HOW TO MAKE THE BEST CHARCUTERIE BOARD | REAL SIMPLE

- Stock up on a solid selection. When you're shopping for a charcuterie board, you'll want to get three to five different types of meats. As with a cheese board, try and mix up the colors, textures and flavors.
- But only buy what you need. Cured meats can get kind of expensive, and there's no need to go overboard in buying. Aim for about two ounces of meat per person, total.
- The slice is right. Oftentimes, these meats are rich and salty. So when you're shopping, ask the person at the counter to slice the meat as thinly as possible.
- Pick the perfect sides. Accompaniments make charcuterie look and taste even better, so pick up some nuts, dried or fresh fruit, olives, or pickles, plus one or two sauces, like mustard, honey, or tapenade.
- Consider your serving strategy. Now you're ready to build! You want to use something large and flat as a base: a wooden or slate board provides a nice contrast with the color of the meat, though you could also use a platter or large plate.
- Consider the composition. To start, arrange your small bowls off-center, and place the meat and accompaniments around them. As you work, think about the overall look: place non-meaty elements like crackers, fruit, and nuts between the various kinds of charcuterie, and change up the look of the meat itself.
- Prep it in advance. Don't be afraid to make this a few hours before your party—just cover with plastic and refrigerate until you're ready to serve. (More than a few hours, though, and the meat might start to dry out.)

- Prepare your platter for arranging and pull out all of your ingredients. Start by arranging any components you're serving in bowls around the platter.
- Next, start placing the larger components on the board, using the bowls as your starting point. Think about texture, shape, and color when deciding what goes where. As you start placing things, don't worry about filling in all the space just yet. Reserve some of each component to fill in space later, if needed. For texture, roll up, fold, or fan out the meat, crumble or slice the cheese. For shape, think about placing contrasting different shapes near each other and putting similarly shaped items further away from each other. Similarly, think about adding contrast to your board by mixing up the colors. Keep flavors that go nicely together near each other, and away from clashing components.
- Reserve smaller or more neutral items for last to fill in the empty space. Nuts and crackers work great for this. Once you’ve placed all your main components, sprinkle nuts or scoot in some crackers to fill in all the empty spaces on your board.

- Prosciutto and Fig Salad Board. The tough part about serving salad from a bowl? All the toppings (read: the best part) fall to the bottom. Using a fancy cutting or charcuterie board solves that problem.
- Fruicuterie Board. If there are vegetarians at the party, build an epic cheese board sans-meat. Here, five types of cheese meet an array of fresh fruits (kiwi!
- Ultimate Cheese Plate with Roasted Grapes. Every charcuterie board should have something unexpected on it, like herb-kissed roasted grapes. They turn uber sweet and jammy after a stint in the oven.
- Spanish Tapas Board. If you're having trouble nailing down your cheese board's elements, choosing a specific theme can help. This pick boasts Spanish favorites like heirloom pan con tomate, patatas bravas with saffron aioli, manzanilla olives, marcona almonds and Serrano ham.
- Presidential Cheese Board. Treat your guests like VIPs. All of the board's components are inspired by past presidents' favorite foods.
- Dairy-Free Cranberry Rosemary Cheese Roll and Charcuterie Board. Yeah, we’re serious. Soaked cashews and light miso make this dairy-free gem possible.
- Charcuterie Board Two Ways. The first board is for meat and cheese lovers. The second puts hummus, tapenade, nuts and crudités front and center for your vegan friends.
- Summer Charcuterie Snack Board. We’d have this for our last meal, Gaby Dalkin. Catch us munching away on the patio with a glass of vino in hand.
- Antipasto Appetizer Cheese Board. This starter has a little something for everyone. Our favorite part is the pearl mozzarella marinated in olive oil, herbs and spices, but the marinated artichoke hearts are a close second.
- Maple Cream and Apple Baked Brie Board. That crostini bar, though. This autumnal beauty has Thanksgiving cocktail hour written all over it.

- Place Your Cheese. In reality, you can put together your meat and cheese board any way you want! There are no rules and that is what makes it so wonderful.
- Add The Meat. Next, add a variety of meat to the board. I like to stick to four to five types of meat. The key to a pretty display is to pull apart the meat from the packaging and place it in piles around the cheese.
- Add Groupings of Nuts. Next, add piles of nuts around the board. This can be omitted completely if you have a nut allergy in the family. However, it is a traditional part of a charcuterie board.
- Pile on the fruit. After you have the base of your board complete, it’s time to add fruit. This is my favorite part of a meat and cheese board because the fruit adds lots of flavor and provides the most versatility for flavor combinations.
- Surround the Board with Grains. The final step for the larger pieces of the board is to add grains. I prefer to use a variety of crackers, but you can also include crusty breads.
- Olives are a must for Italian charcuterie. A large component of an Italian charcuterie board is the olives. There are so many olive varieties that you can include!
- Jams, Jellies & Honey. The final essential element is the spreads. Choose your favorite jams and jellies and put them into small dishes. And, honey is always a favorite addition as well!

- To roast a whole head of garlic, start by preheating your oven to 400°F, peel and discard the papery outer layers of the whole garlic bulb (leaving intact the skins of the individual cloves of garlic), slice off the top of the garlic by cutting 1/4 to a 1/2 inch from the top of the cloves, place on a piece of foil in a small baking dish, drizzle with a little olive oil, and gently enclose the garlic head in the aluminum foil. Then bake for 30 – 40 minutes. Once cooked and slightly cooled, add to your charcuterie board. (The caramelized garlic cloves taste SO good on bread, etc.)
- To roast red pepper, preheat your oven to 425°F, gently coat a whole red pepper, stem and all, with a small amount of olive oil. Place on a foil-lined baking dish, and allow skin to blacken, turning every 5-10 minutes or so to roast all sides. Carefully remove the red pepper using tongs and place into a zip top bag. Close the bag and put the roasted pepper into the refrigerator. Once chilled, remove from the refrigerator and peel the red pepper. (Hint: the roasted skin peels/slides off SO much easier when the roasted pepper has been chilled in the fridge.)
- Prepare the Aidells Italian Meatballs by sautéing in a pan with a little olive oil for a few minutes until they’re lightly browned on all sides. Once done, put the Italian Meatballs in a bowl and set on your charcuterie board.
- Cook the tortellini or ravioli according to the package instructions. Once done, put in a bowl and set on your board.

- Sopressata: Mild salami, made with garlic and red chili flakes. The flavor is mild, despite the red chili flakes, and it is a great staple as it pairs well with most wines and cocktails.
- Finnochiona: mild salami, made with fennel. Don’t be turned off by the fennel- this flavor enhances pork like no other and is a key ingredient in the seasonings for the Italian delicacy, porchetta.
- Coppa (Mild or Spicy): Typically a fattier cut, this one will be similar to prosciutto, in the thin layer of fat up top, but will be shorter lengthwise, and have a more dense flavor.
- Pecorino (Toscano or Tartufo): Sheep’s milk cheese is a must-have on an Italian board. Not only is it generally mild and flavorful on its own, but it will be a great compliment to any of the charcuteries on your board.
- Breadsticks: I love putting out a handful of breadsticks off to the side for people to munch on casually. These are also great when entertaining, as guests can just grab one as they are making the rounds.
- Castelvetrano Olives: My all-time favorite olives, these are bright green and have more of a nutty flavor than black olives.
- Marcona Almonds: Not exactly Italian, but Marcona Almonds are perfect on any board. Look for truffle seasoned ones, though avoid rosemary seasoned (they can be too pungent, and may clash with other components)
