Steps:
- Heat oven to 350.
- Cube rolls into 1 inch pieces.
- In a saucepan, heat milk, butter, but don't allow to boil.
- When cooled, add vanilla, beaten eggs, sugar and baking powder.
- Blend until smooth.
- Spray 9X13 baking dish with Pam, layer the bread cubes and pour the liquid all over, making sure the bread is well saturated.
- Sprinkle brown sugar topping all over the bread and cover with pecans.
- If you prefer, sprinkle top with cinnamon and raisins.
- Bake for about 30 to 35 minutes, until top is brown and looks crusty.
- Serve warm with cream.

SUNNY'S EASY CINNAMON ROLL BREAD PUDDING

- For the rolls: Bake the cinnamon rolls according to the package directions (reserve the glaze). When they are cool enough to handle, cut each into fourths. Set aside.
- Preheat the oven to 350 degrees F. Coat the bottom and sides of a deep 8-inch square pan with cooking spray.
- In a large bowl, add the fruit cocktail, milk, pecans, walnuts, vanilla extract and eggs and mix together. Add the cinnamon roll pieces and stir. Let rest for a few minutes to allow the liquid to soak in.
- Pour the cinnamon roll mixture into the prepared pan. Bake until golden on top, 25 to 30 minutes.
- For the glaze and topping: Put the milk in a small microwave-safe bowl and microwave for 30 seconds. Add the espresso powder and stir until the granules dissolve. Add the reserve glaze from the cinnamon rolls and stir until combined.
- Drizzle the bread pudding with the glaze and add a dusting of cinnamon sugar. Serve with a pour of coffee over the top.

- Preheat oven to 350°. Whisk together the first 10 ingredients until blended. Gently stir in bread. Transfer to a greased 3-qt. or 13x9-in. baking dish. Sprinkle with brown sugar; let stand until bread is softened, about 15 minutes. I got this from a coworker's wife years ago and it's always been my favorite bread pudding recipe. Make sure the bread is as dry as possible - the drier the bread, the more it will soak up the custard.

- Grease a 9x12 pan.
- Scald milk. Add sugar and butter. Mix until butter is melted. Cool.
- Break sweet bread into pieces (not too small). Spread apple pie filling on top of the sweet bread. Sprinkle raisins over the filling.
- Combine cooled milk mixture with beaten eggs. Pour liquid over the bread. Sprinkle with cinnamon.
- Bake at 350 degrees for 25 to 30 minutes.

- Preheat the oven to 325 degrees F (165 degrees C). Butter a 9x13-inch baking dish.
- Mix milk, sugar, buttermilk, melted butter, eggs, vanilla, salt, and cinnamon together in a large mixing bowl until well combined.

- Preheat oven to 375 degrees F (190 degrees C). Grease a 2-quart baking dish.
- In a mixing bowl, whisk 3 eggs, white sugar, 2 tablespoons of light brown sugar, 1/2 teaspoon of cinnamon, 1/4 cup of butter, and 3 cups of whole milk together, and gently stir in the bread cubes and raisins. Lightly spoon the mixture into the prepared baking dish.
- Bake in the preheated oven until browned and set in the middle, 50 to 55 minutes; cover the dish with foil after 30 minutes to prevent excessive browning. Let the pudding stand for 10 minutes before serving.
- For vanilla sauce, whisk 1/2 cup of light brown sugar, the flour, a pinch of cinnamon, 1 egg, 2 tablespoons of melted butter, 1 1/4 cups of whole milk,and salt together in a heavy saucepan until smooth. Heat over medium heat, whisking constantly, until thickened and the sauce coats the back of a spoon, 10 to 12 minutes. Stir in the vanilla extract. - Butter a 2 qt baking dish. Cut or tear your cinnamon rolls into approximately 1 inch square pieces and layer them into the buttered baking dish. Do not compactly fill the dish or fill to the very top edge of your dish. *The bread will expand, you do not want your bread pudding overflowing.
- In a medium to large mixing bowl, combine the heavy cream (half & half or whole milk can also be used), eggs, yolks, butter, sugar, vanilla extract, and cinnamon. Whisk until well combined, then pour over the layered cinnamon roll chunks. *If your pudding mixture does not come to the bottom edge of the top lip of your baking dish, you can use milk to top off the bread pudding. You want your bread pretty well covered with liquid.
- Soak the layered bread pudding in the custard mix for about 30 minutes, then preheat your oven to 350 degrees F (175 degrees C).
- Place bread pudding in preheated oven on the middle rack and bake for about 25-30 minutes, or until the custard is set and a toothpick inserted into the middle of the baked dish comes out clean. The top will be browned and the pudding will be set between the bread pieces in the center.

- Slice the bread into cubes. Trim the crust from the bread if desired; leave it on for a more rustic loaf. Slice the bread into bite-sized cubes, or tear it into pieces with your hands.
- Toast the bread cubes. Divide the bread cubes among 2 rimmed baking sheets and spread into an even layer. Toast, stirring halfway through, until the cubes feel dry and hard, but are still very pale, 15 to 20 minutes total. Remove from the oven and set aside to cool slightly.
- Transfer the cubes to the baking dish. Coat a 9x13-inch baking dish with the butter. Add the bread cubes and gently shake the dish and pat the cubes down so they settle into place. If you're using any extra ingredients like fruit or nuts, scatter these over top, then use a spoon to gently poke and stir them into the bread cubes so that some of them go into the middle but they don't all fall to the bottom of the dish.
