TUSCAN TOMATO AND BREAD SOUP - PAPPA AL POMODORO

Extra virgin olive oil, plus high quality finishing oil, for garnish
1 large red onion, diced
Kosher salt
Pinch crushed red pepper flakes
3 garlic cloves, smashed and finely chopped
1 cup white wine
2 pounds ripe summer tomatoes, diced
10 basil leaves, half whole and half cut into chiffonade
2 cups tomato juice
2 cups day-old Italian bread, crusts removed and cubed
1/2 cup grated Parmigiano-Reggiano

Steps:

  • Coat a large wide pot with olive oil over medium heat and add the onions. Season with salt and crushed red pepper, to taste, and cook until the onions are soft and very aromatic, about 8 to 10 minutes. Toss in the garlic and cook for 2 to 3 more minutes. Add the wine and cook until it has reduced by half. Stir in the tomatoes, season with salt, to taste, and cook until the tomatoes are really soft and juicy, about 12 to 15 minutes. Toss in the whole basil leaves.
  • Working in batches, carefully puree the tomatoes in a blender*. Return the tomato puree to the pot and add the tomato juice and the bread. Cook the soup over medium heat for until the bread has completely lost its shape and the soup is really thick, about 20 minutes. Taste the soup and adjust the seasoning, if needed.
  • Ladle the soup into bowls and serve garnished with grated cheese, basil chiffonade and a drizzle of big fat finishing oil.

1 tablespoon olive oil
1 large red onion, diced
2 carrots, diced
1 stalk celery, diced
4 potatoes, diced
10 (5 inch) zucchini, diced
1 leek, sliced
1 quart hot water
1 bunch Swiss chard, chopped
1 head Savoy cabbage, quartered, cored and shredded
1 bunch kale, shredded
2 (15.5 ounce) cans cannellini beans, drained and rinsed
salt and ground black pepper to taste
3 tablespoons tomato puree
8 slices day-old bread

Steps:

  • Place the olive oil in a deep pan and heat over medium-high heat. Stir in the onion, and cook until transparent, about 5 minutes. Mix in the carrots, celery, potatoes, zucchini, and leek. Stir and cook 5 minutes more. Pour in the hot water to cover the vegetables. Stir in the Swiss chard, Savoy cabbage, and kale. Cover, reduce heat to medium, and simmer for 1 hour.
  • Place 1 can of beans in a blender or food processor bowl. Blend until smooth. Stir pureed beans into the vegetable mixture along with the second can of beans. Season to taste with salt and pepper. Reduce heat to low, and simmer for 20 minutes, stirring occasionally. Stir in the tomato puree.
  • Prepare the soup by layering slices of bread with the vegetable mixture in a casserole or soup dish. Cover, and refrigerate for at least 8 hours, or overnight.
  • To serve the soup, place in a pot, and reheat over medium heat. Serve hot.

1 pound/500 g dried white beans (​cannellini or Navy beans, washed and soaked for 3 hours)
1 small onion (peeled and chopped)
1 small carrot (peeled and chopped)
1 6-inch stalk celery (chopped)
1 small bunch parsley (flat-leaf, chopped)
1/4 cup olive oil
1 1/2 tablespoons tomato paste
1 pound/500 g kale ( lacinato/Tuscan , ribs removed and leaves chopped)
1 pound/500 g beet greens (or Swiss chard , ribs removed and leaves chopped)
1/2 pound/250 g potatoes (peeled and diced)
Fine sea salt and freshly ground black pepper (to taste)
1 sprig of fresh thyme
1/2 loaf white bread (thinly sliced, day-old crusty Italian)

Steps:

  • Gather the ingredients.
  • Boil the beans in water to cover by about 2 inches (4 centimeters), adding more boiling water if need be to keep them submerged, and lightly salting them when they're almost done.
  • At this point, sauté the onion, carrot, celery, and parsley in the oil in a heavy-bottomed pot.
  • When the onion has become translucent, about 5 to 8 minutes, add the tomato paste and the cooking liquid from the beans.
  • Add the kale, beet greens or chard, and potatoes.
  • Stir in the cooked beans and season to taste with salt, pepper, and a sprig of thyme.
  • Simmer until the potatoes are tender and can be pierced easily with the tines of a fork, about 10 to 15 minutes.
  • Remove the thyme and discard.
  • Take a serving dish that can be heated and fill it with alternating layers of thinly sliced bread and soup, making sure the bread is damp-until the soup is used up.
  • Serve and enjoy!

2-14.5 oz cans beef broth, or consome
2 can(s) water
3-14.5 oz cans stewed tomatoes
12-1" slice 1 day old italian or french bread, cubed or torn into pieces
1 lb sweet italian sausage (i prefer publix brand, if that is available to you)
1 large onion, chopped
1/2 c grated parmesan cheese (use freshly grated, if at all possible)
2 tsp mrs. dash italian seasoning, or italian herb blend

Steps:

  • 1. Put broth, water and tomatoes, with their liquid into a 5 qt. pot; Mash tomatoes to make smaller bite size pieces--I use a potato masher for this step.
  • 2. Add bread cubes; cover and simmer for 25 minutes, stirring occasionally til thick.
  • 3. Meanwhile, remove casing from sausage; brown well; remove from pan and drain on paper towels to reduce extra fat.
  • 4. Saute onions until golden in the pan drippings; remove with slotted spoon to avoid adding extra fat to the soup.
  • 5. Add mean, onions, seasonings and Parmesan to the simmering broth. Cook about 5 minutes longer, or until it starts to come to a boil.
  • 6. Garnish each bowl with additional Parmesan.

10 oven roasted garlic cloves (20 min in oven with olive oil)
1 teaspoon italian seasoning (emerils is good)
1 teaspoon onion powder
1 teaspoon of good sweet smoked paprika (health food store has the best)
1 loaf day old hard bread (french,artison or bagget)
1/2 cup chanterelle mushroom (button mushrooms are good) (optional)
parmesan cheese (optional) or smoked gouda cheese (optional)

Steps:

  • put chicken stock in a pot.
  • add oven roasted garilc and the rest of the spices (and mushrooms).
  • bring to a boil on med heat then low and cover for 30 min.
  • cut bread into 1/2 inch rounds and brush with olive oil.
  • toast in a pan till brown (i like mine dark).
  • warm soup bowls in the oven or microwave.
  • pour soup into bowls.
  • spilt bread into bit size pieces and put in soup top with cheese.
  • let stand 5 minute.

1 cup celery (diced (about 6 ribs))
1 cup onion (diced)
1 cup carrots (diced)
1 cup potato ((skin on))
3 tbsp olive oil
2 cloves garlic (diced)
1 cup zucchini (diced (1 small to medium zucchini))
½ head savoy cabbage (shredded and chopped (2-3 cups))
1 small red Swiss chard (chopped (or your favorite greens))
16 oz fire roasted tomatoes (including juice from can )
16 oz cannellini beans (drained and rinsed)
⅛ tsp crushed red pepper
¼ tsp black pepper
3 quarts vegetable stock (or chicken stock)
½ cup farro (or rice )
3-4 cups stale bread cubes
½ cup grated romano cheese (or more to taste)

Steps:

  • in a 4 qt stockpot over medium-high heat add the olive oil, onion, carrot, celery, and potatoes. Cook the vegetables for 4-5 minutes.
  • Add in the zucchini and garlic, continue to saute for 1-2 minutes.
  • Add in the vegetable stock, crushed tomatoes and cannellini beans. Bring to a boil.
  • Add in the chopped savoy cabbage, chard and farro. Bring back to a boil, then add in bread cubes. and reduce the heat to simmer.
  • After the soup has cooked for about 45 minutes, add in romano cheese and reseason as needed with sea salt and black pepper.

2 1/2 cups chopped zucchini, and or 2 1/2 cups summer squash
3/4 cup chopped green sweet pepper
1/2 cup chopped onion
1 tablespoon olive oil
2 (14 ounce) cans chicken broth or 3 1/2 cups chicken basic soup stock
1 (14 1/2 ounce) can diced tomatoes with basil oregano and garlic, undrained
finely shredded parmesan cheese (optional)

Steps:

  • Spread bread cubes in a single layer on an ungreased baking sheet.
  • Bake in a 375 degree F oven for 10 to 15 minutes or until lightly toasted.
  • Meanwhile, in a large saucepan cook zucchini or yellow squash, sweet pepper, and onion in hot oil for 5 minutes.
  • Stir in stock or broth and undrained tomatoes.
  • Bring to boiling; reduce heat.
  • Simmer, uncovered, about 5 minutes or until vegetables are just tender.
  • Ladle soup into bowls.
  • Top each serving with toasted bread cubes and, if desired, Parmesan cheese.

2 tablespoons olive oil
2 large cloves garlic, thinly sliced
2 chicken bouillon cubes
2 tablespoons chopped fresh parsley
4 slices stale Italian bread, cut into 1-inch cubes (about 2 cups)
2 plum tomatoes, diced
2 mushrooms, sliced
2 large eggs, beaten
2 tablespoons grated or shaved Pecorino Romano cheese
Kosher salt and freshly ground black pepper

Steps:

  • In a Large Dutch oven or a heavy-bottomed pot, heat oil over medium-low heat; fry the garlic until lightly golden--about 1 minute. Be careful not to let the garlic burn as this will cause a bitter taste. Add 4 cups of water, the bouillon, parsley, bread, tomatoes and mushrooms.
  • Bring soup to a simmer and cook 5 minutes until the mushrooms are cooked through and the bread softens. While stirring the soup, pour the eggs into the hot soup to create ribbons of egg. (Alternatively, you can add unbeaten eggs to the soup whole and poach, about 3 minutes.)
  • Season the soup to taste. Ladle into soup bowls and sprinkle with cheese.

  • Place a rack in middle of oven; preheat to 450°. Time to prep your veg! You are going to make a mirepoix, which is just a fancy French word for the combo of chopped onions, carrots, and celery that form the flavor base for a lot of European dishes. First, cut 1 large onion in half through root. Peel and discard skins. Finely chop and transfer to a medium bowl.
  • Wash, peel, and trim 3 medium carrots. Cut in half (or in quarters lengthwise if they’re large), then cut crosswise into ½" pieces. (You can also just chop the carrots down into coins if you don't mind larger pieces of veg in your soup.) Add to bowl with onion.
  • Smash and peel 8 garlic cloves with the back of your knife. If any of them are left more or less intact after that initial smashing, give them another good wack with the back of your knife so they really open up and start to break apart. Add to bowl, also.

Add tomatoes and all their juices, broth and the bread. Bring to a boil. Reduce heat to a simmer and cook, uncovered, for 20 minutes.
  • Add kale, basil and pepper. Simmer for 10 minutes more. Serve the soup topped with the squash mixture and garnished with more basil, if desired.
