CRUSTY ITALIAN GARLIC BREAD
This two step process makes this crunchy garlic bread taste like perfection!! And the smell.... well, just TRY IT!

Steps:
- In a medium size bowl add butter and allow butter to sit for a couple of hours to come to room temperature. You can also microwave until it is at room temperature as well, but do not allow butter to melt!
- Preheat oven to 350 degrees.
- Add the garlic and parsley to the butter and mix well.
- Rub the basil and oregano between the palms of your hands to release the flavor and throw in the bowl. Mix content of the bowl well.
- Remove about 1/3 of the Garlic Butter Spread to use later.
- Cut your bread in half the long way. Spread about 2/3 of the Garlic Butter Spread onto the halves of the bread. Place each half directly on your oven rack and bake for 10 minutes.
- Remove from oven and allow bread to cool until you can handle the loaves.
- Turn oven to broil.
- Slice bread into thick slices (about 2" thick). Place bread on cookie sheet and spread with the extra Garlic Butter Spread.
- Place cookie sheet in oven and broil bread slices for 3 - 5 minutes, or until nicely browned to your taste. Make sure to watch VERY carefully so bread does not burn.
- Place a large clean kitchen towel in a bread basket and wrap the towel over the bread until served but no more than a couple of minutes or bread could get soggy!
- In my house, this serves about 3 or 4 because we eat this bread like CRAZY!

- Preheat oven to 350.
- In a small bowl combine the garlic and oil and mix well.
- In a small bowl combine parsley, thyme, marjoram and paprika; add Parmesan; mix well.
- Cut each loaf lengthwise.
- NOTE: If you prefer extra garlic flavor take the halved clove and rub the clove's cut side on the cut side of bread.
- Brush with garlic oil.
- Sprinkle herb mix on top of garlic oil.
- Wrap loosely (do not let foil touch oil/herb mixture) in foil and place on baking sheet.
- Bake until heated through, about 10-15 minutes.
- Unwrap and slice.

- Arrange a rack in the center of oven and preheat to 450 degrees F.
- Melt the butter in a small skillet over medium heat. Add the garlic and cook, stirring occasionally, until the butter is golden and the garlic is very fragrant, about 3 minutes.
- Slice the bread in half lengthwise. Liberally brush the crust with the garlic butter. Turn the bread cut-side up. Slice each loaf crosswise at 2-inch intervals without cutting all the way through, making "pull-apart" garlic bread. Liberally brush the cut sides of the bread with more garlic butter, spreading any remaining garlic evenly over top. You should use all the garlic butter. Carefully transfer the bread to a rimmed baking sheet.
- Sprinkle the loaves with the Parmesan and a pinch of salt and bake until the edges of the bread are a deep golden brown, 10 to 15 minutes. Top with the parsley. Serve warm.

- Preheat the oven to 450 degrees F. (Make sure your oven is clean or it will smoke!)
- Melt the butter in a small saucepan over low heat. Add the garlic, stir to coat with the butter, and cook, covered, for 20 minutes, stirring occasionally, until the garlic is very tender. Transfer to a small bowl and set aside until cool enough to handle. Mash the garlic in the butter with a fork. Stir in the Parmesan, parsley, lemon zest, red pepper flakes, 1 1/2 teaspoons kosher salt, and 1/2 teaspoon black pepper.
- Slice the baguette in half lengthwise and place both halves, cut sides up, on a cutting board. Score each half diagonally (don't cut all the way through) in large serving-size pieces. Spoon all of the garlic mixture generously on the cut sides of the bread. Cut each half of the baguette in half crosswise along a score and place the 4 pieces on a sheet pan lined with parchment paper.
- Bake for 5 to 7 minutes, until the topping is bubbly and starting to brown and the bread is crisp. Transfer to a board, cut in serving pieces along the scores, sprinkle with fleur de sel, and serve warm.

- Combine garlic, butter, and oil in a microwave safe dish or in a small saucepan. Heat garlic and butter and oil in microwave for 1 minute or in a small pot over moderate-low heat for 3 minutes.
- Toast split bread under broiler. Remove bread when it is toasted golden brown in color. Brush bread liberally with garlic oil. Sprinkle with cheese, if using, and parsley. If you added cheese, return to broiler and brown 30 seconds. Cut into chunks and serve.

- Place the garlic in the bowl of a food processor and process until minced. Add the parsley, oregano, salt and pepper and pulse twice.
- Heat the olive oil in a medium saute pan and add the garlic mixture. Remove the pan from the heat.
- Slice the ciabatta bread in half horizontally, and spread the butter on 1 half. Spread the garlic mixture on the other half of the bread, and put the halves together. Wrap the bread in aluminum foil.

Steps:
- Slice loaf, LEAVING CRUST INTACT, into slices.
- It is important NOT to slice through the bottom.
- Set aside.
- Mix butter with other ingredients.
- Allow to sit on counter a while, so flavors travel all through the butter.
- Take a length of foil, and place loaf lengthwise on the foil.
- Very gently, spread slices apart, being careful not to break bottom, and spread with butter mixture.
- When all slices are spread, use any leftover butter to spread the top of the loaf.
- Wrap sides of foil up.
- Leave top UNCOVERED.
- Twist ends of foil.
- Bake on tray for about 20-30 minutes in a 350 degree oven.
- This is great with spaghetti or lasagna.
- When baking lasagna, just put it in with the lasagna for the last half hour of baking time.

- In large bowl thoroughly mix 1 1/2 cups flour, sugar, salt and undissolved yeast.
- Add butter.
- Gradually add warm water to dry ingredients and beat 2 minutes with mixer at medium speed, scraping bowl occasionally.
- Add 3/4 cup flour.
- Beat at high speed for 2 minutes, scraping bowl occasionally.
- Stir in enough additional flour to make a stiff dough.
- Turn dough onto a lightly floured board and knead until smooth and elastic (about 8-10 minutes).
- Cover dough with plastic wrap and then a towel and let it rest for 20 minutes.
- To make loaves: Divide dough in half.
- Roll each half into a 15x10 inch rectangle.
- Starting at wide side, roll up tightly; pinch seam to seal.
- Taper ends by rolling gently back and forth.
- To make rolls: Divide dough into 6 equal pieces.
- Roll each piece into a rectangle 8x5 inches.
- Starting with wide side, roll up tightly; pinch seam to seal.
- Taper ends.
- Place the shaped dough seam side down on greased baking sheets sprinkled with cornmeal.
- Brush dough with oil.
- Cover loosely with plastic wrap and refrigerate 2-24 hours.
- When ready to bake, remove from refrigerator and uncover carefully.
- Let dough stand at room temperature for 10 minutes.
- Make 3 or 4 diagonal slits in dough with a sharp knife or razor blade.
- Bake at 425°F for 15 minutes for rolls, 20 minutes for loaves.
- Remove from oven and brush with egg white beaten with cold water.
- Return to oven; bake 5-10 minutes longer, or until golden.
- **Note: I sometimes add 1/2 to 1 teaspoon (adjust amounts to your preferences) of dried oregano OR basil OR rosemary to the dry ingredients.
- Sometimes I also add 1 bulb (head) of roasted garlic cloves to the dry ingredients.
- To roast garlic: Peel as much of the outer skin away as possible, leaving the cloves unpeeled and the head intact (optional: trim the tips of the cloves off to expose the"meat" to the oil).
- Place head (s) in covered casserole or on a piece of heavy aluminum foil.
- Drizzle with olive oil, and bake covered at 350 degrees for about 45 minutes (mine takes over an hour in a terra-cotta garlic baker), or until cloves are soft and can be squeezed easily out of their skins.
- Let roasted garlic cool before adding to the flour for the bread.
