ITALIAN PARMESAN BREAD FOR BREAD MACHINE

Italian Parmesan Bread for Bread Machine image

I've been making this bread for years without measuring, and finally decided to write it down. My most requested bread from my bread-lovin' son. Makes the house smell divine!! You can easily increase the amounts of seasonings to your taste. (NOTE: Many people seem to be needing to add extra water, so I'm adding an adjustment to the recipe.)

I got this recipe from the book that came with my bread machine. I use the machine to do the work, then I put it in loaf pans and bake it off in the oven. This is a wonderful, tasty fresh bread.

Categories     Bread     Yeast Bread Recipes     White Bread Recipes

Time 3h20m

Yield 20

Number Of Ingredients 9

4 cups unbleached all-purpose flour
1 tablespoon light brown sugar
1 ⅓ cups warm water (110 degrees F/45 degrees C)
1 ½ teaspoons salt
1 ½ teaspoons olive oil
1 (.25 ounce) package active dry yeast
1 egg
1 tablespoon water
2 tablespoons cornmeal

Steps:

  • Place flour, brown sugar, warm water, salt, olive oil and yeast in the pan of the bread machine in the order recommended by the manufacturer. Select dough cycle; press Start.
  • Deflate the dough and turn it out onto a lightly floured surface. Form dough into two loaves. Place the loaves seam side down on a cutting board generously sprinkled with cornmeal. Cover the loaves with a damp cloth and let rise, until doubled in volume about 40 minutes. Meanwhile, preheat oven to 375 degrees F (190 degrees C).
  • In a small bowl, beat together egg and 1 tablespoon water. Brush the risen loaves with egg mixture. Make a single long, quick cut down the center of the loaves with a sharp knife. Gently shake the cutting board to make sure that the loaves are not sticking. If they stick, use a spatula or pastry knife to loosen. Slide the loaves onto a baking sheet with one quick but careful motion.
  • Bake in preheated oven for 30 to 35 minutes, or until loaves sound hollow when tapped on the bottom.

BREAD MACHINE ITALIAN BREAD (BAKED IN OVEN)

Bread Machine Italian Bread (Baked in Oven) image

If you reside in the U.S. then you might want to use *all* bread flour, Canadian residents use half bread and half all-purpose flour, you can make two smaller loaves or make one large loaf or the dough may also be shaped into 18-20 rolls, you may use up to 1-1/2 teaspoons salt. Prep time includes 1 hour rising time, since every bread machine dough cycle time is different, the prep time is only estimated.

Categories     Yeast Breads

Time 2h25m

Yield 2 loaves (or 1 large)

Number Of Ingredients 10

1 1/3 cups water (110 degrees F)
2 cups all-purpose white flour
2 cups white bread flour
1 teaspoon salt (can use up to 1-1/2 teaspoons)
1 tablespoon light brown sugar
2 teaspoons olive oil
2 1/2 teaspoons dry yeast (you could just use a small package of yeast which is 2-1/4 teaspoons instead of the 2-1/2 teaspoons)
1 small egg
1 tablespoon water
3 -4 tablespoons cornmeal (to sprinkle on baking sheet)

Steps:

  • Place the water, flours, olive oil, salt, sugar and yeast in the bread pan in order recommended by the manufacturer.
  • Place into the bread machine and set to dough cycle; press start.
  • When the cycle has finished deflate the dough and remove to a lightly floured surface.
  • Divide the dough evenly in half (or you may leave in one large piece).
  • Cover the dough with a clean tea towel and let rest for 4-5 minutes.
  • Roll up the dough, shape into two loaves, then seal the seam.
  • Place the loaves spaced well apart seam-side down on a 15 x 10-inch baking sheet that has been generously sprinkled with cornmeal.
  • Cover with a clean tea towel and let rise for about 40 minutes to 1 hour (be careful not to over rise your dough or it will deflate when brushing with the egg mixture and will taste yeasty after baked).
  • In a small bowl whisk together egg with water.
  • Brush the egg mixture gently over the loaves.
  • Make one long fast slit down the middle of the dough using a very sharp small knife or a razor blade.
  • Bake in a 375 degree F oven for 25-30 minutes or until golden brown.
  • Immediately remove the loaves to a wooden cutting board (if the loaves stick to the pan gently place a spatula underneath loaves to loosen).

ITALIAN BREAD FOR THE BREAD MACHINE

Italian Bread for the Bread Machine image

I am in Australia at the moment & my sister has a bread machine. I wanted to try a flavored loaf & this was the result. You could also add a handful of black olives if you'd like which I would have, but my sister doesn't like them. The prep time includes 40mins to roast the garlic, & 20mins to chop, grate, etc. all add-ins. Cook time is for the machine.

LINDA'S FANTABULOUS ITALIAN BREAD A B M

Linda's Fantabulous Italian Bread a B M image

After trying a few other Italian bread recipes I decided to adapt my old one to more modern methods. It is even better than doing it all by hand since the dough is handled less. Use a silpat when working with this dough since it is a little sticky.

Provided by Secret Agent

Categories     Yeast Breads

Time 3h20m

Yield 1 huge loaf, 24 serving(s)

Number Of Ingredients 16

1 1/2 cups water, plus
1 tablespoon water (110 degrees or so)
1 egg
1 egg yolk
1 tablespoon turbinado sugar (sugar in the raw) or 1 tablespoon brown sugar
1 tablespoon honey
2 teaspoons kosher salt (important to use kosher salt)
2 tablespoons oil (or melted butter or combination of both)
4 cups bread machine flour (I use KA)
1 teaspoon gluten
2 1/4 teaspoons bread machine yeast (or one package active yeast)
2 tablespoons cornmeal
1 egg white
1 tablespoon ice water
2 -3 tablespoons toasted sesame seeds
12 ice cubes

Steps:

  • Pre heat oven to 375 while dough rises. If you are using a pizza stone it is important to have it screaming hot.
  • Put all ingredients **except** last 5 into bread machine on DOUGH cycle. Run through the entire dough cycle, turn off the machine and start it over so you get two kneading and rising cycles. It will make a nice difference in the loaf.
  • Put dough onto a silpat which is on a cookie sheet with no edges and punch down, letting it rest for 10 to 15 minutes.
  • Shape into a rectangle on the silpat.
  • Roll the dough from the long side, pinching it as you roll to prevent it from unrolling.
  • Gently move the loaf to one side of the pan.
  • Sprinkle the silpat with cornmeal and position the loaf 'kitty cornered' in the pan, with the seam side down.
  • Let rise in a warm spot covered with a damp towel for 30 to 40 minutes until it is doubled (I use my proofing oven on the lowest setting, about 100 degrees.
  • With a very sharp knife, carefully slash the loaf in 4 places.
  • Mix the egg white with a drop of water and gently brush it on the loaf. Wait 5 minutes and gently brush it again.
  • Sprinkle with toasted sesame seeds (I really cover the loaf heavily and it looks so beautiful when it comes out of the oven).
  • Put the silpat onto your baking stone quickly by sliding it off of the baking sheet which has no sides. If you are not using a stone just put the pan in the oven as usual.
  • Toss 6 ice cubes onto the bottom of your oven and shut the door. Repeat 10 minutes later with 6 more ice cubes.
  • Bake a total of 35 to 40 minutes or until the loaf sounds hollow when tapped. 15. Cool on a wire rack before slicing.
  • Wonderful with pasta.
  • Leftovers make great toast!

ITALIAN BREAD (BREAD MACHINE)

Italian Bread (Bread Machine) image

I love this recipe because it is very quick and easy. The ingredients for this recipe are always in most peoples houses. I've been known to whip up a loaf in the morning when I realized I was out of bread for school lunches. I don't always use the egg white in the recipe unless you want a crispy crust. Most times I just brush on butter after if comes out of the oven. This recipe is tried and true and loved by all in my circle of family and friends; enjoy. Notes: Easy and with no milk. I have also added Parmesan, thyme, garlic after the flour and salt just to give it an added flavor change every now and then. Serving Ideas: Wonderful w/ pastas or stews.
