon vanilla extract

Steps:

  • In a large mixing bowl add 2 tablespoon honey, 1/2 cup creamy peanut butter and 1 teaspoon vanilla extract. Mix using spatula or whisk until you get nice tick and sticky mixture.
  • Add in 1/2 cup rolled oats, 1/3 cup coconut chips, 1/4 cup hemp seeds and 1 teaspoon Ceylon cinnamon. Mix everything together using spatula.
  • Using a spoon, scoop out the dough and roll between your palms to form a ball. Repeat with remaining dough.
  • Place balls on a plate, serving tray or in an airtight container and refrigerate to harden.
  • Serve and enjoy!

1 cup confectioners' sugar
1/2 cup creamy peanut butter (see Cook's Note)
4 tablespoons unsalted butter, at room temperature
1 teaspoon pure vanilla extract
1/4 teaspoon kosher salt
6 ounces bittersweet chocolate, roughly chopped

Steps:

  • Beat the confectioners' sugar, peanut butter, 2 tablespoons of the butter, vanilla extract and salt in a large bowl with an electric mixer until combined and smooth. Roll the mixture into 24 equal-sized balls (about 1 teaspoon each) and place them on a small baking sheet or tray. Chill in the freezer until firm, about 15 minutes.
  • Meanwhile, heat the chocolate and the remaining 2 tablespoons butter in a small microwave-safe bowl in 20 second intervals, stirring between each with a rubber spatula, until melted and smooth.

1/2 cup honey
1 1/2 cups old-fashioned oats
1/2 cup unsweetened coconut flakes

Steps:

  • Stir together the nut butter and honey in a medium bowl. Set aside.
  • Place the oats in a food processor or blender and pulse until finely ground. Transfer to the nut butter mixture and stir until thoroughly combined.
  • Scoop 1 tablespoon of the mixture at a time with a small portion scoop or a spoon and roll into a ball or log. Transfer to a rimmed baking sheet.
  • Place the coconut in a separate bowl or plate and roll each ball in the coconut to completely cover.

1 1/2 cups graham cracker crumbs
1 cup pecans, finely chopped
1 cup flaked coconut
1 lb confectioners' sugar
1 teaspoon vanilla
12 ounces peanut butter
2 ounces paraffin wax
12 ounces semi-sweet chocolate chips

Steps:

  • Melt the butter and mix in the finely ground graham crackers, nuts, coconut, confectioner's sugar, vanilla, and peanut butter.
  • Roll about 80 walnut-sized balls and place on wax paper lined tray.
  • Melt the paraffin and chocolate chips in top of double broiler; mixing well.
  • Keep mixture warm while dipping balls. Insert toothpick to dip and remove toothpick when placed on tray.
  • When finished dipping put tray in freezer to set.
  • Store covered.
