Steps:
- Preheat oven to 350 degrees. Lightly oil a large baking dish; set aside.
- Place 1/2 pound ground bison, 1 piece of yellow pepper, 1 piece of red pepper, 1 piece of onion, 1 1/2 teaspoons rosemary, 1 1/2 teaspoons sage, 1 1/2 teaspoons oregano, and 1/2 clove garlic in the bowl of a food processor; process until well combined. Transfer mixture to a large bowl. Repeat process three more times with remaining bison, peppers, onion, rosemary, sage, oregano, and garlic.
- Add 2 tablespoons olive oil to bowl with bison mixture and season with salt and pepper; mix until well combined. Using your hands, form bison mixture into a loaf and place in prepared baking dish. Transfer to oven and bake for 30 minutes.
- Add chicken stock, wine, and tomatoes to baking dish; bake, basting with juices every 15 minutes, until meatloaf is firm to the touch and pan juices are bubbly, about 1 hour more.
- Let meatloaf stand 5 minutes before slicing and serving with pan juices.
BISON MEAT LOAF #1 (BUFFALO)
Whenever possible, I buy grass fed Bison instead of ground beef. The flavor is much sweeter and because of the higher protein content, smaller portions are more satisfying. No antibiotics, no pesticides in the feed, no preservatives and no growth hormones. Even better, less fat, cholesterol and calories PLUS more iron, protein and B-12 than ground beef! A richer flavor and completely HEALTHY! I hope you enjoy this yummy recipe as much as we do.

- Pack the meat mixture into an oiled loaf pan, if you do not have a loaf pan, form the meat mixture into a loaf shape on an oiled oven tray or baking dish. Top with the marinara making sure to spread evenly over the top.
- Bake for approximately 50 to 60 minutes or until an instant-read thermometer registers 160 degrees F in the middle of the meatloaf. Remove from the oven and let rest for 5 minutes. Slice and serve.

Steps:
- Preheat oven to 375 degrees fahrenheit. Crumble the ground meat together in a large mixing bowl. Set aside. In another small bowl, combine the beaten eggs, garlic, salt, basil, oregano, parsley/cilantro, mustard and chili flakes and blend. Blend this mixture into the meat then add the bread crumbs and blend well. Form into a meatloaf. Drizzle half of the olive oil in a skillet or baking dish and place the meatloaf in the pan. I created an oval shape about 3-4" deep in the center-most part. Combine the ketchup, Worcestershire, salt, hot sauce, cumin and remaining olive oil in a small bowl and blend. Pour this on top of the meatloaf and spread to cover the top. Drizzle (zigzag) with some more ketchup. Bake in a preheated 375 oven for about 60-65 minutes. Remove and let it rest about 15 minutes before cutting and serving.

Steps:
- Preheat the oven to 400°
- In a large bowl, with clean hands, lightly mix together the 2 lbs ground beef, 2 minced garlic cloves, .7 oz packet of Italian Dressing Mix, 1 cup panko bread crumbs, 1/3 cup milk, 2 lightly beaten eggs, 1/2 cup parmesan cheese. Do not overmix the meatloaf mixture or it will have a tough texture.
- In a 9x13 glass casserole pan pour about 1/2 cup marinara sauce onto the bottom of the pan. Dump the Italian meatloaf mixture out into the pan and shape into a meatloaf, about 2 1/2 inch tall, 6 inches wide and about 11 inches long (roughly)
- Pour the rest of the jarred marinara over the meatloaf. Cover the pan with foil and bake for 1 hour 15 minutes.
- Remove the foil and sprinkle with mozzarella cheese, bake uncovered for another 10 minutes. The center of the meatloaf should read 165 degrees with an instant thermometer.
- Let cool for about 5 minutes and then slice and serve!

Steps:
- Preheat oven to 400 degrees and prepare a loaf pan with cooking spray or parchment paper.
- In a small bowl, toss cubed bread with milk. Set aside for 3-4 minutes to absorb.
- In a large mixing bowl, or the base of a stand mixer, combine fresh bread cubes soaked in milk, finely ground or micrograted onion, garlic Italian seasoning and salt. Mix to combine.
- Add crumbled ground beef and sausage, breaking into small pieces.
- Before mixing, top with Worcestershire sauce, lightly beaten egg, dry bread crumbs, Parmesan cheese, 1/2 cup shredded mozzarella and 1/4 cup marinara sauce.
- Blend until just mixed, either using your fingers to toss or putting the stand mixer on low. Too much mixing will make your meatloaf tough, so only mix until barely blended.
- Transfer meat mixture to cooking vessel of your choice, forming into a loaf as you go. You can make it free-form on a rimmed baking sheet, but I prefer using a meatloaf or bread loaf pan. Top with 1/2 cup marinara sauce.
- Bake, uncovered, for 40 minutes. Remove and top with remaining shredded mozzarella cheese and another shake of Italian seasoning (if desired).
- Cook for an additional 5 minutes. Allow to sit for 5-10 minutes before cutting and serving. Serve with additional marinara sauce, if desired.

- In a large bowl add hamburger, eggs, all seasonings, Worcestershire sauce, diced onion and bell pepper, 1/4 cup Italian blend cheese, and bread crumbs. Just get in there with clean hands and mix it all up, turning from the outsides of the bowl to the middle a few times to get everything mixed in pretty evenly, you don't want to over-mix. Then press the meat down in the bowl to tighten it up a bit and shape to a loaf and place on sliced onions in a sprayed baking dish. Lightly press all around to make sure it's smooth.
- Place in preheated oven at 400 degrees and bake lightly tented with foil for 50 minutes. While that's in the oven warm marinara sauce on the stove top and let simmer. Remove meatloaf and spoon marinara over the top add Parmesan and shredded Italian blend cheese and chives, return to the oven for 10 minutes or until cheese is just melted.
