Time 20m

Yield 1 serving

Number Of Ingredients 12

3 tablespoons salted butter, melted
1 tablespoon grated Parmesan
1/2 teaspoon Italian seasoning
Pinch crushed red pepper
2 slices bread
1 tablespoon plus 1/4 cup marinara sauce, warmed
2 slices mozzarella

2 ounces pepperoni
1 mini sweet pepper, sliced thin
1 to 2 tablespoons black olives
4 fresh basil leaves

Steps:

  • In a small bowl, mix together the butter, Parmesan, Italian seasoning and crushed red pepper. Brush one side of each slice of bread with this mixture.

Spread 1 tablespoon marinara sauce on the bread and layer on the mozzarella, provolone, pepperoni, pepper slices, olives and basil leaves. Top with the second slice of bread, butter-side up. Toast in the skillet, flipping as needed, until the bread is golden and the cheese has melted, 4 to 5 minutes.

Categories     main-dish

Time 50m

Yield 12 servings

Number Of Ingredients 10

1 cup ricotta
2 cups shredded mozzarella, plus for decorating
1 1/4 cups freshly grated Parmesan
1/2 cup diced pepperoni, plus 12 large slices and 4 slices for garnish
2 tablespoons chopped fresh basil
6 tablespoons butter, at room temperature
12 slices rustic white bread
3/4 cup jarred marinara sauce, plus more for dipping, optional
36 black olive slices
18 green olive slices

Steps:

  • Preheat the oven to 425 degrees F.
  • In a medium bowl, using a rubber spatula, mix together the ricotta, mozzarella, 1/2 cup of the Parmesan, the diced pepperoni and the basil until well combined.
  • Butter one side of each slice of bread. Working buttered side down, spread each slice with 1 tablespoon of the marinara. Divide the cheese mixture among 6 slices of the bread, and sandwich with the remaining slices. For each sandwich, sprinkle the top piece of bread with 1 tablespoon of the remaining Parmesan. Flip, and sprinkle the other side with an additional tablespoon of Parmesan.
  • To make all of these sandwiches at once, heat 2 baking pans in the oven for 10 minutes. Spray the bottom of one of the pans with cooking spray, and place the buttered and Parmesan-ed sandwiches in the pan. Spray the underside of the second pan, and place it on top of the sandwiches. Bake until golden brown and crispy, and the cheese is melted, 10 minutes.
  • Cut each sandwich into 3 pieces. Using a few shreds of mozzarella cheese as glue, make a face using the black olive slices as eyes, the green olive slices as a nose, and the pepperoni slices as a mouth. Melt for 4 minutes in the oven to adhere.
  • Serve with marinara for dipping if desired.

SHEET PAN GRILLED CHEESE SANDWICHES

Sheet Pan Grilled Cheese Sandwiches image

Everyone loves a grilled cheese, but when making sandwiches for a crowd, who wants to stand over the stove making them one by one? Not me! My hack of baking them on a sheet pan in the oven means the sandwiches will be ready at the same time, and I can enjoy hanging out with my friends and family while the oven does all the work.

Time 30m

Yield 6 servings

Number Of Ingredients 15

12 slices assorted bread, such as Texas Toast, pumpernickel, and sourdough
1 stick (8 tablespoons) salted butter, at room temperature
12 slices assorted cheese, such as American cheese, Cheddar and Muenster cheese
1 cup Kardea's Pimento Cheese, recipe follows
Toppings, such as sliced roasted red peppers, pickles, sliced ham, sliced turkey, sliced tomatoes, fresh basil, sliced red onion and/or pulled pork
8 ounces extra-sharp yellow Cheddar, shredded (about 2 cups)
8 ounces cream cheese, at room temperature
4 ounces white Cheddar, shredded, preferably Vermont Cheddar (about 1 cup)
4 ounces diced pimentos, drained and juice reserved
3 tablespoons mayonnaise
1 tablespoon finely chopped fresh chives
1 teaspoon garlic powder
1/2 teaspoon cayenne pepper
1/2 teaspoon smoked paprika
Kosher salt and freshly ground black pepper

Steps:

  • Arrange a rack in the bottom of the oven, place a large rimmed baking sheet on the rack and preheat to 450 degrees F.
  • Spread one side of 6 slices of bread with 4 tablespoons of the butter and place, buttered sides down, on a second large rimmed baking sheet.
  • Top each buttered bread slice with 1 slice of cheese or some of Kardea's Pimento Cheese and your desired toppings. Top with another slice of cheese and the remaining 6 bread slices. Spread the tops of the bread slices with the remaining 4 tablespoons of the butter.
  • Carefully remove the hot baking sheet from the oven, and place it on top of the uncooked sandwiches, rimmed edges up. Press down on the sandwiches.
  • Place the stacked baking sheets in the oven on the bottom rack. Bake until the cheese is melted and the bread is golden brown and crispy, 10 to 12 minutes. Serve immediately.
  • Add the yellow Cheddar, cream cheese, white Cheddar, pimentos and mayonnaise to a bowl and mix together. Add the chives, garlic powder, cayenne, smoked paprika, salt and pepper and mix until thoroughly combined.

PIZZA GRILLED CHEESE

Pizza Grilled Cheese image

A super quick and easy meal that everyone in your family will love, even the picky ones. My mom used to make this for dinner all the time when I was growing up. My brother and sister still love it as much as me!

Time 12m

Yield 1 sandwich

Number Of Ingredients 7

2 slices cheese
left over spaghetti sauce
4 pieces pepperoni
sliced mushrooms
sliced olive
2 pieces bread

  • Butter the bread like you would to make a normal grilled cheese.
  • Put a piece of cheese on the butter side down piece of bread.
  • Put a generous amount of spaghetti sauce on the piece of cheese.

ALEA'S PIZZA GRILLED CHEESE SANDWICHES

Alea's Pizza Grilled Cheese Sandwiches image

Growing up my mom often made tomato soup and grilled cheese sandwiches. And I'll be honest, it wasn't one of my favorite meals. But when I saw a recipe for Carmelized Onion Grilled Cheese, I thought, "Now that's a grilled cheese sandwich!" That adaptation made me start thinking of ways I could alter traditional grilled cheese sandwiches to make them more appealing to my children (and me!). You need pizza sauce and cheese, but all of the other ingredients are optional. Use your favorite pizza toppings as the filling. I used Sargento's Natural Blend Cheddar and Mozzarella cheese, pepperoni, onions, and peppers. Instead of brushing the bread with butter or oil, I brush the skillet with olive oil. That is enough to keep the bread from sticking and produces a crunchy bread. The Pizza Grilled Cheese Sandwiches were hugely popular with my kids. One of my kids actually liked the Pizza Grilled Cheese Sandwiches better than pizza.

  • To crisp salami (optional), heat a 10-inch or 12-inch cast-iron skillet over medium low heat. Place salami in the skillet and cook until crispy (should only take 2 to 4 minutes). Stay with it because it can burn quickly. Drain salami on some paper towel.Note: After the salami is cooked, you can chop smaller (if you like); this makes the sandwich easier to eat, so you aren't biting off huge slices of salami.
  • Spread 1 tablespoon of butter among the 4 slices of bread (on both sides).Note: You may use less (or more) butter, depending on how large your slices of bread are and how buttery you like things.
