Italian Stuffed Chicken Roll-Ups image

These Italian stuffed chicken roll ups are so easy to make and are incredibly delicious. Made with provolone cheese and slices of prosciutto these are sure to please the whole family!

1.5 - 2 lbs. thinly-sliced chicken breasts
3 ounces thinly-sliced deli ham or prosciutto
4 slices or about 3 ounces provolone cheese
2/3 cup Italian seasoned breadcrumbs
½ cup grated Parmesan cheese
¼ cup minced fresh parsley (or 1-2 tablespoons of dried parsley flakes)
½ cup milk

Steps:

  • Preheat oven to 425F (220C). Spray a large baking sheet with cooking spray and set aside.
  • In a shallow bowl, combine breadcrumbs, Parmesan cheese, and parsley. Pour milk into a separate bowl.
  • Place a slice of ham and a slice of provolone cheese on each chicken breast. Depending on the size of your ham and cheese slices, you may need to trim them or cut them in half so that they are not hanging too far out of the roll-up.
  • Roll up chicken and secure with toothpicks.
  • Dip chicken rolls in milk, then coat with a light coating of the crumb mixture.
  • Place chicken seam-side down on prepared baking sheet.
  • Lightly spray chicken with cooking spray (this will help it turn golden brown!).
  • Bake, uncovered, for about 25 minutes or until chicken is cooked through. Remove toothpicks and serve!

1/4 cup finely chopped green peppers
1/2 tsp. dried oregano leaves
1/8 tsp. garlic powder
1 cup KRAFT Finely Shredded Italian* Five Cheese Blend, divided
4 small boneless skinless chicken breasts (1 lb.), pounded to 1/4-inch thickness
1 cup CLASSICO Tomato and Basil Pasta Sauce

Steps:

  • Heat oven to 400°F.
  • Mix first 4 ingredients until blended. Add 1/2 cup shredded cheese; mix well. Shape into 4 logs. Place 1 log on one short end of each chicken breast; press lightly into chicken. Roll up tightly, tucking in both ends of each breast around filling to completely enclose filling.
  • Place, seam sides down, in 13x9-inch baking dish sprayed with cooking spray; top with pasta sauce. Cover.
  • Bake 30 min. or until chicken is done (165°F). Top chicken with remaining shredded cheese; bake 3 to 5 min. or until melted.

2 cups spinach
½ cup ricotta cheese
¼ cup parmesan cheese
4 chicken breasts, thinly sliced
2 eggs, beaten
1 cup seasoned breadcrumbs
1 cup marinara sauce
4 slices mozzarella cheese
fresh basil, chopped
salt, to taste
pepper, to taste

Steps:

  • Sauté the garlic and spinach in oil until the spinach wilts. Add the ricotta, parmesan, salt, and pepper, and stir until heated.
  • Preheat oven to 450°F (230°C).
  • Salt and pepper the chicken breasts, add the cheese mixture, and roll 'em up.
  • Dip each chicken breast roll-up in the egg, then the breadcrumbs, and place in a 8×8 (20 x 20 cm) or 9×9 (22 x 22 cm) baking dish seam side down.
  • Bake for 25 minutes.

8 boneless skinless chicken breast halves (4 ounces each)
8 thin slices (4 ounces) deli ham
4 slices provolone cheese, halved
2/3 cup seasoned bread crumbs
1/2 cup grated Romano or Parmesan cheese
1/4 cup minced fresh parsley
1/2 cup milk
Cooking spray

Steps:

  • Preheat oven to 425°. Flatten chicken to 1/4-in. thickness. Place a slice of ham and half slice of provolone cheese on each piece of chicken. Roll up from a short side and tuck in ends; secure with a toothpick. , In a shallow bowl, combine crumbs, Romano cheese and parsley. Pour milk into another bowl. 4 boneless skinless chicken breasts
1 teaspoon dried basil
1/4 teaspoon pepper
1/4 teaspoon salt
4 (1 ounce) part-skim mozzarella cheese, string
cooking spray
1 cup tomato sauce

Steps:

  • Preheat oven to 350°F.
  • Place each chicken breast between 2 pieces of heavy-duty plastic wrap, pound to 1/4 inch thickness using a meat mallet or rolling pin.
  • Combine basil, salt and pepper; sprinkle half of mixture evely over both sides of chicken.
  • Place 1 string cheese stick across the center of each flattened chicken breast. Roll up chicken jelly roll fashion, starting with short end. Place chicken roll-up, seam side down, in an 11 x 7 inch baking dish. Sprinkle with remaining half of spice mixture, and coat with cooking spray. Cover and refrigerate up to 8 hours.
  • Pour tomato sauce over chicken. Bake uncovered, at 350F for 35 minutes or until chicken is done and tomato sauce heated.

4 skinless, boneless chicken breasts
1 cup dried bread crumbs, seasoned
½ cup grated Parmesan cheese
¼ cup butter, melted
1 (7 ounce) package garlic cheese spread

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Pound chicken breasts until thinned out. In a shallow dish or bowl mix together bread crumbs and cheese. Dip one side of each breast into melted butter or margarine, then into crumb/cheese mixture. Place a dollop of cheese spread at one end of each chicken breast, on the side of the breast not dipped in the mixture. Roll up each breast and secure with toothpicks.

1/2 lb part-skim ricotta cheese
8 ounces part-skim mozzarella cheese
2 teaspoons basil

1/2 cup kalamata olive, chopped
8 ounces tomato sauce

Steps:

  • mix together the ricotta cheese, mozzarella (reserving 1/2), olives, and the herbs.
  • place the pieces of chicken on a lined cookie sheet (with foil) flat.
  • scoop a table spoon of the cheese mixture onto each of the chicken pieces and roll them.

3 cups Italian-style tomato sauce
6 boneless skinless chicken breast halves
1/2 cup mozzarella cheese, set aside
spaghetti
1/2 cup low-fat ricotta cheese
3 tablespoons grated parmesan cheese
1 tablespoon snipped fresh parsley

Steps:

  • Preheat oven to 375 degrees.
  • Pound chicken breast halves until they are about 1/4 inch thick.
  • In a medium mixing bowl, combine the low-fat ricotta cheese, 3 Tbsp grated Parmesan cheese and 1 Tbsp snipped fresh parsley.
  • Spoon about 1 1/2 Tbsp of cheese mixture onto each chicken breast.
  • Fold in long sides and then roll from short end.
  • Place seam side down in sprayed 8 x 8 inch baking dish.
  • Measure out 1 cup of sauce; set aside.
  • Next pour remaining 2 cups of tomato sauce over stuffed chicken breast.
  • Cover baking dish with aluminum foil.
